First of all, my mouth is in love.

With rich sauteed mushrooms and poblano peppers cooked with tomatillo salsa, broth, soft white hominy, a handful of nutty, chewy bulgur for extra texture and depth, and cilantro and lime to finisheroff. It’s got a zing of tangy deliciousness and a lick of oh-my-goodness spicy heat that is, in the magic ways of food, 800% addicting.

With the spicy poblanos and the zippy lime and the healthfulness of it all, this is absolutely my winter soul food right now.

But, so, secondly, after my mouth falls in love and I obsess for more than five batches of Mushroom Poblano Posole Verde, I realize:

I mean the ones that you make and LOVE and eat for days on end but generally doubt its appeal to the masses. Something to do with the mushrooms and/or the green-brown color of the soup, but I don’t know, maybe you guys are like me and find yourselves gravitating towards some of the more ugly duckling foods of the world?

Because, I mean, this would work out just fine if we all were seeing the delicious beauty in the peasant-ly bulgur and humble mushrooms and the simple tomatillo greenish broth base. Yeah?

Have I convinced you yet? Persuasion towards food is a skill I’ve been trying to develop lately. SO EAT THIS NOW IT’S REALLY REALLY GOOD WITH CHIPS AND CHEESE AND MORE CHIPS.

But actually, I’m being real.

Can I ask you guys a question though? It’s not about soup.

We are planning a trip to Florida in a few weeks for a blogging-related conference and we want to extend our stay beyond just the weekend so that we can take advantage of, hm, let’s see, the sun, sand, ocean, palm trees, and generally feel-good weather that is currently nonexistent here in the frigid Northland.

We’ll be in Orlando, but I’m wondering where we should go after the conference. South Florida? Gulf side? Georgia? South Carolina?

We are willing to drive a few hours (okay, maybe lots of hours – I’ll do just about anything for sun on my face and non-freezing relaxed shoulders at this point) and I think we’d prefer something more private and quiet rather than, like, the Daytona-Beach-in-early-March kind of a thing. If we’re being honest here, retirement communities are actually right up our old-soul alley. Can anyone supply us with IDs?

Right now I’m eyeing up Hilton Head and the Charleston area. Yes/no? Other recommendations? Is there any hidden gem of a beach in Florida that won’t be spring breaky? Please someone say yes.

These two pale computer-zoned faces need to see the sun again, and soon.

I will await your recommendations, and until then, I will live another day on Lunch Therapy with Mushroom Poblano Posole Verde. + chips + cheese + cilantro + lime. You too? I KNEW IT.

Mushroom Poblano Posole Verde

Description

This Mushroom Poblano Posole Verde is packed full of zingy flavor and hearty nutrition! Vegetarian and vegan friendly. Delicious!


Ingredients

Scale
  • 2 tablespoons olive oil
  • half a yellow onion, minced
  • 2 poblano peppers, seeds removed, minced
  • 1 jalapeño pepper, seeds removed, minced (optional)
  • 16 ounces fresh sliced baby bella mushrooms
  • 1 teaspoon southwest seasoning
  • 24 ounces salsa verde (I used medium)
  • 1 cup water
  • 45 cups chicken or vegetable broth
  • 3/4 cup uncooked bulgur
  • 2 14 ounce cans white hominy
  • 1 1/2 teaspoons salt
  • cilantro, lime juice, cheese, and chips for serving

Instructions

  1. Heat the olive oil over medium high heat. Add the onions; saute for 1-2 minutes. Add the peppers and mushrooms; saute for 10-15 minutes or until the mushrooms are cooked down to about half their volume and are deep brown (and add another drizzle of oil at this point if necessary).
  2. Add the seasoning, salsa verde, water, 3 cups broth, bulgur, and hominy. Simmer about 15 minutes or until the bulgur is soft. Add additional broth if needed.
  3. Serve with cilantro, a squeeze of lime juice, shredded cheese, and chips! Add more broth or water to the leftovers – it will thicken as the bulgur continues to soak up the moisture.

Notes

This is SPICY! If you don’t want it to be spicy, there are a few things you can do — choose younger peppers (mature ones are spicier), omit the jalapeño, take out the seeds and ribs of the peppers, and use mild salsa verde. Sour cream, cheese, and other toppings will also help to tame the heat.

    Do you have any nutritional information for this? It looks so good but seems heavy on the calories and carbs because of bulgur AND hominy.

          Though I’m a vegan I love your recipes, but I tire of scrolling through so many pictures of the same thing. (that’s probably why I didn’t scroll further down after I finally found the recipe to find the nutrition — my index finger was tired!) Are you into cooking or photography? My daughter is a food blogger and she too is “into” photography, but I always warn her about over-doing the pictures. Although perhaps I’m the only person who is more interested in a food blog for its recipes rather than it’s artwork! Perhaps the recipe should come first and then the photography . That way, those who love the artistry, can enjoy perusing the pics.

    I vote that you go to Charleston! My husband and I are going there in April, and I’m so excited! It’s a foodie town and close to the beach. I’ve wanted to go there since Kristin at IGE blogged about it 🙂

      I’ve heard Amelia Island is amazing too, we’re thinking about going this this April with the extended family – and you know how crazy those vaca’s get!!! Ha. We better start looking for a place to stay asap!

      Anyhow, this recipe covers the 3 C’s of food!…..cheese….chips…..cilantro…. now it just needs chocolate!!!!!!!

    We would love to have y’all come to South Carolina! Charleston is foodie paradise- and so many beautiful historic things to see and do. Between that and Hilton Head, go with Charleston- HHI is pretty but Charleston has more to do and some good nearby beaches (Isle of Palms!)

