Nectarine Basil Salsa

Don’t be mad at me.

I try to make complete meals. But then I make part of a meal (see picture of juicy, sweet nectarine salsa) and start eating it with blue corn tortilla chips, and suddenly I’m way to tired to make a whole meal.

And then dinner becomes large amounts of chips and salsa washed down with a bowl of ice cream. Gulp.

You understand. It’s the first week of school. I’ve been running around like a crazy lady all week. And when I’m not running around like a crazy lady, I feel the need to be inhaling any and all snacks. So don’t be mad at me for posting something deliciously snack-y, ok?

You didn’t really want to make dinner anyways, did you?

Before you start going crazy with the blue corn tortilla chips, let me say this about Nectarine Basil Salsa: it’s important to have a ripe, sweet, juicy nectarine.

Good nectarines can be hard to find, and I seem to be a magnet for the bad ones. I knew this and yet I still spent 5 precious minutes picking out “good” nectarines at the grocery store.  And surprise – those bad, non-juicy ones found me.

All I can say is thank goodness for sugar. And pick your nectarines carefully. You wouldn’t want to mess this snack meal up.

Nectarine Basil Salsa


Description

This nectarine basil salsa is made with fresh basil for a delicious, easy, and healthy addition to any meal. Super quick, super easy!


Ingredients

Scale
  • 1 ripe, juicy nectarine
  • 1 1/2 tablespoons diced red onion
  • 1 1/2 teaspoons minced jalapeno (seeds and ribs removed)
  • 1/2 teaspoon lime juice
  • 1/2 teaspoon honey
  • 1 teaspoon sugar (optional)
  • 4 fresh basil leaves

Instructions

  1. Dice the nectarine. Add sugar if the nectarine isn’t very juicy and let sit for a few minutes. Add red onion and minced jalapeño.
  2. Stir in honey and lime juice. Add a sprinkle of salt or sugar (or both) depending on how you want it to be flavored.
  3. Just before serving, cut basil into ribbons and sprinkle over the top.

    I adore basil as a sweet flavoring instead of always savory. I made peach/basil buttercream for my daughters wedding shower cupcakes, wish I’d had this salad to go with those!!! This is why I heart you, ’cause you always make me hungry!

    I think it is impossible to find a good one. I get ones that I think will be good, still a little hard and then bam, in two days they are rotten. Really. Sad. This salsa looks fantastic. It would be so good on grilled chicken! Come over and visit us. We have some terrific apple recipes this month.

    It’s okay. There are times that I hand a bowl of mango/avocado salsa to my husband and tell him its dinner. Those times come about once a week in the summer. He’ll be pretty excited once I start spicing things up a bit with this nectarine basil salsa. It’s gorgeous, and I’m convinced you can’t go wrong with basil and fruit in a salsa.
