Autumn Glow Milkshake

I know it’s technically not autumn yet, but my breakfast game has been in a rut lately and I need something fresh, nutritious, delicious, and easy.

Introducing: AUTUMN GLOW MILKSHAKES.

Okay, let’s clarify.

  1. Not technically a milkshake. Almondmilk, almond butter, frozen sweet potato 😱,  frozen cauliflower 😱😱, a pinch of salt some honey and protein powder if you want? The dream team is making milkshake magic happen, right in your very own blender.
  2. Not technically autumn yet. As previously stated. So I guess you could just bookmark for a week or two, or embrace the autumn vibes a little early this year, or say to yourself: self, you do not need to wait until autumn to eat sweet potatoes in a smoothie/milkshake/thingy.
  3. Technically very delicious. I know I’m totally scaring you off with the sweet-potato-cauliflower-and-this-is-going-to-be-like-ice-cream thing, but really – the texture is beautifully smooth (like a milkshake) and the taste is just the right amount of sweet. Apparently this is a thing? People putting frozen cauliflower in their smoothies? I think the idea is to get more nutrition (VEG) and less sugar than the otherwise standard banana. I don’t know, I was pretty skeptical, but Autumn Glow Milkshakes have me sold on this weirdo smoothie move.

Watch How To Make Our Autumn Glow Milkshake:

In the blender we’ve got sweet potato, cauliflower, almond butter, vanilla almondmilk (Almond Breeze because it’s our fave, and have you seen the Hint of Honey kind around anywhere? I am dying to try it), honey, vanilla protein powder, and flaked sea salt. I’m all about that flaked sea salt in my smoothies.

Here’s what your eyes will behold when the blender has worked its magic:

The orange color might be a teeny bit Halloween-y, but hang with me.  It’s a pretty mellow orange, like a nice adult-ish caramel-colored situation rather than pumpkin orange, and the adult-ish orange totally embodies the Autumn Glow, right?

We can thank the almond butter (hello, friendly fats!) and the sweet potato (nutritious starches!) and some super creamy almondmilk (hello, Almond Breeze!) for a silky-smooth texture that will remind you of a malt shop. It’s next level.

Raise your hand if you love toppings? If your whole food life is mostly about what you can drizzle, sprinkle, or crumble on top?

This is your chance. Your BLANK CANVAS. My personal faves are some banana slices, maybe the occasional handful of blueberries (especially if I happen to be making this smoothie at the end of the summer, which, at the moment, I am), and always always always a sprinkling of granola. Best case scenario would be that coconut oil granola that I love as much as life itself, but in a pinch, even a good store-bought granola will be a pretty happy combo with this fake-out breakfasty ice cream.

Autumn Glow Milkshakes don’t have to be eaten for breakfast, but they do have this magnetic-like pull on my morning routine. Just know that no one will be mad if you need to eat a milkshake for breakfast, okay? This is a safe zone for that type of behavior.

Autumn Glow Milkshake

  • Author: Lindsay
  • Total Time: 10 minutes
  • Yield: 1 milkshake 1x

Description

A glow-worthy “milkshake” that is loaded with nutrients and tastes like ice cream. Awesome for breakfasts on the go.

Ingredients

Units Scale
  • 1 cup frozen sweet potato, steamed (see notes)
  • 1/2 cup frozen cauliflower florets
  • 1 cup Almond Breeze Vanilla Almondmilk
  • 1 tablespoon almond butter
  • 1 scoop of your fave protein powder (vanilla is best)
  • 2 tablespoons honey
  • a pinch of sea salt

Instructions

  1. Blend everything up in a high-powered blender until smooth. Add more almondmilk as needed to keep it moving smoothly.
  2. Serve topped with granola, banana slices, fruit, a drizzle of almond butter, or whatever your heart desires.

