CREAMY + COMFORTING

Korma is a traditional Indian dish where meat or vegetables are braised with yogurt/cream, water/stock, and spices to form a thick sauce.

We based our recipe off the vegetable korma in the "Best Ever Indian Cookbook" by Mridula Baljekar, which we dearly love.

Start with some real thin onions.

Garlic and ginger, too!

And then add that fragrant dream to some butter!

It is often recommended to use whole spices in Indian cooking, so that's what we're doing!

We only had cardamom pods on hand so we did our best. But if you have whole, go whole!

The cozy begins! In go the potatoes.

Been simmering for awhile so in go the green beans and red pepper.

A bit more water and simmer until soft.

Optional, BUT we definitely recommend adding some paneer (soft Indian cheese) if you have some. 

We got frozen paneer so it'll take a little more time to heat up. And then adding cream and yogurt because dreams do come true.

Stir and let simmer until thickened.

Look. At. That. Cozy.

Yes. Yes yes yes.

Little fresh herbs on top. (And hiiii cookies! Rough day at the office.)
