And we’re back! With What I Ate Wednesdays! By popular demand!
And by popular demand, I mean one person (my sister) casually told me she liked the What I Ate Wednesday posts.
Here’s the thing about me in real life: I LOVE to talk to people about what they eat in a day. If you were sitting in front of me, I’d ask you so many questions, but not the big project recipes you have pinned, or the beautiful meal prep you put on Instagram. I’d ask you, like, actually, in real, unfiltered life, what do you eat in a day? (You can answer me in the comments if you’re into this conversation as much as I am.)
Food is just so fascinating.
Here’s my WIAW!
Breakfast
Leftover roasted sweet potatoes, remnants of an almost-too-ripe avocado, and a fried egg.
Also: coffee with cream.
Also (unpictured, and yes I was really hungry okay): banana with almond butter.
Snack
These chips from ALDI are life. Why are they so good? I could (pretty much have) eaten an entire bag in one sitting.
Paired with What’s Gaby Cookin salsa verde. Yumtown.
Lunch
Hawaiian Chicken Tacos (pineapple, jalapeno, etc.) just completely smothered with homemade jalapeno ranch.
Even better when eaten on the floor of Solvi’s playroom, obviously.

Snack Again
Some days just require a sweet afternoon something. And this was one of those days.
Enter: a fresh batch of my fave chocolate chip cookies, of which I ate a small (hahaha) nub of dough. And even though I accidentally overbaked the cookies I was still able to get that sink-your-teeth-into-the-center-of-an-underbaked-cookie moment that I was going for.
Dinner
AKA Clean Out The Fridge Curry.
Tofu, carrots, and spinach in a very basic sauce of coconut milk and red curry paste, plus a handful of cilantro, shot of soy sauce, and sprinkle of brown sugar.
Over rice.
Basically just a mix-and-match version of this curry. So good.
Bonus: great leftovers.

Well, today I ate half a sleeve of arrowroot cookies !! But, I also made a “kitchen sink” potato soup, not the creamy kind, just a chicken broth, potatoes, a lot of fresh frozen, chopped parsley, celery,ham, lentils, rice corn, onions, garlic, s+p. Couldn’t find more veg that hubby would like. It needed something when I tasted it & I couldn’t find my dry dill, so I poured in some garlic dill pickle juice. It was good. I am a soup fanatic, so I’d give it about 6/10. Oh, today I also ate 2 toasted p.b.+j sandwiches on toasted rye bread. And about 10 Cadbury mini choc Easter eggs. No, I am not proud of my WIAW !!😊😊