Notes

For the sweet potatoes, I recommend peeling, cutting into cubes, steaming, and then freezing ahead of time. You want them to be frozen when you blend in order to get the right texture.

if Starbucks can release pumpkin spice lattes September 1, i think it’s acceptable for you to call this shake Autumn Glow. i’ve been using chilled or frozen sweet potatoes in my smoothies for over a year, and i like the flavor and the sustained satiation of this complex carb much better than a frozen banana. for all those cauliflower haters out there, trust me: you won’t even taste it!!

thanks for taking a step outside your comfort zone, Lindsay, and for nudging us in the same direction!

    come on, FALL!!!

ooo! I have to try sweet potato…why didn’t I think of that?? I have been doing cauliflower and I love the creamy level it brings to my glass <3
I had forgotten about your delicious coconut granola…I HAVE to make that again!

  3. Pinch of Yum Logo

    This looks delicious!

Do you have recommendations for a good blender/food processor? I’m in the market for one since I’ve moved back to the States. Thanks!

  4. Pinch of Yum Logo

I’ve never ventured beyond kale or spinach in the adding-veg-to-smoothies game, but I am ON BOARD with this idea of frozen cauli + sweet potatoes! Can’t wait to try this one (and not waiting for autumn!).

  5. Pinch of Yum Logo

Dang girl, you had me at Autumn, and glow, and milkshake. I’ve been itching to get smoothies and protein shakes into my diet. I can’t wait to try this!

This looks interesting! I like cauliflower and it would be fun to try in a smoothie. But, is the cauliflower steamed before freezing? I think the recipe would be easier to read if you said this:

    – 1 cup steamed sweet potato, frozen (see notes)
    – 1/2 cup (raw? steamed?) cauliflower florets, frozen

  7. Pinch of Yum Logo

First fall recipe I’ve seen in bloggerland! And it’s a good one. Can’t wait to try. But I will use real milk and maybe canned pumpkin, because I don’t have time to roast sweet potatoes. Thanks!

blending sweet potato is genius! leave it to you to try it out first! so, so looking forward to making this one myself! 🙂

  9. Pinch of Yum Logo

I use pumpkin in my smoothies year round, so no judgement for releasing an “Autumn” smoothie early August! I’m all about veggies in smoothies but haven’t done cauli yet. Will try this soon!

The nutritional analysis has 56.8g sugar, but 0% of daily allowance. How does that work?

    1. Pinch of Yum Logo

It’s blank, it doesn’t say 0%. The FDA doesn’t have a recommended daily value for sugar like they have for fat, sodium, etc. Listen to your body and do what works for for you!

      1. Pinch of Yum Logo

To clarify, the FDA does have a rec. sugar intake, but it’s just not included on nutrition labels. Hope that helps clear things up!

You know what – I’m ready for fall! It’s been below 80 here in Colorado for a week or so and I’m one cool day away from pulling out my candles and stock piling canned pumpkin. And this technically looks AMAZING.

  12. Pinch of Yum Logo

I just made this and it was like drinking pie for breakfast! I subbed the cauliflower for frozen zucchini coconut butter for the almond and a sprinkle of cinnamon

  13. Pinch of Yum Logo

I didn’t have the frozen cauliflower, but I made it with 1/2 cup of ice in place of the cauliflower, and it was AMAZING!

This was divine! As in, way beyond as good as I expected looking at the beautiful ingredient list you created!! I did however think it was faster to throw a bunch of sweet potatoes into the microwave, and then let the cool for a bit after cooking, squeeze all the inside yumminess out into Ziploc bags to freeze in approx. 1 cup servings. I just hate having to peel and chop up uncooked sweet potatoes- makes me think I’m going to cut a finger every time!

    1. Pinch of Yum Logo

You can also buy them peeled and diced in a steamer bag at most grocery stores or target!

  15. Pinch of Yum Logo

Since these past couple days have felt like fall then I’m calling it fall. Either way, this looks delicious. And my food life is 90% toppings and 10% vehicles for toppings… So, I hear ya loud and clear;)

  16. Pinch of Yum Logo

Frozen sweet potato?! I love it! I just listened to an awesome podcast about how great root vegetables are for your digestive flora… this is a killer way to incorporate them! Can’t wait to give this smoothie a try 🙂
