Naturally Sweet Dark Chocolate Coconut Bites

Hey my sweet, sweet friends!

I’m talking to the coconut bites, actually. These are my sweetest, most wonderful friends, especially when trying to cut back on the refined sugar sweets and still trying to LOVE LIFE. ♡

But I’m also talking to you, because you’re my sweet friends who love these sweet little coconut bite friends, as evidenced by this post and how much engagement it’s seen over the years. This isn’t exactly a remake of that older recipe, but it’s an update, and I’m super excited that the update today involves moooooore pictures that I love as well as a video.

HOW TO MAKE OUR COCONUT BITES:

If nothing else, you are now going to make the chocolate chocolate chocolate baby mouse hamburger that Bjork demonstrated, right? (Bjork’s Bonus Tip at the end of the video – do not miss.)

Today, since we already did a video to talk to you *almost* IRL, and since I’ve already written a post about this recipe, and since you have no extra time to spare before you get in the kitchen and make these, I’m just going to release you into the wild with the rest of these pictures and recipes.

This recipe uses unsweetened flaked coconut which I usually just buy on Amazon because it ships easily, stores easily, and I have a really hard time finding it in the grocery store for some reason.

This recipe also uses my favorite kitchen tool of all time – the FOOD PROCESSOR. Here’s a post with my 12 Magical Ways to Use A Food Processor! This needs to get added to the list, stat.

Naturally Sweet Dark Chocolate Coconut Bites

Description

These dark chocolate coconut bites are naturally sweet and creamy on the inside and covered with a layer of delicious chocolate!


Ingredients

Scale
  • 2 1/2 cups flaked coconut, unsweetened
  • 1/4 cup + 1 tablespoon coconut oil, melted
  • 1/4 cup honey
  • 1/2 teaspoon vanilla
  • a pinch of sea salt
  • 4 ounces dark chocolate for topping

Instructions

  1. Pulse the coconut in a food processor until sticky crumbs form. Set aside about 1/4 cup of the mixture.
  2. Mix the coconut oil, honey, vanilla, and sea salt. Stir in the coconut from step one. Form the mixture into small balls by squeezing until a ball forms. The mixture will be crumbly, so it doesn’t work to put the mixture in your hands and roll it. You have to squeeze it. There will be a little bit of excess oil – that’s okay.
  3. Once you have the balls rolled, refrigerate for 1 hour or so until they are firm. At this point, if you want, you should be able to take them out and re-roll them to get the shape just right since they’ll be firm and malleable.
  4. Heat a nonstick skillet over medium heat. Add the coconut and shake or stir constantly for a few minutes until the coconut is lightly browned and fragrant.
  5. Melt the chocolate for a minute or so in the microwave. Stir it until it’s smooth. Dip each coconut ball in the chocolate and remove with a fork, letting excess chocolate drip off. Place on a parchment lined baking sheet and top with the toasted coconut from step three. Freeze or refrigerate to set the chocolate. I like these best in the fridge because they are soft enough to eat anytime!

    I was wondering your thoughts on using sweetened coconut? I already have some in the cabinet and I have been trying to use it up… guessing if I reduce the honey it would work out? wondering if the balls would fall apart that way, and if having an extra sweet end product isn’t the worst result.

      I have used sweetened coconut with decent results. They don’t soak up the coconut oil the same way, but it does work! I would just go by feel rather than exact measurements. Use these measurements as a starting point and then adjust as necessary for the stickiness.

    Thanks! This recipe is fantastic. Wouldn’t it be great if coconuts came off the palm encased in a dark chocolate husk? Coconut and chocolate were always meant to be together!

    I’m still not totally convinced about coconut, but I bet my husband would adore these. I’ll have to surprise him with a post-work treat sometime 🙂

    Thanks for the tip about unsweetened coconut! The stuff you usually find is…weird. One of the grocery store chains around here (Publix) carries some Bob’s Red Mill, so I’ll check there.

      Yes! It’s definitely worth finding because when we’re trying to cut out sugar, that regular sweetened coconut that most grocery stores sell isn’t doing us any favors… 🙂 Unsweetened is really nice because you can control the sugar a little more (plus I like it for other stuff too).

    Oh my gosh, I love Bjork’s bonus tip! I want a chocolate chocolate chocolate hamburger right now. Sounds so much like something I would do as a kid. I would never do it now…right? Noooo… 😀 😛

    Also, just so you guys know, I don’t know what’s up, I’ve never had this problem before with you guys, but for some reason on my phone, the movie was cut off at half or a third, depending on how I rotated my phone. I had to go to my desktop to see it properly. It could be my phone, especially since no one else seems to have had this problem. (I have a Nokia Lumia 928 using IE, so definitely not standard user here! ;P ) Anyway, just wanted to let you know. Loved the movie!

        I just made these with the bobs red mill shredded unsweetened coconut. I had the same thought that I could probably skip the processing since it looked like exactly the right size. But the balls didn’t stick at all. After an hour of refrigerating I tried to reshape them and they fell apart. I refrigerated a while longer and then tried dipping them in the chocolate and they fell apart again. I am wondering it the processing helps them to get sticky too. I will try them again and do the processing. Even though the first batch was a total messy failure I can still tell they would be so delish!!

          Bummer, Wendy! Hope they hold together better for you next time. My guess is that the food processor step helps release some oil from the shredded coconut, therefore helping it to stick together better.

          The same thing happened to me when I used the shredded coconut instead of the flaked. So I added 1 tsp of coconut flour and they held together.

    Oh boy! I suddenly find myself with an epic coconut craving. Lucky for me I have coconut tucked away in my pantry (and chocolate too!). These look absolutely divine and I am loving that they don’t have all the sugar that traditional sweets have. Yum!
