CHIMICHURRI PORTOBELLOS

with goat cheese whipped potatoes

Originating in Argentina, chimichurri  is traditionally made with parsley,  but today we are mixing up a  cilantro version.

Chimichurri is also traditionally used  on grilled meats. Today we're saucing up one of our fave grillable alternatives - portobellos!

After marinating for a bit, get 'em  grilling and keep on brushin' on!

Why stop at mushrooms when you  can also have creamy potatoes?

And why stop at butter when you can ALSO HAVE GOAT CHEESE?

NOTE: We used day-old cooked  potatoes, so the end result is a bit  lumpy. They are smoother when  using freshly cooked potatoes.

May we all be so gently placed on a bed of mashed potatoes.
