So maybe I went ahead and jumped a little too fast on summer.
April? I could have sworn it was, like, July or something.
After a stretch of 70 degree sunny days here in Minnesota, reality came crashing in on us and right now I am literally writing this post about Frosted Blueberry Lemonade (summer! WANT SO BAD) with doors and windows tightly closed to keep out the 35 degree sleet. Please no snow, please no snow, please no snow.
I am burrowing deep into my thickest Forever 21 grandma-style sweater and I have the heat set to 73 degrees because that’s as high as the More Responsible Spouse will let me go. The forecast is not looking much better for the rest of the week, and I feel the ultimate sad face emoji coming on – the one with the crinkled eyebrows and mouth wide open, crying out in distress.
It has come to this.
(also: a favorite thing of mine right now is identifying my real life emotions in real life conversations by describing myself as an emoji. Bjork loves me so much.)
All that to say, I need the warmth and I need it n-o-w. And in case of emergency where Minnesota April plays summer-teasing tricks of me and there is actually no warmth to be found, I will accept things with just those warm weather vibes.
And that’s why I’m sharing this Frosted Blueberry Lemonade today. Warm weather vibes, my friends. WWV.
If I really embrace all that the WWV of the Frosted Blueberry Lemonade have to offer, I can basically create a beach party in my kitchen right now: sweaters and frosted blueberry lemonades and Spotify Top Pop Hits and Sage snoring in the other room. You know you wanna be here.
As you might remember from this Coconut Green Smoothie post a few weeks back, we are big fans of Bai5 around here – we buy ours at Target and it has become a regular item on our grocery list.
We like Bai5 for a few reasons, one of which is that they use the outer part of the coffee fruit (!) to make these yummy drinks so you get a tiny boost of caffeine – similar to the amount in a cup of green tea – and you also get the natural antioxidants from the coffee fruit infused into the drinks. Also likable: the drinks are sweetened naturally with organic stevia.
For us, Bai5 is a great alternative to juice or pop for just a regular drinking drink, plus it works well for mixed or special occasion drinks, and best of all –> it has become an essential in our daily smoothies.
You’ve tried it already, right? I know many of you have – it’s been so fun to hear from you as you try all their new flavors. YUHHHMMMMS.
You guys, just make a Frosted Blueberry Lemonade already.
I know I’m not the only one who needs summer to come, like, five months ago.
Frosted Blueberry Lemonade
- Total Time: 10 minutes
- Yield: 2 1x
Description
Frosted Blueberry Lemonade – made with just two main ingredients. Super healthy, refreshing, and ready in seconds! So good.
Ingredients
- 1 1/2 cups Bai5 Limu Lemon
- 2 cups frozen blueberries
- juice and zest of 1 lemon
- 2 teaspoons light agave nectar
- a handful of fresh mint (optional)
- 1/4 cup yogurt (optional)
Instructions
- Soften the blueberries in the microwave for 30 seconds or just leave them sitting out at room temperature for 20 minutes or so. They should still be partially frozen but soft enough to easily blend.
- Blend the blueberries, Bai5 Limu Lemon, lemon juice and zest, agave nectar, mint leaves, and yogurt together until smooth.
- Serve immediately topped with a few fresh mint sprigs. If you can’t serve immediately, just be sure to stir or shake the frosted blueberry lemonade before serving because it will separate as it rests.
Notes
The lemon juice and zest bumps up the flavor. The agave offsets the tang of the fresh lemon juice. And the yogurt just gives the whole thing a little more bulk and creaminess – making it feel less like a slushie and more like a creamy smoothie. And the mint – just, YUM.
All of those things would be optional, though, so mix and/or match and/or find some yummy add-ins that you might like!

I don’t have a nutrition label for this one because it includes a product that is not yet in our database (the Bai5 Limu Lemon) but this blueberry lemonade has really minimal calories since the base of the drink (Bai5) has only 5 calories per serving.

I am so sorry it’s sleeting there. That just seems unnecessarily cruel. It’s gloomy here today, but just rain, and that’s more than enough to make me pout. But sleet? Couldn’t handle it. Also, 72 is the highest I’m allowed to put our heat – I’m glad to hear I’m not the only one who cranks it way up there! I haven’t tried the lemonade Bai5 yet but I can’t wait to try it. This smoothie looks divine! I love that you added mint in there. Mint and lemon together are so fresh!

Yes! Head to Target and try it! We love it for smoothies of all kinds. Also Bjork really likes “sweet drinks” like pop and juice, so this is a great alternative to the full sugar stuff.

Ugh, completely understand wanting summer to come. I was fooled by the warm weather this week too, and now they’re calling for more snow this weekend. Blah. Really hope the weatherman is wrong and the snow is finished. Rain I can deal with in April, snow is always so disappointing! Agreed! Glad to find a fellow Bai lover! In addition to loving them in smoothies, I drank a bunch of them when I was sick (needed mooooore liquids) and felt a lot better about that than what would have otherwise been full sugar Gatorade or diet Sprite. Thanks for the comment Sam!

I haven’t had any luck finding the Bai5 ever since I saw it on your other smoothie recipe. This just looked so amazing that I found and ordered the Limu Lemon on Amazon. Can’t wait to try this drink this weekend!!

And in El Paso we’ve been in the low 80s, with strong winds, though. The smoothie sounds delicious, but I’m wondering if there is a substitute you can suggest for the Bai5 Limu Lemon? That is something that is not available around here, or if it is, I am not aware of it. But I love the idea of blueberry lemonade. Hope it warms up in MN soon!
Hey Susan! I would encourage you to check out the Bai5 site to see where you might be able to buy it – like I said, we get ours at Target! It’s essentially like a lemonade, so if you had a lemonade-type drink, you could use that instead, but we really love Bai for this smoothie and others as well! Thanks, Lindsay, I checked it out. Apparently Walgreens carries it here (I was kind of surprised to see that Target wasn’t on the list, but that’s what happens when you live in a weird area. We’re right on the border with Mexico and our population is about 80% hispanic, so we don’t have a lot of products you can find most places.)
Checked the stores on my side of town and they none of them carry the lemonade. I’ll figure something out.
I love Bai 5! They were at the International Food Bloggers Conference I went to a couple of years ago and I got an entire sample pack from them of all their flavors. It was…amazing! Also, I’m in Tampa, FL so we have summer pretty much 11 months of the year. I would like some cooler weather – 75* seems about right. Would bring us down by about 20 degrees, haha.
