These are my new go-to! I make a big batch, and have plenty to freeze and pop on the toaster on busy mornings. This recipe is just the best.
THESE! FOREVER! I’ve fallen in love.
You guys, I know you get this: I am majorly predictable at breakfast. Oatmeal for Breakfast Every Day is my rock solid permanent habit, which is about to make things interesting because we’ve got some new equally healthy, equally filling, and even more pretty breakfast yums in food blog town and I love it so much that I’m alllmost ready to kick my standby oatmeal to the curb.
Yeah, that good.
Wait wait hold on because I just remembered –> these have oats IN them. Of course I would be the person who finds a daily oatmeal replacement that swaps out my daily oatmeal with something that is actually made with oatmeal. I’m all of a sudden having flashbacks to those muffins and the oatmeal that snuck in there with the caramelized bananas, too. It’s like a breakfast food cycle and I’m stuck in it. GEEZ oatmeal. Leave me alone already.
Except don’t.
These pancakes! FYI every time I type that I am saying it in a desperately happy voice. Youuuu guyyyys. They’re so good.
Let’s review why they’re awesome. Obviously and most importantly because they come from a good friend (if you’re wondering if this is the Shredded Chipotle Chicken friend: yes. I’ll keep her.) who also happens to be the mother of the most yummy little two year old of all time.
And now you will look at this photo and smile back at Peanut because it’s Friday and you’ll feel good. It’s a requirement of getting the recipe so no skipping.
HEY. No skipping.
Also why these Cinnamon Whole Grain Power Pancakes are great: they’re healthy. Like 60 calories and 5 grams of protein per pancake. So for my stack of 12 pancakes with fruit and almond butter and syrup and chia seeds, that means… um… boo math. More importantly and less mathematically, that means yummy, delicious, fresh, and pretty.
Will I eat these every day for breakfast from now until infinity and beyond? Obviyes.
When you make these and put amazing toppings combos on them, I hope you’ll comment or tag me or hashtag #pinchofyum to give me some inspo because sometimes I get obsessed with strawberries and blueberries and if I’m going to be eating these for the rest of all time, I’d like to try yer new ideas, too. XO

