This just in: we got a Costco membership.

More accurately, we got a Costco membership so we could get a TV.

HOLD THE PHONE I know I know I know. If you’ve been a reader, a) you just got 100 sweet friend points, and b) you already know our TV dilemma.

The dilemma goes something like this –> We wanted to watch the Olympics. And the Superbowl. And the Bachelor Finale. And any movie not on our laptops. But we didn’t have a TV and we didn’t want to buy one.

The backstory to all this is that Bjork grew up without a TV and, maybe as a result or maybe just because? he “turned out” to be so awesome. I really mean that. He is SO awesome. Please gag right now. But honestly, it seems like not having a TV by default must impart some kind of extra creative cool juice into people, and yes to that.

The dilemma continued to get complicated being that we didn’t want a TV, but we actually loved (and still love, presently, now) watching TV. We would watch TV even when we didn’t have one, except we’d just be forced to watch it on our laptops via Netflix since we were too stubborn to actually get a TV.

Plus add in the dimension of inviting people over. You’d think it wouldn’t be a big deal, but it’s somehow a lot easier to invite people over for a movie, a season finale, or a game than to invite them over “to sit and talk”. EVEN THOUGH that’s really our ultimate goal, and usually where the TV watching leads to anyways, it’s just not quite as easy of a invite.

Oh my gosh. We’re weird overthinkers.

In the end, we went to Costco and got a TV. We sold out to the TV lifestyle for the sake of inviting friends over. And for the sake of me watching shows and learning things like how to train my future dog through the genius of The Dog Whisperer. The TV? It’s a little on the big side, it’s sitting right in the middle of our living room, and it has a PS500 or whatever they’re called set up so Bjork can get his video game on. The whole thing is just a major treat.

The funny thing? Since getting it, we’ve watched even less “TV” than we normally do. This is a big relief because like I’ve mentioned several times, we love TV watching… which is why we are probably also in the category of extremely high risk for time-wasting for days in front of big screens. So far, so good. *fist bump* Definitely don’t go giving me any show recommendations because you know when I get hooked, I’mma be long gone.

And while we’re at it with the fist bump, let’s plate bump for this SUPER good lasagna that is thick, cheesy, and laced with delicate sauteed spinach in a creamy ricotta layer.

Sitting in front of the TV while eating a second and a half slice of Skinny Spinach Lasagna? I’m not saying, I just saying.

Description

This Skinny Spinach Lasagna has thick layers of sauce, noodles, ricotta, spinach, and Mozzarella – queue the mouth watering!


Ingredients

Units Scale
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 2 teaspoons minced fresh thyme
  • 6 ounces fresh spinach
  • 2 lbs. ricotta cheese (I used 1 lb. whole milk and 1 lb. nonfat)
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • a squeeze of lemon juice (optional, to taste)
  • 12 no-boil lasagna noodles
  • one 24 ounce jar of spaghetti or marinara sauce (I used Trader Joe’s tomato basil)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Melt the butter in a large skillet over medium heat. Add the garlic and thyme; saute for 2-3 minutes. Add the spinach; saute until just barely wilted, about 2 minutes. Remove from heat.
  2. In a large bowl, combine the ricotta, egg, salt, nutmeg, and a squeeze of lemon juice. Add the spinach and stir to combine. Transfer some of the mixture to a food processor and pulse a few times to break up some of the spinach pieces (totally optional, but makes for a really nice texture).
  3. Preheat the oven to 375 degrees. Spread a little bit of tomato sauce in the bottom of a 9×13 pan. Layer with 3 lasagna noodles, 1/3 of the spinach mixture, 1/4 of the tomato sauce, and 1/4 of the cheese. Repeat and pour 1/2 cup water over the two layers. Repeat once more, ending with noodles, sauce, and cheese. Pour 1/2 cup water over the whole thing again and cover tightly with oiled foil.
  4. Bake for 30-40 minutes; when the liquid is bubbling and the noodles have softened, remove the foil and bake uncovered for 10 more minutes. Let stand for 10-15 minutes before serving so that the lasagna noodles can soak up all the extra moisture.

    My hubby’s work got us a Costco membership a few months ago and we LOVE it!! And it is totally possible to own a TV without it taking over your life so you two awesome people are going to be just fine 😉

    We’re not big TV watchers either, even though we have a massive TV hogging up our living room. That said, we’re making our way through Breaking Bad right now (SO good!) and are fans of House of Cards too. Oh and Scandal! Okay maybe we watch more TV than I thought.. 😉

    Love our Costco membership! We aren’t big tv watchers…except for some Food network shows. “Chopped” has my heart. We are just finishing Breaking Bad on Netflix…SO GOOD. But, for some reason, I think you watched that already. If I remember correctly.

    Downton Abbey is one of my favorites, as is The Walking Dead and Game of Thrones. Do you watch Orange is the New Black on Netflix? That’s an awesome series too. It’s fairly new and I don’t believe the second season has been released yet. I don’t watch a lot of TV myself, though I do sit down with hubby each night for a couple hours in front of the “boob tube” 🙂 There are a few other shows that I like: Bates Motel, American Horror Story, Parenthood and Mad Men 🙂 Great looking lasagna!

      I own ALL 7 seasons of The West Wing. I used to watch it over and over and over !! When you are finished with that make SURE you get ” The Newsroom’ . IT was on HBO. Only 3 seasons but it was written and produced by the genius Aaron Sorkin who also wrote The West Wing. Watching that AND having this delicious lasagna ??? Priceless !

        Any suggestions on freezing the ladagna? I generally freeze before baking, defrost, and then bake but the water gave me pause. Should I add the full amount of water right before baking? Thanks!

    I am not a huge TV watcher at all, but the hubby is! I do not think he would know what to do without it – so sad.

    Just give me three hours a week to watch The Walking Dead, The Following, and The Good Wife. That’s it.

    By the way, Lindsay … this looks awesome and looks like it is weight watchers friendly, only 7 points – yum!

    I have to wait for weekend until I am able to watch Television. I simply have no ability to sit down during the week to have patience for television any more. I have been in right mood for TV.

    I totally hear you about the TV. I didn’t have a TV for 10 years before I met my husband. I liked being forced to figure out something else to do instead of plopping in front of the TV.

    Costco is totally worth the membership for the produce and meat prices. We go through an incredible amount of produce!

    Congratulations on the big purchase! As someone who also didn’t have a TV for a really long time, I know how exciting it can be 🙂 I still don’t watch a ton of it, though, so I don’t have many show recommendations except the cliche ones — Downton Abbey, etc.

    Thanks for the recipe! I love lasagna so much but always feel guilty making my recipe (even though I pack it with veggies and homemade pasta, there’s still this residual cheese guilt). This looks incredible!

    My husband hogs our TV. I work from home at night, so honestly once every few weeks we have a Tosh.O marathon. I await Mad Men’s return. Love that show. Once I started blogging four years ago, I’ve watched TV less and less.

    I read at night and work. I don’t know half of the shows on. I’m okay with that. 🙂

    But Costco will be epic for you guys, given the amount of food you buy. Ours here in Chicago has Kerrygold butter, which, if you haven’t used, will change your life. Our Costco stopped carrying coconut oil, and I wanted to cry right there in the aisle.

    I think I may have. A Little. The internet’s pricing on coconut was like double compared to Costco, and we go through a lot of that here…

    That being said, if you find something you love there, stock up!

    Happy TV-ing!! I actually love to use my TV for the music channels or to play Pandora stations when I have people over. It’s a pretty easy switchover after whatever TV show we’re watching has ended, and always ends with more food and long chats 🙂