Yesterday I ate; an egg white wrap with turkey sausage for breakfast, a protein shake for snack, a deconstructed turkey burger with lettuce wraps for lunch, applesauce with granola mixed in for second snack and then shrimp tacos for dinner. Yummy.
So far today, I have only had coffee. BUT, last night we had your Crockpot Carnitas. OMG. I might eat leftovers for breakfast. They were SO good. To go with them, I made a red and green cabbage slaw that I tossed in a dressing made with Herdez Guacamole Salsa and some vinegar. I also did some quick black beans. It was seriously delicious. BTW, I love sweet potatoes and eggs for breakfast!
Carnitas for breakfast sounds like something I can support.
Yesterday for breakfast I had a green smoothie (kale, pineapple, ginger, lemon and green apple with a scoop of collagen powder) plus a trader joe’s trail mix packet. Lunch was leftover steel head trout with a grilled salsa served cold over it (pineapple, red onion, red and orange peppers, jalapeno). Dinner was a clean out the fridge stir fry (chicken, peppers, onion, asparagus, zuchini) with a mix of soy, chili sauce and sesame oil. My snacks were s’pose to be oui strawberry yogurt and some watermelon but I didn’t have time to eat them.
I love getting a peek at what others eat and I’m super impressed with your eats considering you have a little babe! My WIAW:
Breakfast: Homemade cranberry scone (previously made and frozen from KAF)
Snack: Minimalist Baker’s PB&J energy bites (also previously made and frozen)
Lunch: Leftover veggie quesadillas with guac from the night before
Snack: Homemade trail mix (special shout out to Trader Joe’s and their affordable nuts and dried fruit)
Dinner: Trader Joe’s frozen asparagus risotto. First time trying it and it was tasty, especially for an under 10 minute dinner.
Dessert: Trader Joe’s dark chocolate PB cups. YUM.
Those dark chocolate peanut butter cups are AMAZING. I can’t resist them at check-out.
But have you had the Dark Chocolate ALMOND butter cups?! Sooooo good.
I almost bought those PB cups the other day. Looks like next time I will be following through on that!
Yesterday i made some “keto Granola” if you can call it that… It was basically a base of hemp hearts, some almond flour, a bunch of various nuts… hazelnuts, walnuts and pecans, and held together with butter and an egg white…lots of cinnamon and a little Swerve. Baked until crispy. Served with berries and unsweetened almond milk.
Lunch was a salad, with left over grilled steak, bacon and assorted veggies… dressing was olive oil from the sun-dried tomatoes and a tiny drizzle of balsamic glaze.
Dinner was rotisserie chicken and zucchini noodles with pesto sauce from a jar. (the rest of the family had real pasta with pesto sauce.) Hey, sometimes that’s the best I can come up with when we’re sitting at a track meet from 3:45 until 7:30!
I love hearing what you eat… I used to think that leftovers from dinner for breakfast was weird, then I started Keto, and now it sounds great… Not sure why.
Breakfast was a Chobani flip. Lunch leftover sheet pan Greek chicken and veggies with feta, and dinner was sausage and ricotta stuffed shells.
LOVE your WIAW and all your posts! I had a “fathead” homemade everything “bagel” with cream cheese for breakfast. A ground turkey and vegetables over spaghetti squash for lunch. ( leftovers from the night before) and cauliflower rice with broccoli for dinner. Snack Halo salted caramel ice cream.. yummy!
I love these posts! Yesterday I had the breakfast that I literally have every workday morning (and have for the past 4 years) – whole grain toast with a lot of Earth Balance and a creamy mixed berry smoothie with collagen protein powder added in. Lunch was a roasted sweet potato topped with a black bean and collard green mixture I cooked over the weekend, avocado, and hot sauce. Dinner was frozen cheese pizza from Costco (they make the best!!) with added toppings of spinach and mushrooms. I also had a batch of your PERFECT chocolate chip cookies around and munched on one for dessert.
I also had my usual two cups of hot tea (currently Bigelow’s Salted Caramel black tea) with more cream than most would consider necessary, hahaha.
Oh my gosh, that is totally something I do with frozen / delivery pizza! Saute some veggies, add them on top, and voila. #healthy
I should probably be extremely embarrassed and it shows I am lacking in nutrition! But here was yesterday: Breakfast: Chocolate Chip Waffles and 1/2 cup of coffee (don’t go to the store hungry!!) Lunch: Celery with Almond Butter Snack: Popcorn Dinner: Orange Cauliflower Bowls with Rice. Today will be: Breakfast: Chocolate Chip Waffles and 1/2 cup of coffee Lunch: Leftovers! Dinner: Chicken Enchiladas, Mexican Rice and a big heaping side of guacamole!
I have to think really hard about this! Even though it was only yesterday … I ate …. breakfast: a fried egg on a piece of toast with butter, plus a half caf iced coffee with hazelnut creamer. Lunch: spicy black bean and quinoa burrito, then jalapeño Tostitos dipped into the leftover burrito filling (I was making them for the freezer for work lunches and I snagged one cause they smelled so good!). Snack: 1000 Cadbury mini eggs dinner: homemade spicy shrimp ramen (my first time making ramen and it was soooo good!)

I love that you’ve brought back WIAW! I really enjoyed reading your WIAW during Sugar Free January. I’m always interested in learning what other people eat in a typical day, as well as all about their kitchens. I’d share my WIAW, but I’ve been sick with the flu the past few days and my diet is extremely bland right now. Everything you ate looks delicious! Especially your breakfast, those chips (I’ll be buying them from Aldi soon), your chocolate chip cookies (my favorite!), and your dinner.
Breakfast – multigrain english muffin with 1 scrambled egg and a piece of cheese (Kraft singles cuz that’s all I had!) and a couple shots of tobasco, Two Good yogurt and a banana
Lunch – Leftover Hawaiian BBQ chicken from the night before (Gimme Some Oven recipe! so good!) And my usual spring mix salad with feta dill yogurt dressing.
Dinner – Sheet pan smoked sausage and veggies – broccoli, baby red potatos, carrots and mushrooms sprinkled with Penzey’s Ozark seasoning.
It’s hilarious that you ask this today because yesterday 2 out of my 3 meals were your recipes! *big fan alert* For breakfast I had a scrambled egg and cheese burrito on a whole wheat tortilla. For lunch I had leftovers from your vegetarian shepherds pie (the hubs requested it for his bday dinner on Monday!) and for dinner we had your roasted veggie bowl with green tahini sauce. There was also a coffee frap and a heath bar Klondike bar nestled in there somewhere. I’m a bit relieved I’m not the only one super interested in other people’s food choices. Love it!

