In the tough times when you want to come back to the states, remember back to January, February, March, all those months where God was pressing in your heart to do something radical for Him.

My friends really speak truth.

Reality check: I have been a bit of a Johnny Raincloud lately.

On the blog, a little. (This came to my attention after I read through a few of my most recent posts and realized they were all stories about my stinky-fish-market-dirty-jeepney-oppressively-hot life in the Philippines. O, woe is me.)

In real life, even more. I have been feeling sick + I long for the comforts of home + I miss my family and friends. Woe is me again.

This whole Philippines thing is a big adjustment, and some of these yucky feelings are normal. Yes. Absolutely.

But I have so many reasons to be thankful. I have enough money to take a taxi whenever I don’t feel like walking. A fridge full of fresh, healthy food. A constant clean water supply. An embarrassing number of shoes to choose from each morning. I wonder what the man on our corner who sleeps on a piece of wood would say if he lived my life for a day. And I mean my “Filipino” life.

I guess I could start with being thankful that I even had the choice to come here in the first place.

So you came here for cookies, and now you feel like you’ve been punk’d.

This is not punk’d. This is a post about cookies.

Know this → I am so thankful for chocolate chip cookies.

And guess what else? I’m thankful for boxed milk. NOT KIDDING. It’s milk that actually tastes like milk. Can you believe such a thing exists? I’m in milk heaven here, especially when I “accidentally” buy non-low-fat milk. Dunking cookies in heavy cream called milk is something I can get behind.

If chocolate chip cookies are a band-aid for the soul and chocolate chip cookie dough is a double band-aid for the soul, I will take both the single and the double, please and thank you. Twice. And with a glass of milk.

These cookies are classic in a way that only peanut butter, oats, and two types of chocolate chips can be classic. And if you’re a nut person, you better add some nuts. I will judge you for sacrilegious cookie behavior, but whatev.

I think we can at least all agree on the {two types of melty} chocolate part, right? Right.

Peanut Butter Oatmeal Chocolate Chip Cookies


Description

Peanut Butter Oatmeal Chocolate Chip Cookies! These are classic in a way that only peanut butter, oats, and two types of chocolate chips can be classic.


Ingredients

Scale
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 2/3 cup unpacked brown sugar
  • 1/2 cup smooth peanut butter (chunky is nice too!)
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 3/4 cup chopped milk chocolate (or just chocolate chips)
  • 3/4 cup chopped dark chocolate (or just chocolate chips)

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream together the butter, white sugar and brown sugar until smooth. Beat in the peanut butter, vanilla and egg until well blended. Combine the flour, baking soda and salt. Stir until just moistened. Mix in the oats and chocolate chips until evenly distributed. Drop by tablespoonfuls on to lightly greased cookie sheets.
  3. Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely.

This makes about 25-30 cookies for me.

    Those look amazingly fat. Good fat. Big and plump like cookies should be!

    And we should all be thankful for what we have, but sometimes I have to admit I think about how my life could be if so-and-so would happen and if this hadn’t happened and so on. But you’re right, I should be thankful for what I do have. And I really hope things get easier for you! A year isn’t much time to adjust so I hope it happens quickly to make the time pass more pleasantly. 🙂

    Lindsay, these cookies look fantastic. I’m a sucker for chocolate chip oatmeal cookies, but when you add the peanut butter (my favorite), I’m in heaven.

    Do the cookies come out pretty soft (after they cool of course), or are they more on the crispy side?

      Soft. This particular batch got a little more crunchy after they cooled, but I’m blaming that on foreign ingredients and cooking appliances. I have made this recipe at least 50 times (seriously) at home in the States, with all the normal ingredients, and a normal oven, and they are always soft. And if you really want to ensure that they’re soft and chewy, take them out a minute early. 🙂 Good luck!

    It is so hard sometimes to be thankful for what’s right in front of us, especially when we’re wading through (literal and metaphorical) fish guts. I think this is a timely reminder that we could all use. I’ve seen from the pictures you’ve posted the joy that you’re bringing to the children you’re teaching and hopefully that will help carry you through on the rough days. Well, that and chocolate chip cookies 😉

    Awww, Lindsay. I was feeling a little woe-is-me this morning too, and I am in the states! That tends to happen when your thrown a little out of your comfort zone…or in your case…a lot. Your doing a great thing there, be encouraged!

    In other news, these are the most delicious cookies I’ve seen in awhile! I may try to adapt them to be gluten and dairy-free so I can eat them NOW:-)

    The key ingredient in any good chocolate chip cookie is oatmeal. And I agree about the nuts – cookies (or brownies) are no place for them!

    I think you’ve handled things amazingly well. I don’t think I would’ve adjusted nearly as well as you have. And sometimes just venting helps even if it feels silly when you compare your situation to others.

    I was just thinking about you yesterday, wondering how you’re coping with this MASSIVE adjustment and I wondered how anyone could possibly even understand it until they walked a mile. Just know, I’ve been thinking about you and wishing you the best.

    Currently on vacay where Nestle boxed milk is The Thing. That’s what is sold. And I love cookies that are a trifecta of flavors in one!

    This post made me think of all the things I should be more grateful for. Sometimes I’m greedy and just want more, more, more but at the end of the day, I’ve got my health, lots of love, my family, and a great job.     Awww, I like hearing about your stinky fish/oppressively hot stories of the Philippines. It just means you are a real human being facing a challenge, and to me that’s way more interesting than another “green smoothie with a glass straw” post.

    Those posts show courage, insight, thoughtfulness, gratefulness and so much more. Some people would take one look and turn around and fly home. You STAYED and are showing us pieces of your life that we would not otherwise see.

    I would have a difficult time adjusting to living in an undeveloped nation, which sounds horrible, but it’s the truth. I’d love the experience and completely embrace the diversity and the utter newness of everything, but despite the character building aspects, I would miss my friends and family like crazy too and the comforts I have grown accustomed to.

    When I was in Chile, I drank boxed milk like craaaaaaazy! I actually think it tasted better than the milk we have here in the states…dunno why. Your cookies are literally the EXACT cookie I would make if I were feeling blue. Chocolate. Peanut butter. Oats. Perfection. Chin up, you’re doing good deeds and your readers are enjoying your posts, just keep that in mind!

It’s called Bittersweet, though I don’t remember the author because as soon as I finished reading it, I biked it over to Nan’s and gave it to her. If Amazon doesn’t ship to Cebu, I WILL! (If you look it up online… the cover is light blue and there is a chunk of dark chocolate on the front.) The book bait really doesn’t do it justice, but the pages inside are delicious!

    These are on my “must bake ASAP” list! But so far I haven’t been able to find rolled oats in Saudi Arabia! I know, it’s very sad. But they do have quick-cooking oats. Do you think quick oats would ruin the texture?

      I’m trying to remember if I’ve used quick oats before, and I’m sure I have (I’ve made them about a million times) but I don’t remember if I added anything to compensate for the difference. I’d say if you bake them right away, it wouldn’t be a big deal. Maybe add a touch of milk or a little more butter or something so they don’t soak up all the moisture. But if you are going to refrigerate the dough, you might notice they get a little more dry. Sorry I can’t be more exact… I know you can make it work, you might just have to play with it a bit. 🙂
