I like this little tradition that I’ve established.
Apple-desserts-and/or-breakfasts posts on Fridays.
The only person complaining about this tradition is my ambitiously slim pencil skirt, which I might add was probably the worst purchase of 2011. It’s greyish, pinstriped, adorable, and I love it in theory. But in reality, I love cinnamon sugar apple cake and looser-fitting clothes.
There went $35 I could have spent on more apples. Sigh.
I need to stop talking about clothes and money and how I waste them both.
So, the apple cake.
It’s delicious. Bjork and I ate the. whole. thing. As in, the whole cake. A little piece here, and a little piece there, and three more pieces after dinner. It adds up quickly.
This cake was the perfect weekend breakfast (not to mention Monday snack and Tuesday 2nd dinner), and guess what’s right around the corner? That would be my good friend The Weekend.
I’m hoping with my fingers crossed that your weekend includes this cake.
- 1½ cups brown sugar
- ⅓ cup oil
- 1 egg
- 1 cup buttermilk (you can sub milk+vinegar, or plain yogurt+milk)
- 1 tsp. soda
- 1 tsp. vanilla
- 2½ cups flour
- 1½ cups chopped apples (I used Wealthy heirloom)
- ½ cup sugar
- 1 tsp. cinnamon
- 1 tbs. butter
- Preheat oven to 325.
- Mix ingredients in order given (except the last 3 ingredients).
- Pour batter into a 9×13 greased pan.
- Combine last 3 ingredients to make a topping and sprinkle it evenly over the batter.
- Bake for 45 minutes. It’s delicious when served warm!
In keeping with tradition: TGIF! Those little 4th grade buggers sure know how to wear a girl out.
How are you going to relax this weekend? I wouldn’t be mad if you said by making this cake.

Yep! Baking soda it is.
Apples + cinnamon + sugar > pencil skirt. Besides, there’s fruit, so it’s healthy.
Also, I would be all about having this cake for dinner, and second dinner. And maybe mid-afternoon tea, as well. (I have the eating schedule of a hobbit. [Nerd reference])

Isn’t it though? I always spend way too much money on Honeycrisp apples in the fall. They are SO worth it.

I made this at work for my clients but only had dark brown sugar. It was good but seemed more like a spice cake. I also made it today but instead of oil I used applesauce. It turned out so delicious. Now I just need to bust out the will power. I am already wanting another piece. Thanks for your awesome recipes!

I can’t wait to make this cake! I’m so glad to see so many apple lovers on your blog. I’m from NY but have lived in FL for 30 years and we don’t get that many apple varieties down here and they generally don’t taste as good as from NY. I can get bags of NY McIntosh apples during the Fall though, which makes me soooo happy!

Hello Lindsay! I love cinnamon and I love apples. I’ve only ever made apple cake once before, and I really liked it, but it didn’t have the topping like your cake. I love the topping, I think it makes the cake look elegant and rustic at the same time. I’m often given to reducing sugar in baking, would you say this cake is sweet enough as it is, or would it be all right if I wanted to put in less sugar? Oh, and by the way I love purple, so I totally approve of the layout of your blog, it’s lovely!
Haha – thanks! Purple is my favorite. And I think you could get away with less sugar if your apples were pretty sweet. Although I would say you should keep the topping because it’s a nice little crumble/crisp texture on top!
I made this the other day, subbed the cinnamon sugar with a maple glaze, for the teacher blessing at my son’s school. I went in at the end of the day to pick up my cake pan hoping there would be some left so I could sample it and there were few pieces! We tore them up the minute we walked in the door. SOOOOO good! I’m making a second one this weekend and I might have to hide half of it for myself

This cake looks amazing. I’ve never baked before but it looks simple enough for me to try! I probably sound very stupid (as I say, I’ve not baked) but what kind of flour do you need? And for oil is it just vegetable oil, or..? Thanks!
I used vegetable oil and regular all-purpose flour. I’m a teacher, so for me, no question is a dumb question! I’d be honored if this was your first baking experiment – I hope you like it!

I made this cake this morning and it is delicious. It’s a lot darker than pictured, but I think it’s because I used dark brown sugar. (All I had on hand) Even my kids like it and they are the pickiest!

This cake was amazing, my family devoured it! I have already made it two times in the past couple of weeks! In a gas oven I only had to cook it about 30 minutes and I added about 1/4 tsp of cinnamon to the batter as well.

If I were to sub plain yogurt and milk for the 1 cup of buttermilk, would I do half a cup of each or is there a different ratio to produce similar results to the buttermilk? Thanks!
Sometimes I use milk with a teaspoon or two of vinegar added to replace buttermilk! If you did yogurt, I’d do more like a 3:1 ratio of milk to yogurt.

This cake was sooo good. Just like you said I think i’m about to eat the whole thing. A piece in the morning with coffee, a piece in the afternoon with coffee, some after dinner for dessert! Totally addicting!

If you substitute the buttermilk with yogurt and milk, what are the measurements?

Probably 3:1 milk to yogurt ratio (it’s been a while, I can’t remember, but that would be what I’d usually do). So 3/4 cup milk with 1/4 cup yogurt.

Cake is in the oven while I’m typing this and it smells AMAZING!! Does it need to be kept refrigerated due to the fresh apples in it or is it okay to leave out at room temperature? We won’t be eating it until tomorrow for my dads birthday so I didn’t know what I should do with it tonight/tomorrow until it’s eaten!
I left it out but you could do it either way.

For the version pictured, they were peeled.
Do u use an electric mixer? Should the butter be melted?
I just have a small handheld electric mixer that I use. And the butter was soft.
My stomach is now growling!
