These Buffalo Chicken Burgers Are Hitting Just Right.

Everyone at the office ate A FULL BURGER for lunch last week. Normally our shoot days involve a bite here, a bite there. But these guys went down fast and furious and with a lot of vocal appreciation.
Bjork mentioned how much he liked them at least 7 times. I went back for seconds. So maybe buffalo chicken burgers are my new favorite meal?
The flavor is SO GOOD – you brush them with butter at the end, add the tang of the feta spread, pile some cooling lettuce on there and tuck it into a toasted brioche bun? Game over.

Can we also take a moment to just appreciate that they’re so easy to make? If you pick up a store-bought feta spread, like the new whipped feta one from Trader Joe’s, it’s even faster.
These go perfectly with a Simple Green Salad, or sheet pan Sweet Potato Fries, or Liz’s Roasted Broccoli! But also, they go perfectly in your hand with no plate and no frills as pictured above.

Ingredients
Buffalo Chicken Burgers
- 1 lb. ground chicken
- 1/2 cup panko breadcrumbs
- 1/3 cup hot sauce (I used Frank’s Red Hot)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
Whipped Feta Spread
- 6 ounces feta cheese (block or crumbles)
- 4 ounces cream cheese
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons water
Extra Stuff
- 2 tablespoons melted butter + 2 tablespoons hot sauce for brushing
- Buns
- Lettuce
Instructions
- Make the Whipped Feta: Blend all the ingredients together in a small food processor until it incorporates into a thick and spreadable texture with flecks of feta.
- Mix the Burgers: In a medium bowl, mix the burger ingredients together. Form into 4-5 patties.
- Cook the Burgers: Heat a small bit of oil in a large nonstick skillet over medium high heat. Add burgers and cook for 3-4 minutes per side, until golden brown and the inside of the burgers is fully cooked (165 degrees).
- Brush with Butter: As the burgers are finishing cooking, brush the outside with the melted butter and hot sauce mixture.
- Finish: Arrange your burgers on buns with lettuce and a shmear of the whipped feta. SO GOOD.

Questions You Might Have About These Buffalo Chicken Burgers
Not too spicy! For a milder version, use 1/4 cup (or less) of buffalo sauce. (The level of heat will also depend on the type of sauce – I use Frank’s Red Hot). My kids will eat these with some ranch dressing.
Yes, you can freeze them! To freeze before cooking, place the formed patties on a parchment-lined baking sheet and freeze them for 6-8 hours – this ensures they won’t stick together. Then put them in an airtight container and you’re good to go. To freeze after cooking, just place in an airtight container once they’ve cooled. For best results, when you’re ready to cook them, I would suggest thawing them overnight in the fridge.
I would use a different spread in place of the feta spread – such as a plant based tzatziki, mayo, or an avocado spread!
I would use a veg protein base instead of chicken, like TVP – example of how it’s done in this recipe.
Use gluten free buns, and gluten free panko. Also, ensure that your hot sauce is gluten free.
YUM!! Do you think ground turkey would affect flavor much? It’s easier to find at my local grocer than ground chicken.

Aldi has great brioche buns! They also sell Perdue ground chicken.

Hi Carla! We haven’t tested a dairy-free version, but I’m thinking, for the whipped feta specifically, that a dairy-free variety of feta, cream cheese, and plain yogurt would work well!
These looks so good and are like the burger version of buffalo chicken dip. My hubby and I love blue cheese with our buffalo chicken, do you think subbing blue cheese for the feta with the rest of the whip ingredients would work well?

We are fans of your teriyaki chicken burgers and I think it was that recipe that led to us having brioche buns on hand so often. I made these the same day I saw the recipe. I did sub bottled Bleu cheese dressing for the whipped feta spread. My husband pronounced it a “first class” Buffalo chicken sandwich.

For the whipped feta, could the cream cheese be swapped out for cottage cheese or ricotta cheese?
Liz, I swapped cottage cheese (4%) for the cream cheese and it worked great. I can’t compare to the cream cheese version, but I really liked it!

These were great! Very easy and quick (I find I typically add time to the estimated time with recipes but these actually took only about 25min.) Subbed goat cheese for the feta. Delish, will definitely make again!
