Caramelized Beef and Peanut Noodles

WOW YUM.

Lindsay Ostrom headshot.

I saw this video a while back and have not been able to get it out of my head (Chef Anna Frazer with the masterpiece)!

I made it and loved it – only problem is that my kids aren’t huge on tahini (and I rarely have it on hand). So I have been making this same concept, but slightly more shortcut-y, more pantry-aligned for our house, and more kid-friendly for my fam.

And wow, we are loving it.

I am not kidding when I say this might be my favorite ground beef I’ve ever made. It’s caramelized and sticky and I found myself just eating it straight out of the bowl. The ground beef gets tossed with cornstarch to get it crisped, and then you’re adding teriyaki sauce and fresh-grated garlic. When the garlic hits the pan… lights out. It smells so good!

This sounds weird but I’ve brought this home as leftovers a few times and we’ll reheat it in the OVEN?! It caramelizes even a bit further and the edges of the noodles get a bit crispy and it’s so good.

My whole family will go for seconds.

Hope you love it!

Let’s Walk Through Making This Beef with Peanut Noodles

1

Brown the Beef.

Brown it (leave it undisturbed for a bit to get better color) and then add cornstarch for a quick coating!

Browning beef in a skillet with cornstarch.

2

Add Sauce and Garlic to the Beef.

The sauce will cling to all those crisped crevices and becomes caramelized, sticky, just so divine.

3

Saute Veggies!

Just get them nice and tender.

Peppers and spinach sautéed in a pan.

4

Add Cooked Noodles and Sauce.

Everybody in together! Quick toss!

5

Scoop The Beef On the Noodles.

OH MAN. The perfect combination of textures!

Description

Caramelized ground beef atop a tangle of creamy peanut noodles and veggies! The best weeknight dinner!

Ingredients

Units Scale
Caramelized Beef:
  • 1 lb. ground beef
  • 1 tablespoon avocado oil
  • 2 teaspoons cornstarch
  • 1/3 cup teriyaki sauce (I used Bachan’s Original sauce)
  • 1 clove garlic, grated
Creamy Peanut Sauce:
  • 1/3 cup peanut butter
  • 1/3 cup soy sauce
  • 1/4 cup warm water
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1–2 tablespoons sugar
  • 1 tablespoon chili garlic sauce
Noodles:
  • 5 green onions, thinly sliced (green saved for garnish)
  • 2–3 cups sliced stir-fry veggies (I like red bell pepper, spinach, and basil leaves)
  • 6-ounce package stir-fry egg noodles (I use the Wel-Pac chow mein stir fry noodles)
  • Black pepper for serving

Instructions

  1. Peanut Sauce: Blend the sauce until smooth and creamy.
  2. Cook Beef: Heat avocado oil in a pan over high heat; add ground beef and leave undisturbed for several minutes to get some browned spots. Break apart with a wooden spoon into small pieces.
  3. Caramelize the Beef: Add the cornstarch and quickly stir fry for 15-30 seconds. Then add garlic and teriyaki for a minute or so; it will sizzle and start to caramelize, plus it’ll smell amazing. Remove from pan, set aside and cover or place in a 350 degree oven to keep it warm.
  4. Sauté Veggies: In the same pan, sauté the white parts of the green onions and the veggies (adding more oil as needed).
  5. Cook Noodles: Boil noodles for 3 minutes or according to package directions; rinse with cold water to prevent stickiness.
  6. Toss Together: Add cooked noodles and most of the peanut sauce to the veggies in the skillet; toss to combine for 1-2 minutes (you’ll want to serve immediately while it’s still hot and silky).
  7. Finish: Plate noodles; add a scoop of beef on top. Garnish with green onions and lots of black pepper, and drizzle with remaining peanut sauce if you want!

Hi! Just made this tonight and it was a total hit! I did sub tahini instead of peanut butter. Thank you for a fantastic recipe!

Can the egg noodles be substituted for udon noodles? I realize the taste may be a bit different….

  3. Pinch of Yum Logo

Made this today (only changes were adding shredded carrot to the stir fry veg and using 10 oz pack of noodles) and oof, so good! Thank you!!

This was excellent – like all your recipes.
There’s always something on your site for those nights when we’re short on time but not willing to compromise on taste.
The whole family loved it and we fought over the leftovers.

I’m allergic to pepper so I can’t use the chili sauce. Is there something similar I could try that doesn’t have pepper in it?

  6. Pinch of Yum Logo

I can’t find Bachan’s teriyaki sauce, only BBQ. Are they one and the same? Thanks.

  7. Pinch of Yum Logo

Where do you find Bachan’s teriyaki? All I have seen is their BBQ sauces. There’s so many different versions of other bottled teriyaki, some thick, some more watery, I just want to find something close if I can’t find the right one.

I want to try this but concerned about getting the right type of noodle. The photo showing the steps it does not look like this is a dried noodle. Any help?

  9. Pinch of Yum Logo

This sounds delicious, but I have a peanut allergy and a tree nut allergy. Would tahini work as a substitute?

  10. Pinch of Yum Logo

So amazingly good. It has become one of our go-to meals. The meat and sauce are perfect and delicious. Leftovers are great for lunch the next day. Thanks!!!

  11. Pinch of Yum Logo

I can’t count how many times I’ve made this recipe! I throw broccoli in with the noodles and the whole meal comes together in 15 minutes. We are vegetarian and use Beyond Beef or Impossible Beef and it’s perfect!

  12. Pinch of Yum Logo

This was a hit with my hubby and friends last night… easy too! Next time we’ll add some chopped peanuts and some chile crisp on top!

  13. Pinch of Yum Logo

This looks like an amazing recipe – with so many great reviews! Where do you buy the chow mein noodles, and are the stir-fry veggies frozen or in the fresh produce section? Thanks!

  14. Pinch of Yum Logo

I made this tonight with ground beef I had set out for something else. I loved it! Made a few substitutions to use what I had on hand but will def make it again. 💛

  15. Pinch of Yum Logo

With what I can substitute the noodles, I want to make this recipe today and the only thing that I don’t have is the noodles

  16. Pinch of Yum Logo

This is fantastic! Wok does a great job of carmelizing the meat which I feel is super important. There is some prep but if do ahead, dinner comes together so quickly when the actual cooking starts. I use bean threads- soaks up the sauce wonderfully. Thanks for a great recipe.

  17. Pinch of Yum Logo

Looks wonderful! Do you drain the beef before adding the cornstarch? Seems like it would get a little soupy when it releases its water and grease.

  18. Pinch of Yum Logo

I made the caramelized beef with peanut noodles for dinner last night and it was DELISH! I always rate how the meal was by how many servings everyone eats and they all had seconds and thirds – no way to find out how much better the leftovers taste! Can’t wait to make again – maybe even tonight…

This was delicious, however it was too salty for our liking as most asian dishes usually are. But, it didnt stop us from devouring it! Next time I’ll make my own teriyaki sauce so I can control some of the sodium. I will definitely be making again with this adjustment.