    Weather is all relative- we are shivering here at 40 degrees but I’m sure that would seem warm compared to the sub zero Minnesota temps right now.

    Closer to Orlando would be St. Augustine, Amelia Island or Ponte Vedra Beach, all beautiful!

    I guess it depends on when are you actually in FL. Sarasota is beautiful but if you are really down there during Spring Break I imagine it may be busy. If you do go to Charleston try to stop in Savannah, it looks gorgeous.

    That looks fantastic. It’s like Winter made into a dish. Instead of Campbell’s soup after coming in from playing in the snow, I’ll eat that!

    We, meaning my husband Josh and I, love Clearwater Beach Florida – it’s about an hour car ride from Oralndo on the gulf side. From there we always visit Honeymoon Island – it’s a national park so only traveled on by foot – we find the most amazing shells there and are never left disappointed. I may be a little bias though as my husband proposed to me on the island and we got married on the beach in Clearwater. If you go there make sure you eat at the Columbia restaurant. Authentic Colombian food like cinnamon churros and paella (? Is that how you spell that?). Anyway – Very, very good!

    Charleston is also an awesome choice! Lots of super cute shops and the trees and moss growing over everything is beautiful along with the river going through the town too!

    Enjoy your vacation in the sun! My husband and I read your blog on the regular and thought of you as we traveled to Thailand over the winter break and we saw Cebu on the airplane map. 🙂

    Yum – I love love poblano peppers and salsa verde, so this recipe looks like it might make my meal planning list next week! I live in Atlanta and I’d recommend Hilton Head or Amelia Island! Both are super pretty and I love the live oaks and Spanish moss. I personally prefer Savannah to Charleston, but both cities are great if you like old architecture and good food 🙂

    If subbing dried hominy for canned, would you suggest cooking it (I guess in just hot water?) beforehand, or would it be better to just put it in dried and cook the soup longer/add more broth as it cooks down? I have been looking for a recipe to use up dried hominy that I got in New Mexico and this is PERFECT, especially as I try to avoid meat during the week! Thanks as always for a killer recipe!!!

    I LOVE Charleston but since I’m not sure exactly when you will be going – right now it’s still pretty cold there (definitely warmer than Minnesota, but not exactly beach weather!). I’m not overly familiar with the beaches of Florida but was really intrigued by this beach that one of the DIY Bloggers I follow posted about – Rosemary Beach in the panhandle of Florida. It looks like a 5 hour+ drive from Orlando but it seems super laid back and relaxed and not very spring-breaky! Good luck!

    Eeeee! Go to the Wizarding World of Harry Potter. It’s just so fantastic and magical. And then go to a beach or something, but first general nerdery! If you find yourself south towards Ft Lauderdale (Loxahatchee — not actually a big touristy area) there’s a drive through animal park. It’s fantastic and I love it and I want to live there — definitely check it out! You drive your own car and zebras stop in the middle of the road in front of your car, blocking your way while you take 8 bajillion photos. THE BEST.

    Try the Gulf side of Florida for beaches that are more peaceful and family-friendly. Treasure Island is a good one. St. Augustine is another good choice. It’s about 2.5 or 3 hours from Orlando, but either way you go–West or East coast will be about 2 hrs (more in traffic). If you want to drive farther, you could go down to South Florida. Key West is amazing, but doesn’t have sandy beaches–just coral, but it’s worth seeing. The Boca Raton area has some great older Florida kitch and really nice beaches.

      My suggestion is to hop on a plane and go West Coast sunning. I live in Santa Monica, California (for those that somehow don’t know where that is!) and this weekend, beach will be in mid to high 70s. A bit overcast today and misty, giving our flowers a break. Plan to go pansy shopping today, so with required watering, they can lay and stretch in the sun all weekend. My husband and I plan to walk some of the gorgeous long stretches of sand and then dine out with a glimmering view of the sunset. I’ve been East Coast and Florida but sorry everyone We Win!! I am tempted though to see the Harry Potter exhibit. CA is known for its multi-culture foods, especially Mexican dishes. We love peppers!
      I’ve already printed this recipe, facebook and pinned it. Love it!My herb garden sprouts bushels of fresh cilantro. I recommend the all natural Frontera gourmet Mexican Salsa. The medium Tomatillo uses roasted Serrano plus cilantro. Their red salsa is to die for also. I line my various meatloaves in pan with red salsa before cooking. It mixes with the juices and tomato topping and yum fun to eat! Back to Lindsay’s inspiration, I plan to shop for and cook her hominy soup this weekend. Guess I have a lot to look forward too.     Savannah is amazing and is a food lover’s dream! It’s such a beautiful, walkable city. With Tybee Island nearby, you could easily enjoy all that the city has to offer and take advantage of the beach.

    Also, Savannah allows open containers, so you can sip on a yummy drink while strolling the southern streets.

    Here are some of my favorite Savannah food places – The Olde Pink House, a.Lure, Leopold’s Ice Cream, and Chocolat by Adam Turoni. So many delicious choices!

    Charleston is definitely a great beach and a cute little town to visit! It shouldn’t be too crowded in the winter, either. I can’t vouch for the weather, though; it may not be exactly swimming-weather.

    Palm Beach/Jupiter is great if you’re looking for quiet and a few good, but not over the top, food spots…Dune Dog is low key and yummy for splurge-type junk food (in the calorie dept., not the wallet dept.). And I have no problem eating “ugly” food! ESPECIALLY mushrooms.

    We love Charleston! We’ve been twice. The food – especially fresh seafood is fabulous. The kayaking, hiking at the Cape Romain National Wildlife Refuge, shopping, farmer’s market (best we’ve been too), history… I could go on and on. By the way, I think brown and green are lovely, and the recipe sounds delicious 😉
