Sweet juicy mango sitting on my kitchen counter, I love you.

Sadly, so do the neighborhood ants. But that won’t stop me from buying, bleaching (I’ll tell you about it later), slicing, slurping, eating, and loving you every single day that I live in Cebu. I can’t. get. enough.

As much as this new place is growing on me, Cebu it is not the kind of place that screams “fresh produce”. Try more like “fried chicken” and “exhaust”.

I take the word luscious pretty seriously. And yes, right smack dab in the middle of this urban chaos are what am I going to call the world’s most luscious mangos.

I don’t know how that all works out, but I like it a little bit more each day.

I was definitely not planning ahead when I told Alex and Sonja that I would take on the Mango Chicken Salad recipe for their cookbook project. But look how nicely that worked out: I now have yet another way to sneak fresh mangos into every meal. Don’t mind if I do.

This chicken salad is cool and creamy thanks to the mayonnaise (yes, real mayo and no, I wouldn’t recommend subbing yogurt), plus it’s sweet and fresh thanks to the mango chunks and basil leaves. In case you were looking for the perfect vehicle to deliver this salad into your mouth, may I suggest an extra large buttery croissant?

And by suggest, I mean require. Please.

Mango Chicken Salad Sandwich


Description

This mango chicken salad sandwich is a croissant stuffed with fresh mango chicken salad – chicken, sweet mango, fresh basil, green onions.


Ingredients

Scale
  • 1 lb. cooked, shredded or diced chicken
  • 1/2 cup mayo
  • 1 mango, diced (could also be a green mango)
  • 1/4 cup diced green onion or white onion
  • 2 tablespoons sugar
  • Salt and pepper to taste
  • 3 tablespoons chopped fresh basil

Instructions

  1. Mix all ingredients except basil and chill. Add basil just before serving.
  2. Serve on a croissant, wrap, salad, etc. Store in the fridge for 2-3 days.
  • Prep Time: 15 mins
  • Cook Time: 30 mins

    Aww. I love the video. What a wonderful opportunity of HOPE for these kids to be at the school. I know I say it every time, but I love what you both are doing!! Your classroom looks great!
    Oh – and the chicken salad – I totally hear you that you must not sub yogurt for the mayo – (even though mayo grosses me out in almost anything BUT chicken salad!)

    I’ve been using mango in savory things lately and since I love it, there is no wrong way to use it.

    I can only imagine the bugs and ants and everything else that is just abundant in all that heat and humidity…eek!

    Lindsay – First, the chicken salad looks great. Nice job. FYI, when I’m in the mood for chicken salad and there’s no cooked chix on hand, I’ll run by Sam’s Club and pick up one of their roasted birds. They really know how to do roast chicken right – tender, juicy, delicious. Good price, too.

    Now for the video, thanks for putting it here…I may have missed it otherwise. It tells a very sweet story and I hope you’ll continue to post videos all year. Can I assume that Bjork was behind the camera?

    Oooh, I love the chicken with little bursts of sweet mango and cool refreshing basil – this is great! I’m not big on mayo but would have no problem substituting it out for a little something else! Have a great weekend!

    Yum! I totally agree with you, Philippine mangoes are some of the world’s best! Love this recipe – it’s simple, quick and easy. I’m definitely going to make this for lunch at work.

    Lindsay! I’m typing this as I chew between bites of this delish mango salad! While making it, I was slightly jealous of the difference between your fresh mangoes and my mango that I had to cut brown parts of out. Non-the-less, it’s amazing! I may have to have a second sandwich! Thanks for the recipe!

    Teaching at CSC looks amazing! It makes me want to look for similar jobs! Let me know if any early childhood special education jobs open up! 🙂

    Just made this to take on the road for a girls only road trip that begins tomorrow 🙂 We plan to stop at a roadside park and have a chicken salad picnic lunch. Yum! I added toasted almonds to the mix just because I thought it sounded yummy to do so. Thanks for an awesome twist (mango) on a standard favorite.
