Cinnamon Whole Grain Power Pancakes

THESE! FOREVER! I’ve fallen in love.

You guys, I know you get this: I am majorly predictable at breakfast. Oatmeal for Breakfast Every Day is my rock solid permanent habit, which is about to make things interesting because we’ve got some new equally healthy, equally filling, and even more pretty breakfast yums in food blog town and I love it so much that I’m alllmost ready to kick my standby oatmeal to the curb.

Wait wait hold on because I just remembered –> these have oats IN them. Of course I would be the person who finds a daily oatmeal replacement that swaps out my daily oatmeal with something that is actually made with oatmeal. I’m all of a sudden having flashbacks to those muffins and the oatmeal that snuck in there with the caramelized bananas, too. It’s like a breakfast food cycle and I’m stuck in it. GEEZ oatmeal. Leave me alone already.

These pancakes! FYI every time I type that I am saying it in a desperately happy voice. Youuuu guyyyys. They’re so good.

Let’s review why they’re awesome. Obviously and most importantly because they come from a good friend (if you’re wondering if this is the Shredded Chipotle Chicken friend: yes. I’ll keep her.) who also happens to be the mother of the most yummy little two year old of all time.

And now you will look at this photo and smile back at Peanut because it’s Friday and you’ll feel good. It’s a requirement of getting the recipe so no skipping.

Also why these Cinnamon Whole Grain Power Pancakes are great: they’re healthy. Like 60 calories and 5 grams of protein per pancake. So for my stack of 12 pancakes with fruit and almond butter and syrup and chia seeds, that means… um… boo math. More importantly and less mathematically, that means yummy, delicious, fresh, and pretty.

Will I eat these every day for breakfast from now until infinity and beyond? Obviyes.

Description

These Cinnamon Whole Grain Power Pancakes are so simple to make and will keep you full all morning.


Ingredients

Scale
  • 1/2 cup milk
  • 1 cup cottage cheese
  • 2 whole eggs and 2 egg whites
  • 1/2 cup wheat flour
  • 1/2 cup rolled oats
  • 1/2 tsp baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla

Instructions

  1. Place all ingredients in a blender and blend for 30 seconds until the batter is mostly smooth. Preheat a griddle to medium high heat.
  2. Pour about 1/4 cup pancake batter onto the hot griddle and cook for about three minutes or until bubbles form on top. Flip to the other side and cook for another 1-2 minutes. Transfer to a plate and serve topped with fruit, almond butter, chia seeds, and of course, maple syrup.

Notes

Store the extra pancakes in the fridge or freezer, or store the batter in the fridge for 1-2 days to make it last for several breakfasts.

    We are total brain twins! because:
    1. I eat oatmeal everyday. Predictable. Delicious. I LOVE IT.
    2. But, yesterday, I made some pancakes and I seriously thought that they would make me not eat oatmeal forever. Forever may be a strong word, but for a long time.
    So, obvi I need to try yours…and there’s peanut butter. <3 Pinned!

    1st: Cute kiddo! I totally didn’t skip.
    2nd: I have ground oats in my Vitamix right now, leftover from a recipe yesterday. I would think it’s a sign, except my little nursling is allergic to eggs and not terribly fond of dairy either. But I’ll be filing this away for the future!
    3rd: I’m digging the whole fruit/almond butter combo lately. I’ve been LOVING it in your Rainbow Salad!

    I am like you I eat oatmeal for breakfast almost every day, but on weekends pancakes and waffles. I love you used wheat flour and rolled oats. Besides adding more fiber, I bet it gives it great flavor. Pinned!!

    I make something almost identical to these, just minus the cottage cheese. It makes me feel so good to eat something so healthy and decadent at the same time. I pour almond butter over mine and whatever fruit we have in the house. YUM!

    I love oats for breakfast too- specially in pancake form! These look amazing!
    I have a question – this recipe has baking soda only – was wondering if I could pick your brain for baking soda vs baking powder vs a combination of the two?

      For this recipe, you could do both – the soda doesn’t really react strongly with anything acidic (that I can think of, at least?) so some baking powder might fluff them up a bit more. I’ve been trying to teach myself more about baking soda and baking powder and when to use one over the other, but it seems like it really varies from recipe to recipe. But I think generally, acid + baking soda will fluff up, and baking powder alone will fluff up, so mix and match and use as you think fits. 🙂

    OK, now I’m just jealous. My pancakes always turn out super ganky, like I’m trying to make some sort of weird shape but just failed.

    Unfortunately, that “weird shape” I was attempting was, you know, a circle. Blast you and your perfectly perfect pancakes, Lindsay!

    Any ideas to substitute the cottage cheese? I’ve been looking all over for a healthy pancake recipe but the cottage cheese is the only downfall in my opinion. Greek yogurt maybe?

      Hi Isabel,

      I used Vanilla Yogurt instead of the Cottage Cheese and added a touch more oats to make up the thickness that the Cottage Cheese would’ve added.

      Just whipped up a batch and can safely say they were delicious.

    Oh yeah! A sneaky way of getting the kids to eat oats. I like it!! You asked for other topping ideas? How about coconut and white chocolate – with the strawberries of course! or some sliced peaches (cooked on the griddle too) with a little honey. ooh ooh and maybe a few crushed pistachios on there for good measure 🙂

    I love protein pancakes. Nothing keeps me full like they do- including nice big bowl of oats. I like that these don’t rely totally on egg whites or protein powders! Yum. My favorite “I don’t want to cook” dinner!

      Protein powder – bleh. I am not a fan. Bjork likes it but I just can’t do it, so mine use a creamy dairy protein instead 🙂 🙂
