How You Should Be Doing Oat Bran for Breakfast

High protein, high fiber – I love this oat bran for breakfast! Creamy and soothing + quick and easy to make!

Is Oat Bran Better Than Oatmeal?!

Lindsay Ostrom headshot.

For me, at this moment in time… the answer is yes!

I’ve fallen out of a good breakfast routine in the last few years since having kids – mornings feel busy, I’m usually not very hungry, and more often than not, I just start the day with a coffee and a few nibbles of whatever the girls are having for breakfast. Not ideal.

But our good friend OAT BRAN is bringing me back!

  • It’s creamy and soothing, like a porridge. Kind of reminds me of Malt O’ Meal from when I was a kid!
  • It takes so little time to cook. Like, 3 minutes or less.
  • The oat bran alone has 7 grams protein and 7 grams of fiber per serving, plus even more if you cook it into a creamy delight with milk and eggs and add some fruit, which I definitely do!

I use Bob’s Red Mill Oat Bran! (affiliate link) We are buying several of these bags every time I go to Kowalskis (which is where I’m buying it here in the Twin Cities). Bob’s also makes an organic version that you can buy if you’re looking to use organic oats!

You could go bonkers with it (cinnamon, nuts, chocolate chips, peanut butter, honey, etc.) but how I really love it is just plain and simple – a small steaming bowl with a drizzle of maple syrup, a melty knob of good butter, and a few juicy raspberries on top.

We’ve been eating so much of this that we ran out of oat bran a few weeks ago, and both of my girls – who typically love oatmeal – were very disappointed to go back to the regular stuff! They’re hooked on this oat bran right along with me. Guess we’ll be buying oat bran in bulk for the foreseeable future!

How To Make This Recipe

1

Simmer It Up.

Bring oat bran, water, milk, and salt to a simmer and let it get thick. This takes all of 2 minutes.

Pouring milk into a pot of oat bran.

2

When it’s thickened, add your eggs!

Optional, but gives it extra creaminess and extra protein! Just be sure that the pan is over low heat and that you stir continuously to avoid scrambling the eggs.

Pouring a whisked egg into the oat bran on the stove.

3

Whisk on low heat until incorporated!

Keep it moving consistently, over low heat (or even off heat), to work the eggs in without scrambling them. It’ll get nice and thick and creamy!

Mixing the egg into the oat bran in the pot.

4

Yum! You’re done!

I like to add butter, maple syrup, and some raspberries!

Description

High protein, high fiber – I love this oat bran for breakfast! Creamy and soothing + quick and easy to make!

Ingredients

Units Scale
  • 1 cup oat bran
  • 1 3/4 cups water
  • 1 cup whole milk (or milk of choice)
  • pinch of salt
  • 2 eggs or 3 egg whites, beaten
  • 2 tablespoons maple syrup (more to taste)
  • butter for serving
  • fruit for topping (I like raspberries)

Instructions

  1. Simmer: In a small saucepan, simmer the oat bran, water, milk, and salt. Cook until thickened, 2-3 minutes.
  2. Add eggs: Pour the eggs in and stir continuously over low heat until incorporated (if it’s too hot, the eggs will scramble, so make sure to stir vigorously and continuously to work them in gradually). I usually do this for 1-3 minutes until I feel that they’ve been heated enough to be cooked. You can use a whisk or a wooden spooon.
  3. You’re Done! Yum! Stir in maple syrup and more water or milk if needed. Serve with butter on top, raspberries, and a drizzle of maple syrup if you want!

Notes

If undercooked eggs are a concern, you’ll want to make sure you heat the oat bran up to 165 degrees in order to eliminate any salmonella risks with the eggs.

For a protein boost alternative, I also sometimes add collagen protein power to this! (affiliate link)

The longer you keep the oat bran over heat, the more it will thicken and absorb moisture. I often add more water or milk after adding the eggs, right before serving, to make sure it stays creamy and doesn’t get gloppy. The texture reminds me of cream of wheat!

Questions I’ve Gotten About This Oat Bran

Where do you buy the oat bran?

