First things first: the red in those pomegranates just makes me feel all PARTY.

Breakfast party? Extra coffee? Yes?

Lately breakfast has had me completely wrapped around its tasty little finger. First it was the eggs, and now it’s this yogurt parfait with crunchy cereal, chewy quinoa, and snappy pomegranate seeds.

You guys, this is getting really awesome and a little bit weird.

Like, where’s my lifetime breakfast of oatmeal?

I used to think breakfast was exclusive to a big, warm bowl of oatmeal with almond butter and honey and fine, okay, I’ll take a touch of cream if you’re going to twist my arm like that.

But I’m coming to terms with some sad personal food news: I think I ruined my desire to eat hot oatmeal during our year in the Philippines.

I forced it when it shouldn’t have been forced, when the early morning air was already heavy and sticky and I was a regular hot morning mess, and now I’m just not that into it. I’M SO SORRY, SELF.

But with the exit of oatmeal comes the new found love for cold breakfast things like green smoothies and muesli, overnight oats and grapefruit, and granola and milk and coffee. And most importantly, yogurt parfaits that scream happy, vibrant, morning joy right into my face.

Doesn’t it just totally makes sense that I would be into these things now that I’ve moved back to my frozen Minnesotaland? Totally.

Okay, so cold breakfasts –> cereal.

Cereal –> hard to find when you’re trying to reduce sugar.

Remember how Bjork and I are playing around with this 60-day sugar free challenge thing? THE SINGLE BIGGEST PROBLEM I had when we did the challenge this summer was finding a good tasting cereal that kept the sugar under control. There are so so SO many bad-tasting no-sugar cereals out there in the world, which is a complete joy-killer for cereal lovers like mehself. I pretty much swore off cereal altogether during our last 60-day sugar free challenge.

Enter Cheerios + Ancient Grains: what I love about it is that, besides being a mainstream cereal that is easy to find at the grocery stores where you already shop and making you feel just a little extra-hip because of the addition of quinoa clusters and spelt and Kamut wheat, it is just barely sweetened with just over one teaspoon of sugar per serving. For me, it is the perfect amount so that it tastes Super Cereal Good while still helping me maintain my reduced sugar goals.

So I am now your friend who makes a batch of quinoa for the week, keeps it in the fridge, and whips up these colorful, nutritious five-minute honey yogurt quinoa parfaits at every possible occasion, from a quick and crunchy pre-coffee bite to a nightly TV-watching munchie to a pretty layered treat at brunchtime.

5-Minute Honey Yogurt Quinoa Parfait

Description

5 Minute Honey Yogurt Quinoa Parfait – super colorful and full of nutrition, crunch, and lightly sweet flavor. Quick go-to breakfast!


Ingredients

Units Scale
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cooked quinoa
  • a few teaspoons honey (to taste)
  • 1/2 cup Cheerios + Ancient Grains cereal
  • 1/2 cup pomegranate arils or other fruit

Instructions

  1. Mix the Greek yogurt with the quinoa and the honey.
  2. Layer half of the yogurt mixture into the bottom of a round glass. Cover with half of the cereal, half of the pomegranate arils, and repeat layers once more. Serve immediately!

Notes

I recommend making a batch of quinoa (about 1 cup dry) for the week and just keeping it in the fridge for quick and easy prep throughout the week.

    We must be on the same brain train, because I TOO used to think that breakfast HAD TO BE OATMEAL or I would DIE.
    Then I started trying things like chia pudding and quinoa muffins, and my breakfast identity was in question.
    Clearly, I’m going to continue along with that because these parfaits are GORG! My hubs is obsessed with Cheerios, so I needa find those!

    Well good morning my new love! I totally get the whole cold breakfast thing. I live in central florida. Land of all things hot and muggy. We may have Mickey Mouse, but we also have temperatures from hell 😉 the upside? Beautiful berries just about all year round!

    Yaaaaaaaas. I’m totes the girl who refuses to eat parfaits for breakfast, but will happily devour them as a mid-afternoon snack. Breakfast lately has been burritos. Not even breakfast burritos, just straight beany-cheesy-ricey-salsay goodness. TOASTED. Oh, and summer time? Spring rolls. For breakfast. Try it and be changed forever.

    I kind of got burned out on cereal after eating it every day for a million years…but now, when I add it to a parfait, it’s all shiny new and delicious! I just released (pried, harvested? 🙂 a whole bowl of arils from a pomegranate this morning…and I was thinking how pretty they would be in a parfait…your photos confirm that…and when stuff looks this good, I can tell my kids it’s dessert 🙂

    I used to make parfaits for our family every Sunday morning (though, granted, that was before I became obsessed with pomegranates…man, arils would be so scrumptious in a parfait!)! I used different fruits and crunch-factors (usually homemade granola) every week. It was so much fun for me, and different every time for the rest of the fam. My favorite used our peanut butter granola recipe, but, ha, that wouldn’t be a good one for when you’re reducing sugar, because it is LOADED with brown sugar, lol!! 😛 But your parfait looks totally yummy and very healthy. And the arils! Such a good idea!

    Do you eat the pomegranate seeds, or just suck the set part off and spit the seed part out? I rarely use pomegranates because I never know his to eat them.

    My mom used to practically force oatmeal down my throat when I was growing up….with more brown sugar than oatmeal, of course 😉 Now, I love it! This quinoa parfait looks so delicious and healthy and I love how much protein there is!

    At the risk of being disowned from the food blogging community, I’ll admit that I’ve always been more about parfaits than oatmeal! Well, parfaits and omelettes actually. This girl LOVES her eggs but also loves fruit so sometimes parfaits make a breakfast appearance… and sometimes that’s alongside said omelettes because I just want to EAT ALL THE THINGS. I love how you’ve got so many different textures in this one, and could definitely see myself becoming obsessed!

    So pretty!! I always wake up STARVING. In fact by the time my hubby is eating breakfast, I’ve already had a pre-breakfast snack…breakfast….aaaand maybe a post breakfast snack….BUT I’m thinking that with all the protein and fiber you’re bringing with the quinoa and yogurt and grains, I might be able to survive on just one breakfast…. (ok, in my defense I wake up in the wee hours of the morning after admitting defeat to repeated requests for cartoons and multiple breakfasts are totally justified when forced to watch ninja turtles at 6am right?)