We are total brain twins! because:
1. I eat oatmeal everyday. Predictable. Delicious. I LOVE IT.
2. But, yesterday, I made some pancakes and I seriously thought that they would make me not eat oatmeal forever. Forever may be a strong word, but for a long time.
So, obvi I need to try yours…and there’s peanut butter. <3 Pinned!
Thanks Taylor! We may need to have a food twin party.
I’m majorly boring. Well, boring cook at least. We just get into eating ruts.
So I love this because my kids love pancakes, oatmeal and fruit.
I gotta feeling the 2-year-old & 4-year-old are giving this 2 thumbs up!
The lil two year old in this post eats these every day for brekkie! 🙂 He loves them.
Suggestion for Becky: Use flax eggs and non-dairy milk instead
1st: Cute kiddo! I totally didn’t skip.
2nd: I have ground oats in my Vitamix right now, leftover from a recipe yesterday. I would think it’s a sign, except my little nursling is allergic to eggs and not terribly fond of dairy either. But I’ll be filing this away for the future!
3rd: I’m digging the whole fruit/almond butter combo lately. I’ve been LOVING it in your Rainbow Salad!
So glad you didn’t skip! 🙂 And yes to the rainbow salad! I rarely re-make recipes (just cause I have to always be making new things for the blog) but that one is one of my rare repeats!!
I am like you I eat oatmeal for breakfast almost every day, but on weekends pancakes and waffles. I love you used wheat flour and rolled oats. Besides adding more fiber, I bet it gives it great flavor. Pinned!!
These look like not only the healthiest pancakes ever but also the most delicious! My pot of oatmeal is simmering on the stove as we speak, but I’m wishing it could magically turn into a stack of these pancakes!
Tomorrow! 🙂 All it takes is a few minutes.. .probably about the same as my pot of regular oatmeal, actually!
Looks amazing and super healthy. I am making these!
I make something almost identical to these, just minus the cottage cheese. It makes me feel so good to eat something so healthy and decadent at the same time. I pour almond butter over mine and whatever fruit we have in the house. YUM!
I love the flavor of hearty grains! These would be delish with a helping of warm chunky apples.
MMmmm! I may have to revisit these in the fall for some fall toppings… pumpkin, apple, yummy yum!
Oh so yum!
I love oats for breakfast too- specially in pancake form! These look amazing!
I have a question – this recipe has baking soda only – was wondering if I could pick your brain for baking soda vs baking powder vs a combination of the two?
For this recipe, you could do both – the soda doesn’t really react strongly with anything acidic (that I can think of, at least?) so some baking powder might fluff them up a bit more. I’ve been trying to teach myself more about baking soda and baking powder and when to use one over the other, but it seems like it really varies from recipe to recipe. But I think generally, acid + baking soda will fluff up, and baking powder alone will fluff up, so mix and match and use as you think fits. 🙂
OK, now I’m just jealous. My pancakes always turn out super ganky, like I’m trying to make some sort of weird shape but just failed.
Unfortunately, that “weird shape” I was attempting was, you know, a circle. Blast you and your perfectly perfect pancakes, Lindsay!
And if you’d like to use that as the name for your side blog, I’m totally cool with it.
🙂
lol — ganky!
So glad I stumbled on your blog! I love your images and writing! Can’t wait to try out these pancakes!
OMG little Peanut just made my day!! AAAAND pretty sure these pancakes are going to make my weekend/life. YUM!
He’s a cute one! 🙂 Gives me a good subject for a little photography practice now and then!
I love your in-the-making shots. They should be bigger! Heidi was right about you being the master of pouring and shooting. Write a tutorial about it?
I don’t do oatmeal or pancakes but those calories look good!
hahaha! It’s totally clunky but that would make for a fun post! 🙂
I had to pin these. Delish. I love the guilt free healthy part of one of my favorite dishes—-PANCAKES. Cottage cheese is great addition to the dough.
Any ideas to substitute the cottage cheese? I’ve been looking all over for a healthy pancake recipe but the cottage cheese is the only downfall in my opinion. Greek yogurt maybe?
Hi Isabel,
I used Vanilla Yogurt instead of the Cottage Cheese and added a touch more oats to make up the thickness that the Cottage Cheese would’ve added.
Just whipped up a batch and can safely say they were delicious.

Thanks for the feedback/help Lottie!!
Sure! Greek yogurt could work.
Tried this recipe out already and can confirm that they were absolutely lovely.
Substituted the Cottage Cheese for a cup of Yogurt and added a touch more oats.

The pancakes looks really good! Love it!
Just curious, but that doesn’t look like maple syrup drizzled over the pancakes? Is it? Am I just crazy?
It’s the almond butter that is more visible – there is maple syrup there, too!
Just curious, is the serving size on the nutrition label for 1 pancake or 2? I don’t have a gram scale so not sure about the 51 grams!
Oops, just saw on the pinned link that it’s for 1, never mind! I can pretend its for 2 😉
Yep, pretend it’s for 2. 🙂
Yummy! I made up a recipe for White Chocolate Macadamia Nut Pancakes. These look a little healthier and I’ll give them a try. Great post!
Mmm sounds delicious! like cookie pancakes!
I’m not keen on deviating from my favourite bowl of morning oats either, so I’m totally loving the fact that these have oats in them 😀 Pinned for a future breakfast… or dinner 😉
It’s like oatmeal but in pancake form 🙂
Cool!! These pancakes look awesome!
Oh yeah! A sneaky way of getting the kids to eat oats. I like it!! You asked for other topping ideas? How about coconut and white chocolate – with the strawberries of course! or some sliced peaches (cooked on the griddle too) with a little honey. ooh ooh and maybe a few crushed pistachios on there for good measure 🙂
PEACHES AND HONEY. Yes and yes.
I try to have pancakes at least once a week. They make the weekends so much better.
I love protein pancakes. Nothing keeps me full like they do- including nice big bowl of oats. I like that these don’t rely totally on egg whites or protein powders! Yum. My favorite “I don’t want to cook” dinner!
Protein powder – bleh. I am not a fan. Bjork likes it but I just can’t do it, so mine use a creamy dairy protein instead 🙂 🙂
Creamy protein is much better! I can’t seem to do the protein powder thing either.
