I just made these and they are AMAZING! I didn’t expect them to taste so good with the chickpeas, but they did! These might just be the best cookies I’ve made, definitely making these again! The fact that they’re healthy, just makes me like them even more!
P.S. Everyone in my house loved them too, they’re almost gone!
Today I found out that Johnnie from AT&T is my iPhone guardian angel.
The discovery all started with my annual swimsuit purchase from Marshall’s. I don’t know what that says about me, because:
- Marshall’s swimsuits have the potential to fit awkwardly,
- I certainly don’t need a swimsuit every year,
- I certainly don’t need a swimsuit this year because we’re not going on vacation.
Yet every year I seem to be able to find one suit I like, that fits, that I can afford, and today was no different.
But somewhere between my parking spot and the highway, I realized that I didn’t have my wallet. Like, my brand-new-iPhone-credit-card-driver’s-license wallet. After inspecting under every car in the parking lot, harassing the Marshall’s cashier, and being removed from behind the cashier counter for attempting to use the cashier-only phone, they finally came to their senses and let me use the cashier-only phone on the customer side of the counter.

With customers checking out on either side of me, a Marshall’s cashier rolling her eyes at me, and a chocolate bunny display inches from my face, I called Bjork. He used his fancy computer thingamajig to locate my phone, and it was bad news. My iPhone was showing up on the map, but almost a mile away.
I’m not sure if you’ve ever lost an iPhone, but I imagine it feels something like losing a wedding ring, which miraculously I have not done yet. Emotions run even higher when the iPhone is not just lost, but stolen, and driving further away from you every second that you spend on the phone at Marshall’s.
Get in my car and chase the person down?
Call the police?
Curl up in a hole and die?
Enter Johnnie from AT&T. Johnnie, in his supercool iPhone guardian angel sort of way, called Bjork and said, “Hey, I found this phone in the parking lot at Marshall’s. I have it at the AT&T store. Come get it whenever.”
There were a few tears of joy shed in front of the chocolate bunny display at Marshall’s. Which is a small price to pay for such a happy ending.

Oh, right. Healthy cookie dough. Let’s talk.
Sometimes you just need to eat cookie dough straight up. Washed down with more cookie dough, and then just one more bite of cookie dough. This is for those times.
This cookie dough is soft, peanutbuttery, brownsugary, vanillaey, and delicious in the most wonderful cookie doughy way, but {gasp} it’s healthy! Healthy cookie dough? Yeah. Chickpeas are blended into the dough for the same texture without all the butter.
Please oh please. Don’t get me wrong. I love butter. But sometimes you need to eat a whole bowl of cookie dough in one sitting. And for that reason, I give you this recipe.
Now go.

Healthy Chocolate Chip Peanut Butter Cookie Dough
- Total Time: 20 minutes
- Yield: 6 1x
Description
This chocolate chip peanut butter healthy cookie dough is just that – healthier! And so good. Made with chickpeas in place of all the butter.
Ingredients
- 1/2 cup packed brown sugar
- 1/4 cup soft tub light margarine or butter (I used Brummel and Brown yogurt spread)
- 1 tablespoon egg whites (can omit if not baking)
- 1 teaspoon vanilla
- 2/3 cup chickpeas, drained and rinsed
- 1/4 cup peanut butter
- 2/3 cup flour (whole wheat or regular)
- 1/4 cup rolled oats
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup dark, milk, or semisweet chocolate chips
Instructions
- In a large bowl, beat the brown sugar and margarine together. Add the chickpeas, egg whites and vanilla. Beat until smooth (see notes). Stir in peanut butter.
- Add flour, oats, baking soda, and salt to the bowl and mix again until a soft dough forms.
- Eat, refrigerate, or freeze the dough. If you want cookies, bake at 350 for 7-10 minutes, until just slightly set. Do not overbake. Makes 12-15 cookies/cookie dough balls.
Notes
My mixer wasn’t quite strong enough to do the trick (plus there were chickpeas flying everywhere) so I switched over to the food processor to get the chickpeas blended. Then I transferred the mixture back to the mixing bowl.
The cookies won’t flatten out much during baking, so if you want a flatter cookie, you should press the tops down before baking.

Bottom line: Johnnie from AT&T, you rock.
I think I’ll celebrate with 27 cookies.

