Is lasagna the best to eat cold or is it the best to eat cold? It’s just the best to eat cold. Flavorful, sticky, ricotta-cheesy. And those noodles. Thick, doughy, soft whole wheat noodles sticking together all up on each other. With wavy edges, because somehow they taste even better with when they have style like that. And with roasted vegetables and cheese stuffed in between them. Yeah. And by the way – lasagna? It’s also the best to eat hot. WINNING.

I bought red lentils, thinking they would look better in my squash lentil curry. First mistake: squash lentil curry is just meant to look a certain way and there’s nothing you can do about that.

I’m of the belief that Alfredo sauce is King. Even deep red tomato sauces (which are supposed to be deep and red) are at their best with the addition of a little cream. Which makes them not deep red anymore and more like a pinky-orange. Pink is fun, right? It’s just like I just try to make everything into Alfredo. That’s just what it’s like.

It might have something to do with the fact that it’s the most readily available vegetable in the Philippines that comes closest to resembling a sweet potato and a pumpkin. And when I think of sweet potatoes and pumpkins, I think of dreams coming true.

Honestly, I am kind of shy about sharing this recipe.

Yellowy squash lentil curry is not, um, pretty, really.

But here’s the thing – it’s divine. And easy. And healthy! I couldn’t NOT give it to you. That would be like lying considering that this is what I’ve been eating for the last one thousand days. It’s so, so good. Indian-inspired comfort food with a little bit of spicy and a lot of creamy.

The bad news is that grocery shopping in the Philippines has become un-fun.

It started out being kind of fun because everything was new and exciting. Every time I saw something familiar, like Corn Flakes or PB&Co Peanut Butter or Laughing Cow Cheese (seriously, who is deciding on the imported foods list here?), I would do a happy dance and take a picture and buy all of it.

It was also fun to buy new and exotic things, like real coconuts and Milo cereal and milk in a box.

But then it wasn’t fun because
1. It was superrrr slowwwww,
2. I couldn’t find things like cilantro. ANYWHERE.

Moped or no moped?

{Dear confused reader, that is mo-ped, like motorcycle, like fun on wheels. Wheeeeeeee!}

Filipino cultural assimilation is in full force as we ask ourselves the biggest question yet: are we going to purchase, drive, and care for our very own moped for the next 11 months?

Pro-moped thoughts:

  1. Everyone else does it.
  2. The other 5 people drive a scooter or motorcycle or bike taxi.
  3. I could get to the grocery store and back in less than 3 hours.
  4. We could drive to the mall.  Beep beep.
  5. I would no longer need to squish myself onto the bench/laps of people on the Jeepney.
  6. My shoes wouldn’t have “mud” all over them.
  7. It will be the coolest thing I’ve ever done.
  8. I wouldn’t have to decide what to say/who to look at/where to hide/what facial expression to use when people shout friendly things at me while I’m walking home.  Social stress.
  9. I wouldn’t have to see dead cats on the road while walking home.
  10. I wouldn’t have to walk, period.

I love tomatoes.
Stuffed with roasted corn, basil, and cheese?  I ate all 6 of them.
So I was really sad to find out that the tomatoes that I’ve been buying in the grocery store are not fairly harvested.  In fact, tomato fields in the US have been called “ground zero” for modern-day slavery.

Even today, in 2012, the workers who pick our grocery store tomatoes – mostly immigrants from Guatemala, Mexico, and Haiti – are being forced or tricked into working in Florida tomato fields under extremely poor working conditions.
