Baked Apple Pancake with Apple Cider Syrup

This.Is.Awesome.  And I can’t wait to tell you about the cinnamon sugary apple goodness wrapped in a nice, crepe-like pancake texture and drizzled with the best homemade syrup ever baked apple pancake.

But first, more pressing news.

Something awesome happened in my fourth grade classroom this week.  It was this book.

Greatest Book Ever

What is it about animal stories?  I mean, after reading the dramatic dolphin tale (obviously titled Angels of the Sea) my class erupted into a full-out spontaneous round of applause.

I’m not even lying when I tell you that there were tears shed during this story.   But “don’t worry, Mrs. O, these are tears of joy.”

But let’s be honest.  I may have shed a few tears of joy myself the moment that this heavenly baked apple pancake touched my lips.

And then, when powdered sugar was dusted over the cake, and apple cider syrup – the best thing ever invented – was poured over my slice, well, at that point, the tears of joy flowed freely.

Either my dramatic fourth graders are rubbing off on me, or this is one darn good breakfast.

Ok, now for the best news of all.

It’s LIGHT!  Well, if you eat the whole thing drowning in syrup, which is what I’d like to do, that isn’t light anymore.  But if you have self control and eat one slice, your skinny jeans will love you!

And if you sneakily eat two extra slices while cleaning up the kitchen?  You’re my best friend.

Baked Apple Pancake with Apple Cider Syrup

Description

This light baked apple pancake is baked in a cast iron skillet and topped with a homemade apple cider syrup.


Ingredients

Scale
  • 1 cup brown sugar
  • 2 cups apple cider
  • cinnamon sticks
  • 1 large unpeeled apple, thinly sliced
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon cinnamon
  • 4 eggs (can sub egg whites for some of the eggs)
  • 2/3 cup skim milk
  • 2/3 cup bread flour (can sub all-purpose or whole wheat)
  • 2 tablespoons applesauce
  • 1 tablespoon sugar

Instructions

  1. Bring the apple cider, 1 cup brown sugar, and cinnamon sticks to a boil. Reduce heat and simmer about 30 minutes, until reduced by about 1/3. Set aside and let cool.
  2. Preheat the oven to 350. Combine the apples, brown sugar, and cinnamon. Arrange in the bottom of a buttered 9-inch pie plate.
  3. Whisk the rest of the ingredients until just combined and pour the mixture over the apples. Bake for 15-18 minutes, or until top is browned and set. Remove from oven and let cool for 5-10 minutes.
  4. Using a knife, loosen the edges of the pancake from the pie plate. When loose, invert onto a serving platter and sprinkle with powdered sugar. Top with syrup!

Notes

-For super thin apples, use a mandoline slicer. It makes for awesome layers.
-I had best results using a pie plate instead of a cast-iron skillet.
-Do not try to add melted butter to the batter. It falls apart. But DO add butter after it’s baked! Yum!

    I think that I would cry tears of joy if this showed up in my kitchen. Your fourth graders definitely have the right idea.

    I’ve been looking for a German apple pancake (or something along those lines). But combined with apple cider syrup? This has got to be my Saturday morning breakfast!

    Have you ever seen that video of the lion that was a “pet” and was released into the wild again? Then his former owners went to the wild and found him and the lion literally embraced them in a hug? I think the video was to the song “Forever Young”. Anyway, best animal story ever and yes…I may have shed a few tears myself. 🙂

    I don’t know what happens between 4th and 12th grade, but my students cry when they have to read. And they’re not happy tears. Maybe I need to bribe them with some cinnamon/sugar? 🙂 This looks fantastic and I love the apple cider syrup!