I made these this morning, and they are great! The texture is really nice, and there is just enough sweetness. I used real butter, since that’s what I had, but otherwise didn’t change anything. I baked them for 11 min. and flattened them out a little before putting them in the oven. If I didn’t know there were beans in them, I would not have been able to tell from the taste. Great recipe!
Thanks Lisa!
Thank you for your healthy chocolate chip cookie recipe. Please don’t ever compair losing a child to losing your I phone. May you never understand how much it hurts to loose a child, but comments that may be humorous to you hurt so much to those of us who have lost a child. Thank you.
S, I am so sorry for your experience and I apologize for my insensitive joke. Thank you for mentioning it – I changed the post to be more appropriate.
Love it š If I were to leave out the peanut butter, would I need to replace it with something similar (maybe another egg) or would the dough still hold together well enough with the egg whites?
I think you could omit if you weren’t going to bake them. Do you do almond butter? That might be another good substitution if you were planning to bake. You could always just use more mashed chickpeas or some other similar texture ingredient with a little fat in it to keep them moist and held together. š
You can also use alvocado instead of beans!
These sound really good! Can’t wait to try them! I do have a quick question please regarding the nutritional facts. How many cookies are in a serving? I see you listed 15 servings per recipe but how many cookies per serving? Thanks fir your help! Love your blog!
One cookie! Or 1 cookie dough ball. š
These cookies look amazing! And the fact that they’re healtier than the usual ones just gives me the impression that im gonna be making them soon š Great recipe! And great news for Your iphone! Fjew!
Wow, these look great!!! Now, whats the break down on calories by the spoonfull? haha! Totally kidding…..kind of. Glad you got your phone!
Thanks Desiree! I’ll leave the calorie breakdown to you. š
I have made cookies with chickpeas before and I can’t wait to try this recipe, too!
Wow…these are actually SO healthy š wow that’s great! I didn’t know you could use chickpeas in cookies hehe thanks for sharing!
I didn’t either – until now! š
Thanks so much for your healthy recipes! You have no idea how much you’ve helped me. š
Aw, thanks! Glad you’re liking them!
I just made these and they are AMAZING! I didn’t expect them to taste so good with the chickpeas, but they did! These might just be the best cookies I’ve made, definitely making these again! The fact that they’re healthy, just makes me like them even more!

Awesome! So glad you liked them Janet.
I’ve heard of this new chickpea cookie dough craze! Do you read the blog Chocolate Covered Katie? She makes the most interesting and delicious looking healthy desserts… most of them look downright decadent too!
I have seen her blog and I’ve actually made her Chocolate Pie with the tofu. Yum!
I’m sorry to hear about your iPhone experience but it has a happy ending. It’s amazing how there are still some good samaritans out there! Oh and I’ll be honest with you – if it wasn’t some AT&T guy who picked up your phone, I would’ve gone after the phone and chased that person down!
Next time I’ll be ready to hop in the car and go get it back! This time.. I was a weepy mess. š
I absolutely hate that stomach dropping feeling that comes the moment you realize something big is lost or wrong. So glad this ended well…and with cookie dough š I added black beans to brownies not too long ago and have been wanting to try a cookie with chickpeas ever since!
Ah! Did you like the brownies? They sound scary but awesome… Kind of like these cookies š
I’m super intrigued. My kids can’t get enough raw cookie dough and mean ol’ mom only lets them have a couple bites. Maybe I’ll trick them with this š
If I had kids, I’d only allow them one bite so I could keep the rest to myself. š
This would be great stirred into a bowl of vanilla ice cream while watching a chick flick. (Hello, spring break!)
Good call! I love that idea!
I am impressed both by Johnnie and by this insanely good looking recipe. Win-win.
Woohoo, a healthy chocolate chip cookie dough recipe! I too love the idea of being able to sit and eat a whole batch of dough without worrying about my butt instantly growing twelve sizes. I love the idea of adding a can of chickpeas to the mix too, in order to up the protein. Can you detect a bean taste at all? Not that it would bug me since I really like chickpeas. Just not sure it would go over well with the Hubs.
My husband was slightly weirded out at first but after it sat in the fridge for a few hours he was snacking on it like crazy. I actually liked it better right away (not chilled) and we both also liked it baked! So many options! š
I made it, yay! Do we really need the baking soda if not baking? Because I left it out and it turned out perfectly fine. I’m going to make these as little nests for Easter time. Thanks a bunch for the recipe. It’s delicious! š
No, i think you can omit if you’re not baking. I don’t think baking soda adds a whole lot of flavor š
Ahh, just saw this comment about the chickpea taste. Glad to know it doesn’t cause a change in the flavor š
I came back to say that this does not taste like chickpeas, in case anyone was worried about that. š
Ha! Thanks Erin!
Oh, wow. Don’t you love that feeling of relief when it all works out ok? This cookie dough will be happening soon. I’ll celebrate with you!
Oh my gosh. I cried. I mean, really. I cried right in the middle of Marshalls. Tears of joy, thankfully!!
This recipe looks delicious. Wonderful pictures.
Thanks! It was easy to photograph… cookie dough loves the camera. š
Omigosh I was almost having a panic attack just reading! Thank goodness for nice people. And this cookie dough looks amazingg. Yummers.
Thank goodness indeed.
You’re so lucky that you got your phone back!
I have to make this. I’m so excited. It’s looks amazing in dough and cookie form! Ugh. I wish it weren’t so late and that I didn’t have to soak chickpeas before cooking them. I need this in my life.
Do you ever use canned chickpeas? They’d be a faster alternative! And if not, it wouldn’t be all bad to just make regular cookie dough instead. š
Thanks a bunch for the suggestion! Chickpeas are new to me and I didn’t even know you can buy them canned. I’m going to pick some up on my way home and make this for my husband’s 30th birthday tomorrow. Only I’m not going to tell him it’s healthy. š
So glad you found your phone! I’d celebrate with a full batch of this cookie dough:-)
