Fluffy Peanut Butter Cookies

Ah yes. The first day of school.

What would the first day of school be without a cookie? Sad. That’s what it would be.

But my first day of school was not sad.  My first day of school was very glad.

Glad for the 25 precious souls that arrived early with shiny new backpacks and way too many markers.

Glad for the spicy lunch in my lunchbox.

Glad for ten minutes outside in the sun, even if it was courtesy of a little friend pulling the fire alarm.

And seriously glad for the joy of coming home to an after-school cookie, or five. And did I mention that they were fluffy peanut butter cookies studded with chocolate chips? With a glass of cold milk?

Q: Would you think I was crazy if I told you it was vanilla almond milk? Or would you love me even more for giving you the best combination ever? In my book you should dip your dessert into a dessserty beverage. I really hope you read the same book as me.

    Happy first day of school! Hope all the rest of the days are as glad. Of course, if you had fluffy peanut butter cookies to come home to every day I’m not sure how they couldn’t be. They’re absolutely perfect.

    I don’t have kids, and so don’t know much about after-school snacks, but if they taste as good as they look, I’d eat these morning, noon, or night.

    Wow, these look absolutely delicious! I love any kind of chocolate chip cookie – dense and fudgey is good but I love the idea of these pillowy light ones too. I wish I’d been given something like this when I got home from school – my mum always pushed healthy snacks like grapes and nuts which AREN’T THE SAME! Where can I get/find a recipe for vanilla almond milk? It sounds gorgeous.

      I buy it … usually Silk “pure almond” brand. It’s at most grocery stores near the soy milk! 🙂 And it is heavenly.

    I have been making your soft CC cookies and they are great! I am now attempting a PB cookie and saw you posted one from Jessica (your friend). Have you had the same result of the plump and soft PB cookie as you do with your CC cookie?
