I recently made this crockpot lasagna while reclining in a really comfy chair at a movie theater. Watching Frozen. Which I realized now is really going to date this post. (Cutest movie ever!)

We came home, opened the door, and dinner was ready to go (and smelled AMAZING too). Honestly there was nothing better.

Not only was it easy to make and delicious, but it’s also packed with a lot of amazing feel-good things – as in LOT OF VEGGIES.

I mean, it’s basically a salad! Just layered with lots of carbs and cheese.

This recipe has brought me a lot of joy lately and I hope it does for you too!

Ingredients You Need

There’s just a lot of simplicity here! This is all you need:

  • Marinara sauce
  • Lasagna noodles
  • Ricotta or cottage cheese
  • Veggies (I used kale!)
  • Pesto
  • More cheese! Mozzarella to be specific.

What I love about this is that I typically have *most* of these things on-hand at any given time in my fridge or pantry.

How To Make This Lasagna

I love a crockpot recipe! You do the work on the front-end and then you just get to relax until it’s time to eat.

  1. Prep the Crockpot: Spray the crockpot and layer some sauce on the bottom to avoid sticking.
  2. Layer Ingredients: Start with noodles and then layer everything else up to the top – ricotta, veggies, pesto, sauce, mozzarella.
  3. Cook: Set it to high for 3-4 hours or low for 6-8. Go do something fun!
  4. Rest: Turn it off and let it rest for an hour so it sets better.

Best Veggies For Lasagna

In testing this recipe I primarily used kale, but you could use other veggies that you have on hand! Here are some ideas:

  • Carrots (adds some yummy sweetness)
  • Zucchini
  • Mushrooms
  • Red bell peppers
  • Spinach
  • Eggplant

Description

This skinny Veggie Crockpot Lasagna is packed with good-for-you veggies and super easy to make. Just put it in the crockpot and you’ve got dinner!


Ingredients

Units Scale
  • two 24-ounce jars or cans of marinara sauce (don’t use it all – see notes)
  • 9 thick lasagna noodles with wavy edges (mine were called bronze cut)
  • 24 ounces part-skim ricotta cheese OR cottage cheese
  • 34 cups chopped vegetables of choice (I used kale)
  • Pesto (to taste)
  • 2 cups shredded Mozzarella or Provolone cheese
  • Parmesan cheese for topping
  • fresh parsley for topping

Instructions

  1. Prep The Crockpot: Spray the crockpot with nonstick cooking spray. Spread 1/2 cup tomato sauce to the bottom so the noodles don’t stick.
  2. Layer Ingredients: Break noodles so that they fit and mostly cover the bottom. They will probably be awkward looking – not a big deal. Cover with about one third of the ricotta, veggies, pesto, sauce, cheese, and end with noodles. Repeat layers two more times for a total of three complete layers. End with a layer of noodles on top, covered with a thin layer of sauce and a little bit more shredded cheese.
  3. Cook: Cover and cook on high for 3 hours or on low for 5-6 hours.
  4. Rest: Turn the crockpot off completely and let the lasagna sit for at least one hour. This allows all the moisture to get soaked into the lasagna, and if you don’t do this it will probably be more like lasagna soup – still good, but not pretty. Depending on how long you let it sit, you can either scoop pieces out or just cut with a knife like normal lasagna.

Notes

I didn’t use ALL the sauce in both jars – I probably used a total of 36 ounces (about one and a half jars), and it was really saucy.

    Hi Lindsay! Love the idea for this lasagna! I never care much about pretty when it comes to food either, as long as it tastes good! 😉

    The Rocking Rebel and I went to see the Hobbit last Wednesday, and we saw the trailer for Frozen there. I have to say that it didn’t really look too interesting to me at first glance, but because you liked it so much I guess it must be a fun movie! I do love all the other Disney films. Monsters University is my new favorite!

      The preview that they always show (at least what I’ve seen) is just the snowman with the moose on the ice, which is funny because that clip doesn’t even exist in the movie and those are not at all the main characters or storyline. It’s more of just a cute little tease, I think. I really loved the actual movie, as you can tell. 🙂

      Well, there’s no meat, and less cheese, and it’s a little more messy, but if you let it sit for a while it does hold together just like regular lasagna. And to me, the taste is really just as good! Plus the bonus of kale. 🙂

    Disney animated movies are the best!! I might legally be an adult, but I still watch them in theaters and sing along at home when they come out on DVD. I still have the lyrics to Lion King, The Little Mermaid, Beauty & The Beast, Aladdin (and so many more) memorized… Anyway. Your lasagna — YUM!! You always take such beautifully composed photographs, and I love the warm colors. Makes me wish I could just dive into the pot right now!

          I think that the really thin ones would kind of get lost in there with all those veggies and sauce, so IMO, the thicker the better! Plus they can soak up more of the excess moisture. 🙂 Good luck!
