I am a lover of ice cream, and I am also, as of recently, a very obsessed lover of peanut butter cup nice cream. Wait, I take it back – FIVE INGREDIENT peanut butter cup nice cream. Is nice cream not the cutest name for this little cousin of everyone’s summer favorite? I scream, you scream, the whole internet including the non-vegans scream for NICE CREEEEAM!
You know how we just got back from a week up at the cabin?
Let me show you a picture of what we mostly did during our seven days at the lake:
There it is. Our beloved, our friendly-for-everyone, our creamy meets naturally sweet meets real food, our peanut butter cup loaded nice cream.
So, nice cream. So, super cute! So, what is it?
I like to think of it as ICE CREAM, but just a special kind of ice cream made for our friends who are either vegan or lactose intolerant or health conscious. It’s just NICE. Easy. Accessible. Friendly to all types of eaters, including everything-tarians like myself who occasionally go vegan for a minute.
When it comes to recipes I actually make, which is basically my mission statement for this blog — is this a recipe that people would actually make? — I am actually probably more likely to make nice cream than I am to make ice cream, even though I eat a lot of ice cream, but just because of how super simple it is to make nice cream. Nice cream, er, well, MY version of nice cream, is made with literally just mostly bananas. Hard to argue with that, right?
Also you’re going to want to toss in a little splash of almond milk (bonus if it’s the new Almond Breeze Almondmilk Coconutmilk blend which is on point in the taste department) to keep things running smoothly in the blender, and then also a little bit of fat is necessary to keep it creamy, so I’d recommend some coconut oil whisked with some cocoa powder to make a sort of chocolate fudge situation that is next level legit.
Be sure to add a pinch of salt, because peanut butter cups? bananas? chocolate? what would this all be without a surprising little salty bite of contrast? And also, the peanut butter cups. I have a thing for chunks in my nice cream and I cannot be stopped when peanut butter cups get thrown into this mix.
TRY TO STOP, I dare you.
We blasted our way through so many peanut butter cup nice cream cones at the cabin this week, it was just borderline inappropriate. At any given moment, there was a 98% that I would have chocolate remnants on the corners of my mouth or dripped down the front of my shirt. Or white shorts. I mean, honestly, WHAT IS IT WITH THE WHITE SHORTS.
You know the moment after a big summer-y dinner consisting of mostly chips and garden salsa and little veggies and basil leaves wrapped in massive hunks of fresh mozzarella cheese, and maybe a few watermelon smoothies, and you’re sitting around and it feels like you should having some kind of treat but you’re actually so full of other good/bad food that you just don’t even know what part of the fridge/freezer to turn to?
You turn to this, that’s what you do.
Because just as a healthy, happy reminder: it’s mostly bananas. It might be overloaded with peanut butter cups too, but no. It’s mostly bananas, and it’s creamy, and it’s delicious, and it’s peanut butter cup NICE CREAM and we love it.

Print5 Ingredient Peanut Butter Cup Nice Cream
- Total Time: 15 minutes
- Yield: 3–4 servings 1x
Description
AWESOME 5 Ingredient Nice Cream! made with just bananas, almond milk, coconut oil, cocoa powder, and peanut butter cups. Vegan, dairy free, YUM!
Ingredients
- 3 bananas, cut into rounds
- 1/2 cup Almond Breeze Almondmilk Coconutmilk blend
- 1/4 cup cocoa powder
- 1/4 cup coconut oil, melted
- salt to taste
- peanut butter cups, chopped up
Instructions
- Whisk the cocoa powder with the coconut oil. Blend the bananas, almond milk, cocoa mixture, and a pinch of salt until very smooth. Stir in the peanut butter cups and transfer to a 9×5 loaf pan.
- Cover and freeze until solid.
- Just before serving, microwave for 30 seconds to 1 minute to soften. Scoop out and serve!

ever since nice cream came along my vitamix has been in use 99.4% of the summer. <3 Love the tip about adding coconut oil to keep it creamy 🙂 gonna try that!!

This looks so easy and fantastically delicious. We’re out of peanut butter cups at the moment (shocking, I know), but somehow I don’t think we’d go too far wrong subbing in some brownie bites. 🙂

Looks delicious! What vegan peanut butter cups did you use? I’ve recently had to stop having dairy but think most pb cups have milk chocolate… so they’re kind of a no no these days.

This looks so yummy! However, in addition to being lactose intolerant, I am also allergic to nuts. Would another dairy-free milk like soy work, or does it have to be almond?
You could definitely do soy milk!

If you have no patience at all (guilty as charged), you can also make this with frozen bananas. I just did that and it turned out perfect. So good!

POY has become a staple in our home. We seriously love 99% of the recipes! Unfortunately, this one was a little bit of a let down. Ice cream and I do not get along, so I was eager to give this a try. It looked so good, but the texture was very banana-centric and the taste cocoa forward, which left it lacking the sweetness ice cream offers. Would adding some kind of sweetener (beyond banana) help? The PB cups didn’t do the trick!
You could definitely give it a shot! I’d recommend adding agave for sweetness.
