Strawberry Jam Muffins-2

Did we ever talk about this?

berries

That would be a package of strawberries for 13 dollars. Thirteen. Dollars.

That’s why I don’t buy strawberries here in the Philippines, or berries of any kind, really.

Don’t feel bad for me. I mean, bananas, papaya, mango, pineapple? Those heavenly golden fruits of the tropics keep my fruit-loving self happy and they don’t require draining the savings account. It’s like… the best thing ever.

banana lumpia

Banana Lumpia with Caramel Sauce

I was going to make this last week. With my sisters.

Cause it’s kind of a Filipino thing and I wanted to be a good Philippines host and everything.

banana lumpia

But we did this instead, which is like the most adventurous thing I’ve done in the last 6 months. Woohoo! I live on the edge.

Kayaking

I’ve actually been meaning to make banana lumpia (aka turon) since I saw it in a Filipino cookbook a few months ago. A FEW MONTHS AGO. It’s one of those recipes that you almost just… don’t want to make. I mean, you do, and you know you’re going to love it when it’s all said and done, buuut do I really have to? Because it involves finding something new – lumpia wrappers – at the grocery store, and then pulling apart those paper-thin, or actually, thinner than paper lumpia wrappers, which could make anyone look and feel like a fool. Plus it involves frying. Which, in the Philippines, also involves sweating and changing clothes for the 8th time this morning and makeup melting off my face. Can’t eat it for lunch tomorrow, makes a mess, and generally makes me feel like I have no cooking skills. It’s not all that practical.

Coffee Cake Muffins

I cannot believe how much has happened since that Baked Rigatoni post went out a wee 48 hours ago.

Coffee Cake Muffins

I’m currently sitting in my nice comfy bed, propped up with the computer on my lap, and all is well. Or, getting well. But here’s a little reader-friendly recap of where I’ve been over the last two days:

on the couch, covered with blankets, freezing cold, and news flash: that’s not normal
taking my temperature and confirming a fever
at the mall, buying a new computer to replace Bjork’s almost broken one (of course)
keeled over a case of iPhone covers, holding my stomach in pain

Gingerbread Loaves with Lemon Glaze

It’s Christmastime!

gingerbread loaves

Or is it really? {crink eye}

I feel like the world is playing a trick on me. From where I stand it looks more like primo beach season. True, people are wearing jeans and little sweater-like things, Christmas music and flashing neon nativity scenes have been going strong since, oh, I dunno, JULY, and I can’t find a seat at Starbucks.

But nothing about the climate in the Philippines makes me feel like it’s Christmastime. Nothing. There’s not even like, a stray orange leaf or anything.

Me, six girls, and a bucket full of chocolate.

This was my math lesson today.

Actually, if I would have remembered the Fraction Pancakes fiasco, I would have skipped the lesson altogether and saved these chocolate bites of heaven for my personal kitchen alone. My brain hates that memory.

But I’m glad I didn’t remember, because today was fun.

Remember when I used to work out?

Gosh golly. In our first few weeks here in the Philippines, I worked out every morning. And by worked out, I mean I ran for five seconds. It wasn’t much, but it gave me license for an extra cookie.

Now I don’t work out anymore, and I have a million reasons why.

Peanut Butter Oatmeal Chocolate Chip Cookies

Peanut Butter Oatmeal Chocolate Chip Cookies

In the tough times when you want to come back to the states, remember back to January, February, March, all those months where God was pressing in your heart to do something radical for Him.

My friends really speak truth.

Reality check: I have been a bit of a Johnny Raincloud lately.

On the blog, a little. (This came to my attention after I read through a few of my most recent posts and realized they were all stories about my stinky-fish-market-dirty-jeepney-oppressively-hot life in the Philippines. O, woe is me.)

Roasted Corn and Basil Stuffed Tomatoes

Stuffed TomatoesPinit

I love tomatoes.
Stuffed with roasted corn, basil, and cheese?  I ate all 6 of them.
So I was really sad to find out that the tomatoes that I’ve been buying in the grocery store are not fairly harvested.  In fact, tomato fields in the US have been called “ground zero” for modern-day slavery.

Even today, in 2012, the workers who pick our grocery store tomatoes – mostly immigrants from Guatemala, Mexico, and Haiti – are being forced or tricked into working in Florida tomato fields under extremely poor working conditions.

Temperature Controlled Apartment vs. Freshly Baked Muffins?

No contest. And I’m happy to report that fluffy, nutty, honey-sweet muffins just came out of my oven. Which has an actual fire inside it. Be impressed.

Bonus: I’m pretty sure about one third of me melted during this entire baking/photographing process so I think that means I’m good for another 6 muffins.

I’m hunnnngry.

All.the.time.

I thought I was hungry in Minnesota, but dang. This new life in the Philippines has me eating at least 18 times a day. I’m blaming it on the sweltering heat and humidity along with a laundry list of other things, such as my new permanently shiny-faced-and-electrocuted-hair style.

Speaking of hotness, I hear there’s some kind of crazy heat wave back in the States. So if you didn’t already need this, now you N-E-E-D this. Like, for electrolytes and hydration and stuff.

Berry Green Smoothie

SmoothiePinit

Truth: I drink green smoothies.

Truth: Bjork gets bugged out by green smoothies.  I pretend that he’s immature and usually give a mini-lecture about the health benefits of green smoothies, which usually ends with him eating a whole box of Marshmallow Mateys in one sitting.  1) Why can’t healthy green smoothies be rainbow colored, or sparkly, or covered with candy?  2) Pass me the Mateys.

BEST Truth: Green smoothies don’t have to be sewage-green!

Wait, that makes me sound like an idiot, but it’s actually genius.  Because when you put berries in the blender with your green smoothie, it turns blue and purple and pretty, and it covers up the greenness.

Golden Grahams S’mores Bars

I have a farmer friend.

His name is Tyler.

Our visit to his farm revealed a few things:

  1. Farms are pretty.
  2. Don’t wear sandals on the farm.
  3. Fainting goats are so weird but hilariously cute.
  4. I will have a piglet for a pet someday.
  5. Tyler cooks.

Baked Spicy Fries with Garlic Cheese Sauce

Baked FriesPinit

Hot, fresh, baked spicy fries are going to come out of your oven tonight. They just are. And I’m putting you under citizen’s arrest if you don’t cover your face in garlic cheese sauce.

Did I say face? I meant fries. Fries, face, maybe both.

As you can see from my extreme close-up photos, I’m having trouble keeping my face away from these little guys.
