Stuffed Tomatoes

Roasted Corn and Basil Stuffed Tomatoes

Stuffed TomatoesPinit

I love tomatoes.
Stuffed with roasted corn, basil, and cheese?  I ate all 6 of them.
So I was really sad to find out that the tomatoes that I’ve been buying in the grocery store are not fairly harvested.  In fact, tomato fields in the US have been called “ground zero” for modern-day slavery.

Even today, in 2012, the workers who pick our grocery store tomatoes – mostly immigrants from Guatemala, Mexico, and Haiti – are being forced or tricked into working in Florida tomato fields under extremely poor working conditions.

Cheese. Basil. Tomato. In that order.

It’s summer and one of my favorite things about summer is basil.

My other favorite thing is the farmer’s market. Grab me a latte, put on my shades, pick out some pretty looking veggies, take a few pictures, enjoy the smell of freshly baked stuff, and drive right on home in my air conditioned SUV.

Yep. I loooove the farmer’s market.

Remember when I never posted Seoul pictures?

We had a great time on our three-day-pre-Philippines-mini-vacation and absolutely loved experiencing Seoul. But then I left my DSLR in my messy suitcase for a year. Woops.

One of the best things about our trip was the sweet, charming, and artsy little bed and breakfast where we stayed called 126 Guesthouse Mansion.  (Please note Shiru the dog sitting on the bookshelf. This place has character.)

I’m hunnnngry.

All.the.time.

I thought I was hungry in Minnesota, but dang. This new life in the Philippines has me eating at least 18 times a day. I’m blaming it on the sweltering heat and humidity along with a laundry list of other things, such as my new permanently shiny-faced-and-electrocuted-hair style.

Speaking of hotness, I hear there’s some kind of crazy heat wave back in the States. So if you didn’t already need this, now you N-E-E-D this. Like, for electrolytes and hydration and stuff.

My Top 5 Healthy Food Blogs

For the last week, I’ve been hopping planes and carting around more than one painfully expensive suitcase with all my life packed up in it.  And by all my life, I mean 23 T-shirts, 10 flip flops, and 2 pairs of shorts shorts because appropriate, well-fitting shorts are insanely hard to find.  Which could have something to do with this.  Maybe.

Grilled Chicken Sausage, Spinach, and Mozzarella Pizza

This weekend I learned a lot about myself.

I’m horrible at packing.  For both personal safety and general efficiency, I cannot be trusted with a packing tape roller.  An add-on to that would be that the cutter on the packing tape roller is surprisingly sharp.  Also, wine glasses are hard to wrap.

I need you to know that this. is. YUMMY.

Distractingly yummy.

Like, when I’m teaching a math lesson and I remember this waiting for me in my lunchbox, I drool a little bit and then I can’t remember the difference between concave and convex polygons. Which, by the way, does anyone use those in real life? Sometimes I just wonder.

Berry Green Smoothie

SmoothiePinit

Truth: I drink green smoothies.

Truth: Bjork gets bugged out by green smoothies.  I pretend that he’s immature and usually give a mini-lecture about the health benefits of green smoothies, which usually ends with him eating a whole box of Marshmallow Mateys in one sitting.  1) Why can’t healthy green smoothies be rainbow colored, or sparkly, or covered with candy?  2) Pass me the Mateys.

BEST Truth: Green smoothies don’t have to be sewage-green!

Wait, that makes me sound like an idiot, but it’s actually genius.  Because when you put berries in the blender with your green smoothie, it turns blue and purple and pretty, and it covers up the greenness.

One of my strengths as a teacher is the impromptu game.

And since you asked, one such game that I often pull out of my back pocket is called Password.

Here are the rules: you get one word clues that will help you guess the “password”. I think I might have stolen that from a real game, but I’m still considering it mine, and impromptu, especially since I’m going to make impromptu use of it right now. Ready? Good luck.

Healthy Double Chocolate Malt

I hope our new apartment comes with a blender because I plan to make these ultra thick and creamy healthy double chocolate malts every morning in the Philippines. Chocolate for breakfast yo.

I’ve gotta be honest with you guys.

Searching for a home abroad (when you’re not physically abroad yet) can be a little weird. Think House Hunters International, via the internet, with more marital stress and less money. I mean, I was fully committed to at least three different places all within the same hour and when I changed my mind for the 4th time, Bjork went for a drive to McDonald’s. At least we have some stress management tactics.

Bacon and Brussel Sprout Salad

I’m sneaking bites of brussel sprout salad from the fridge every 3 minutes. I think that means I’m a grown up now.

Brussel sprouts in and of themselves are kind of fun, but really, how fun are shaved brussel sprouts? This salad is full of fun things. Like using a nifty mandoline, making your house smell like bacon, and whisking emulsions. Just try saying that. Emuuuulsion.

Almonds and a Diet Coke. That was my sad lunch today.

As someone who feels that lunch is one of the highlights of the day (sandwiched between chocolate snacks and bedtime), having a bad lunch is more than just a little depressing.

To all you out there who can just “forget” to eat lunch, I can’t sympathize. To forget to eat lunch would be like forgetting about that big pile of miscellaneous garage sale stuff sitting in our living room. AS IF.

One of my strengths is holding on to unnecessary items.

Unnecessary items of the old jacket, soap holder, throw pillow, Christmas figurine variety.

So it goes without saying that the upcoming garage sale – OUR upcoming garage sale, the one where we get rid of a bunch of our stuff – is giving me hives. And listening to my Brad Paisley Pandora station while pricing my old, unnecessary (but totally necessary) picture frames does not help the cause.

It’s funny how that works out – or doesn’t work out – because I live with a man who is a frequent flyer at the Goodwill. Getting rid of anything that hasn’t been used in a month, even if it was MINE and I was going to use it next month, is one of his strengths. Seriously, though, I was going to use that soap holder.

Caribbean Jerk Salmon Bowl with Mango Salsa

This week I made salmon. Spicy salmon with tons of flavor and good-for-you vitamins. Then issued myself an automatic license to eat 50 leftover Cadbury Eggs. I love salmon.

But really, the salmon. Chipotle seems to always be on the brain these days, which lead me to morph my salmon dinner into a Caribbean Burrito Bol, complete with mango and avocado salsa. Ding-Ding-Ding!