I want to start eating more tofu and tempeh. Does it cause you any digestive problems? This morning I had Sheep milk plain yogurt with walnuts, lots of fresh blueberries and a few stevia drops. Sheep milk yogurt is so delicious. Very tangy.
I’ve had a terrible head cold/allergy extravaganza the last couple of days, so I can’t taste anything. But for breakfast I had Honey Nut Cheerios, lunch was a tuna salad sandwich on whole wheat with a handful of salt & vinegar chips, snack was another handful of s&v chips and 2 rosè gummy bears, and dinner was half a Cesar salad and Bolognase that my husband said was delicious. Oh and a homemade Nanaimo bar for dessert.
Yesterday I ate Bob’s Red Mill Oatmeal with flax and chia seeds.. then cut up a banana and topped it off with a LARGE dollop of Justin’s Vanilla Almond butter. LEGIT. For lunch I made a turkey and swiss sandwich using iceberg for the “bread”. snack time was coffee and a homemade frosted sugar cookie that someone brought to office .. YUM! Dinner was spaghetti, using spaghetti squash for the noodles! Good eats day!

I had an turkey, egg, and spinach rollup for breakfast– along with coffee and cream of course. Having yogurt and a clementine over lunch because I forgot to pack a lunch and also that there would be a staff meeting today. For dinner slow cooker pork carnitas finished under the broiler with plenty of salsa, cilantro, lime, and red onion.
I love WIAW! This is reality eating, definitely not gourmet. Started the day with a cup of tea and Better Oats maple and brown sugar oatmeal with flaxseed. Midday snack, I chomped down a sm. bag of Utz Salt and Vinegar chips and a guzzled a bottle of water. Shrimp salad made with sm. shrimp, mayo, minced celery and onion, Old Bay and a squeeze of lemon juice open faced on a toasted slice of potato bread was my late lunch with another bottle of water. Then i went back into the kitchen, toasted another slice of bread and gobbled up the rest! One Ghirardelli intense dark choc square. Pan fried pork chops, fried potatoes and onions and spinach for dinner.
Yesterday I had a bagel and cream cheese for breakfast (I had a coupon so it was a FREEEEEEE bagel and cream cheese), leftover grilled chicken, a carrot, a carrot muffin and a la croix for lunch. I nerve-chomped two packs of Hello Panda cookies before I had to testify in court (that’s what I do for work, so not out of the ordinary, but still a little nerve wracking) and then I made Nom Nom Paleo’s Tandoori Shrimp with swiss chard, broccoli and rice for dinner. It’s SO satisfying when a blog emails you a recipe and it looks delish AND you have all the ingredients and dinner = done.

I love asking people what they ate! One of my first questions to my husband when he gets home from work is “what did you have for lunch”.
Breakfast is either fried egg, root veggie hash, avocado and Frank’s (workout days) or half of a green smoothie and turkey bacon slice (no early workout).
Lunch has consistently been detox salad (mix of kale, carrots, brussel, broccoli, parsely & nuts) with instant pot chicken breast, olives & pepperoncini peppers. I like the 365 greek yogurt dressing. Frank’s also makes an appearance here.
Dinner is so varied. Last night I made kung pao chicken in the slow cooker. Tonight is skinnytaste’s thai beef rice recipe.
Snack is often apple with peanut butter or babybell cheese with almonds.
Dessert varies and I try to avoid it but with 3 elementary school aged kids in the house there is usually store bought cookies or chocolate that finds its way to me.
Literally interrogate Bjork every day about what he ate.
