Buffalo Chicken Burgers with Whipped Feta Spread

These Buffalo Chicken Burgers Are Hitting Just Right.

Lindsay Ostrom headshot.

Everyone at the office ate A FULL BURGER for lunch last week. Normally our shoot days involve a bite here, a bite there. But these guys went down fast and furious and with a lot of vocal appreciation.

Bjork mentioned how much he liked them at least 7 times. I went back for seconds. So maybe buffalo chicken burgers are my new favorite meal?

The flavor is SO GOOD – you brush them with butter at the end, add the tang of the whipped feta spread, pile some cooling lettuce on there and tuck it into a toasted brioche bun? Game over.

Can we also take a moment to just appreciate that they’re so easy to make? If you pick up a store-bought feta spread, like the new whipped feta one from Trader Joe’s, it’s even faster.

These go perfectly with a Simple Green Salad, or sheet pan Sweet Potato Fries, or Liz’s Roasted Broccoli! But also, they go perfectly in your hand with no plate and no frills as pictured above.

I hope you love them!

Description

Easy and amazing buffalo chicken burgers! Piled high with crisp lettuce, a whipped feta spread, sitting atop of toasted brioche bun.

Ingredients

Units Scale

Buffalo Chicken Burgers

  • 1 lb. ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/3 cup hot sauce (I used Frank’s Red Hot)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Whipped Feta Spread

  • 6 ounces feta cheese (block or crumbles)
  • 4 ounces cream cheese
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons water

Extra Stuff

  • 2 tablespoons melted butter + 2 tablespoons hot sauce for brushing
  • Buns
  • Lettuce

Instructions

  1. Make the Whipped Feta: Blend all the ingredients together in a small food processor until it incorporates into a thick and spreadable texture with flecks of feta.
  2. Mix the Burgers: In a medium bowl, mix the burger ingredients together. Form into 4-5 patties.
  3. Cook the Burgers: Heat a small bit of oil in a large nonstick skillet over medium high heat. Add burgers and cook for 3-4 minutes per side, until golden brown and the inside of the burgers is fully cooked (165 degrees).
  4. Brush with Butter: As the burgers are finishing cooking, brush the outside with the melted butter and hot sauce mixture.
  5. Finish: Arrange your burgers on buns with lettuce and a shmear of the whipped feta. SO GOOD.

Questions You Might Have About These Buffalo Chicken Burgers

How spicy are these?

Not too spicy! For a milder version, use 1/4 cup (or less) of buffalo sauce. (The level of heat will also depend on the type of sauce – I use Frank’s Red Hot). My kids will eat these with some ranch dressing.

Can you freeze these?

Yes, you can freeze them! To freeze before cooking, place the formed patties on a parchment-lined baking sheet and freeze them for 6-8 hours – this ensures they won’t stick together. Then put them in an airtight container and you’re good to go. To freeze after cooking, just place in an airtight container once they’ve cooled. For best results, when you’re ready to cook them, I would suggest thawing them overnight in the fridge.

How do you make these dairy free?

I would use a different spread in place of the feta spread – such as a plant based tzatziki, mayo, or an avocado spread!

How would you make these vegetarian?

I would use a veg protein base instead of chicken, like TVP – example of how it’s done in this recipe.

How would you make these gluten free?

Use gluten free buns, and gluten free panko. Also, ensure that your hot sauce is gluten free.

These are fantastic. I have been making them at least twice a month since I first saw your recipe. My husband loooooves them. We air fry them at 390 for 12 minutes. Perfection.

  2. Pinch of Yum Logo

These were just ok for my family. The texture of the patty was kinda mushy and they needed more flavor. I love a lot of your other recipes, this one just didn’t do it for us.

  3. Pinch of Yum Logo

This recipe was so simple and so flavorful… I loved it! It will definitely be in my rotation. I did cheat and buy the Trader Joe’s whipped feta dip and it was great. Your recipes never disappoint!

