Ran some bacon through the food processor (yes that's right) to start this smoky base.
A little onion, jalapeño, and garlic.
Cumin + chili powder cuz...chili.
TRUST on the bacon. But if you're weirded out by it, use something smoky like a chipotle pepper or smoked paprika instead.
Our friend Sarah's tomatoes of choice are these with the green chilies! Two cans, frands!
Add broth and bring to a simmer.
You can just drop your chicken right in there, cover and lower your heat. We're using thighs but chicken breasts work great too!
After about 15 minutes, pull the chicken out and let it cool a bit so you can shred it.
Add your beans of choice! We love a solid pinto/black bean combo.
The now shredded chicken has come back home.
