Hiya guys! Here, want a slice of sweet potato pizza, BBQ chicken style?
Take a minute, just take that all in in its melty-cheese-savory-sweet glory, get all the heart eye emoji feels going on, and then I have a question for you: what is your August going to be like?
Let’s just think about it for a second.
Things August should be: brunch, long naps, lake days, easy dinners, suntans, bike rides, and other relaxing activities that are a right in and of themselves. A RIGHT IN AND OF THEMSELVES. Come on now you hustling mama, you girl boss, you hard-working self-critic that you are. You can give yourself this. These relaxing days don’t even necessarily need to be justified by the idea that they will gear us up to work harder in the fall – they are what makes August the sweet finish of summer, and they are deserved by all.
Say that yourself: I DESERVE AN AUGUST. You most certainly deserve an August.
HOW TO MAKE OUR SWEET POTATO PIZZA CRUST (50 SEC):
I have a special respect and adoration of summers because of my years spent as a teacher. Summers are sacred and cherished and precious above all else to teachers. They are a time to rest, to relax, to do things just because you feel like it. Such as treating yourself to a triple chocolate brownie DQ blizzard for lunch, strapping on the old rollerblades for the first time in 10 years, and getting a manicure at 1pm on a Tuesday.
But over the last few years as I’ve transitioned into blogging full time, September 1st pops up on the calendar and my heart breaks a little bit. Less because summer is over and more because I didn’t do a good job summer-ing. Time is up and I was too busy working and now I won’t get another chance until next summer, a full nine months away.
I start thinking sad and melodramatic things like:
Why didn’t we have friends over to grill out every single weekend? How could I have only ever had an outdoor brunch ONE TIME? Why didn’t we hike around and explore some new-to-us local state parks? Why can I count on one hand the number of times I wore my swimsuit? Did I really never plant my garden?! And how is my to-read summer book list still completely full?
Guys. This is go time. No time to waste here. WE CLAIM AUGUST and we vow to make it count. No more regrets and sad, melodramatic thoughts on September 1st – it’s time to live the summer dream, starting today.
Part one of summer dream = easy dinner food at the ready for the times when you actually eat something other than “meals” consisting of crackers, cheese, peaches, wine, veggies and dip. These times are rare (snack dinners FTW!) but they do happen about 2x / month and we must be ready.
Let’s start with a basic and delicious 3 ingredient sweet potato pizza crust.
I know, I already introduced you to the sweet potato crust, so this post/recipe/concept just a further development on that front. Do you mind? I feel like we need to talk through these things thoroughly, all in the name of August.
We’re topping that beloved little crust with BBQ sauce, chicken, red onion, mozzarella, and cilantro, and then devouring out on the patio while watching the sun set. This BBQ chicken summer pizza situation is too legit to quit.
It’s August. Let’s finish strong.

- Total Time: 1 hour 5 minutes

Description
BBQ Chicken Sweet Potato Pizza! with a 3-ingredient sweet potato crust! easy real food pizza with chicken, BBQ sauce, red onion, cheese, cilantro.
Ingredients
- Sweet Potato Pizza Crust
- 1/2 cup barbecue sauce
- 1/2 cup shredded chicken
- 1/4 cup thinly sliced red onion
- 1 cup mozzarella cheese
- 1/2 cup chopped cilantro
Instructions
- Prepare the pizza crust.
- Top with sauce, chicken, red onion, and mozzarella cheese, in that order. Bake at 400 degrees for 10 minutes, or until the cheese is melted and pizza is hot.
- Finish with cilantro. Cut and serve!
Notes
Amounts will vary depending on the size of your pizza, so just play it by ear. When it doubt, go for LESS toppings so it doesn’t weigh the crust down too much.

Hi Lindsay! I’m with you on August. Bike Rides. Yup. Lazy lake days. Yup. Pizza at the Lake. Even better. Tom and I are so blessed to have parents who have lakefront cottages. It’s awesome crashing their places. We’re saving up so we can afford. But eating yummy, quick meals is all about the Lake experience and this pizza is so in. We’re heading out again to the Lake tomorrow morning. This is when we love being teachers. (just kidding, we love our students too but need a break from them =)

How many does this pizza serve? In the original crust recipe it says that one recipe serves 2, but here it says that one serves 4?
Oh, good call. I’ll update it here. I mean you can get 6 pretty decent sized pieces out of it, but realistically, if I’m hungry, I could eat half of it (3 slices). So it should be 2.

Made this last week – like the SECOND you posted the crust recipe! FANTASTIC!!! Very impressed with how well the crust held up to all the toppings I loaded it with and was quite happy the sweet potato didn’t overpower anything else. Love! =)

Do you cook the sweet potato first or place a raw sweet potato in the food processor with the oats and egg?
Just put it in raw!