  4. Pinch of Yum Logo

Love this recipe. Has become a regular in my dinner rotation. Everyone love it.

  5. Pinch of Yum Logo

Exceeded expectations! Yay for a recipe the entire family will eat (at least in some form or another:/)–and quick to prepare. Served with miso garlic potato wedges. Yum!!

  6. Pinch of Yum Logo

Made this tonight and followed someone directions (in the comments) for the air fryer. They were so simple to put together and very tasty. I didn’t have yogurt, so I added a little cottage cheese and it blended up fine. Will definitely make this recipe again. Thank you.

  7. Pinch of Yum Logo

Made exactly as written and they were delicious! Super easy! This is from someone who has never eaten a chicken burger in her life. The feta subbed for the blue cheese beautifully. Hubby ate two. Will make again.

  8. Pinch of Yum Logo

These are phenomenal. I used Primal Kitchen Buffalo sauce instead of Frank’s because that is what I had on hand. Baked the chicken in the oven at 425 for 20 min (flipping half way) and used the Trader Joe’s whipped feta dip. Can’t wait to make my next recipe from you.

  9. Pinch of Yum Logo

Wow! They taste amazing and are incredibly quick. My husband loooooved them so much. Don’t skip the whipped feta, it is a great compliment to the burger!

  10. Pinch of Yum Logo

Unintended improvement!! I was low on Panko so I had to get creative. I added in some crispy fried onion rings crunched up to make up the difference. These are salty so no need to add more salt. Then because my sweet husband doesn’t like feta ( I know, right!) so I used a nice blue cheese salad dressing. But for fun I added finely chopped green onion and very finely chopped celery (cause celery is classic with buffalo sauce) and mixed into the dressing. I spread that on the buns and yep. It was all great. Obviously the crunchy onion rings add more fat but they were tasty

Can these be cooked in the airfryer? If so, at what temperature and for how long? Thanks!

  12. Pinch of Yum Logo

I’ve made this for our family and for company multiple times – it’s a hit with all! Trader Joe’s just started to sell a whipped feta spread, which makes it even easier as a shortcut.

  13. Pinch of Yum Logo

These are so good and going into my monthly rotation! I’m surprised how juicy the chicken burgers are. The sauce is delicious. This recipe got rave reviews from my family!

  14. Pinch of Yum Logo

These are a regular rotation at our home. Sub same amount of BBQ sauce to make it kid friendly! So easy. Always use the air fryer for ease.

  15. Pinch of Yum Logo

This was the first recipe I made for my boyfriend and we’ve been dating for over a year now. Coincidence? I think not! SO. GOOD.

  16. Pinch of Yum Logo

Another great meal by pinch of yum! So glad I doubled the meat so we have leftovers. We served it with a side salad. The whipped feta was excellent and was also delicious on toast with a runny egg the next morning.

  17. Pinch of Yum Logo

Just finished making these for lunch and they were really good! Super easy. Definitely making again. Thank you!

  18. Pinch of Yum Logo

Sadly, my family hates most cheeses (they’re heathens!) particularly ones with a stronger flavor profile like feta/goat/blue cheese. What do you suggest that might keep the spirit of the feta spread, but have a blander flavor? Everyone likes ranch, but it seems like a cop-out to just smear some ranch dressing on a bun (although they’d probably be perfectly happy with that)! Thanks!

  19. Pinch of Yum Logo

This was just ok. I felt the whipped feta needed something extra so added salt, pepper & garlic powder. The flavor of the burgers was decent however they were very wet and wanted to fall apart. Don’t know I will make this again.

  20. Pinch of Yum Logo

My family loved these – even my toddler! We used a bit less hot sauce in the burgers and added extra on top for the grownups and it worked great. The leftovers were also so, so good on a loaded up salad the next day!

  21. Pinch of Yum Logo

I am not a big chicken fan but I thought my husband and son would really like these so I tried them out. Not only did they like them and asked for them in our meal rotation but I thought they were delicious as well! A big win all around. 🙂
