I.AM.IN.LOVE.

With a mango snack cake and its crunchy, sugary, brulee-like topping and its melted butter on top. And then suddenly 18 pieces were gone.

I’d just like to say I’m sorry for posting multiple mango recipes in a row and I promise I won’t do it again ever, maybe.

It feels unfair – I get to live in the land of Beautiful Luscious Mangoes while most of you sweet readers probably live in the land of Cub Foods Mangoes. But you also get to live in the land of Efficient Checkout Lines and Toilet Paper in Public Bathrooms, so I think we’re even.

Here’s what I want to say to you: this recipe does not discriminate against mediocre mangoes. Just puree, mix, and bake. And no one will ever know about those bruises and over-ripe spots.

It’s easy, it has a short ingredient list, it’s d-i-v-i-n-e and it’s yours for the taking.

Mango Snack Cake


Description

This mango snack cake uses fresh mangoes and has a crunchy sugar topping. Perfect with a little melted butter. Simple and delicious!


Ingredients

Scale
  • 2 mangoes
  • 1 cup sugar
  • 1 egg
  • 1 cup flour
  • 1 teaspoon baking soda
  • ¼ cup turbinado sugar (aka raw sugar, sub white sugar)

Instructions

  1. Preheat oven to 350. Slice and peel the mangoes. Place mango flesh in a food processor or blender and puree for 10-20 seconds (I like to leave some chunks in it).
  2. Combine mango puree, sugar, and egg in a small bowl and whisk until smooth. Add flour and baking soda and stir until just combined. Pour into a small baking dish (8×8 or comparable). Bake for 20 minutes or until just barely set.
  3. Remove from oven and sprinkle with turbinado sugar. Turn on broiler and return to oven for 5-8 minutes, watching the sugar so it doesn’t burn. It should turn a golden brown color and melt into a shiny top layer. Remove from oven when the top is golden brown all over and let cool for 15 minutes. Top with butter, just because.

    Sounds delicious! I love love love mangos and unfortunately it’s so hard to find a really good one here in the US. Can’t wait til our Asia travels where I will be eating mangoes galore!

      Vicky, I have a Keith mango tree for 25 years, and it give us a delicious,sweet mangoes. I give most of them awayforneighboors and friends. There are good mangoes in USA, but not in the super market. Want to try some of mine? I am in florida. All I ask is pay the shippment, and I willdo it! Tell me how many you want,they are fullof flavor.

    Haha, with every post you put up that gives us a glimpse into “reality” over there, I’m amazed at how well you are adjusting (or at least seem to be ;)). I think I’d cry over the roaches, the lack of toilet paper and heat.
    Please don’t apologize about the mango recipes, bring ’em on! Who doesn’t love that deliciously sweet fruit?!

    I was going to say that this looks so buttery but then I saw that there’s no added fat at all. Nice! It still looks buttery. I’ve never had a mango before and I don’t even know what color they are or what they look like. Lame! To Google I go.

    for my mango- loving boyfriend on his birthday, i can’t imagine him wanting ANYTHING other than this! Unless of course I made a Reese’s peanut butter pie or something… which sounds delightful!           I recently had an egg and poultry intolerance for two years and I found that cream cheese was a suitable substitute for eggs in baking.

    Beautiful. And I have these ingredients–sans the mangos–in my pantry, but I can get the mangos. (I actually have the turbinado sugar, too). I can’t believe something this decadent has so few ingredients. Kudos!

    I don’t mind if you post mango recipes all year round…I may not have mangoes readily available in my area, but at least I get to anticipate what will be the next recipe I try, the next time i’d get to be really lucky and stumble upon really luscious mangoes in the farmers market. Love that this recipe only needs a few ingredients…Although the main ingredient is not readily available, I am always hopeful.

    Bookmarked! We have been spoiled with the mangoes over here — I can’t eat them anywhere else. But despite my love for mangoes, I hardly eat them in baked goods…but that doesn’t mean I don’t try! 🙂 Will definitely try this out!

    This soooooooooo yummy!!!! Literally took me 25 min to make bake and eat it!
    Only had 1 mango, so I halved it and put batter in 3 large ramikins. Topped with brown sugar and broiled then added butter and some brown sugar whipped cream! Mmmmmmmm ate one we’ll see if the other two make it to lunch 😉

      Is there any replacement of broiling? I have a lot of mangoes cz I live in Pakistan hehe but my oven’s broiler/grill isn’t working 😔

        I used a butane torch – creme brulee style and it made the sugar nice and crunchy. It is the first thing anyone notices when I serve the cake.