I use Bob’s Red Mill (they have an organic option) and locally I buy it at Kowalskis. You can also buy it on Amazon! (affiliate link)

How can I add even more protein?

Sometimes I add a scoop of protein powder! Collagen protein powder is my protein powder of choice. (affiliate link)

Does this keep well if you make it ahead?

Similar to cooked oatmeal, it will get gloppy and too tight if you keep it in the fridge after it’s cooked. If you want a make-ahead option, I would try preparing it more like overnight oats with a good soak in milk overnight!

Other add-in ideas?

Frozen blueberries, or other fruit, your favorite jams, a little bit of cream, peanut butter, chocolate chips, flax, hemp, chia! Lots of ideas!

I’d never heard of oat bran, but I’ve been making this every day ever since you posted to Instagram except stirring in 1/2 cup of cottage cheese. Sometimes I’ll blend it up so it’s smooth, but just stirring it in without blending gives it the lumpy texture I loved when my grandma made me cream of wheat as a kid, it’s a total comfort food. OBSSESSED!!

  2. Pinch of Yum Logo

Wow! I’m surprised how much I loved this. I am a very loyal (okay, obsessive) oatmeal eater and suspected I would like this but that it wouldn’t lure me away from oatmeal long term. But it’s great! I also thought it wouldn’t make a big enough serving to make me feel satisfied but it was huge and filling. Thanks for getting me hooked!

  3. Pinch of Yum Logo

Wow, these are better than oatmeal! And we are oatmeal people. I’m glad I impulse purchased a 4 pack on Amazon after reading this recipe! I made the recipe exactly as you wrote it and they turned out perfection. I love the hidden eggs in there.

  4. Pinch of Yum Logo

Thank you so much for this – it’s become my new favourite breakfast! So filling without feeling heavy, like rolled oats. Adding the egg is genius. Cheap, fast, nutritious and filling.

  5. Pinch of Yum Logo

This is good!! I mixed in a leftover mushed up frozen banana that had been in the freezer for a while and it sweetened the oats! I’m not an oatmeal fan but I really like this!

  6. Pinch of Yum Logo

This recipe is a game changer! The texture is softer and a little bit more liquidy compared to oatmeal and it just tastes comforting. A great way to get more fiber and protein into your day! I use fairlife milk for extra protein and the high fiber oat bran from Bobs Red Mill. It reminds me a little bit of eating malt o meal as a kid.

  7. Pinch of Yum Logo

Great piece! Anyone interested in the topic must read this, thanks to your extensive research and appealing writing style. Your time and energy spent on this article’s research and writing are much appreciated. If you want to learn more about the subject, it’s a good place to start.

  8. Pinch of Yum Logo

Wow! These are unreal. I was skeptical but these are so so good! I topped mine with peaches, maple syrup and cinnamon…yum!

  9. Pinch of Yum Logo

Lindsay, this recipe is a lifesaver. I’ve been struggling to find a breakfast that’s both filling and quick, and this hits the spot. The creamy texture and subtle sweetness are perfect. I love the flexibility to add different toppings, too. Definitely going to be a staple in our house! Thanks for sharing this gem.

  10. Pinch of Yum Logo

Delicious and satisfying. I tempered the egg with some of the hot mixture before stirring it into the saucepan. I topped it with dried cranberries and sliced banana. I made half the recipe, and saved half of that for tomorrow. I’ll add some milk to it and heat it up in the microwave. I might add chopped dates to it, maybe some nuts. Or strawberries on another day.

  11. Pinch of Yum Logo

This was so good. The recipe was extremely easy and it came out perfectly. I used a food thermometer to ensure that the eggs were fully cooked. It was a perfect winter/cold weather breakfast, and I love the addition of the eggs to get more protein. Will def be making again!

  12. Pinch of Yum Logo

I make rolled oats with oat bran using water for fewer calories, adding a small amount of salt with just a little more water so I don’t need milk. Add berries for sweetness or banana. Then a few walnuts on top with cinnamon. I feel like I’m cheating but I’m not.

  13. Pinch of Yum Logo

Eat my eggs at 11:00 am. To get me to about 1:30 or 2:00 for lunch. Oatmeal with oat bran and toppings at 8:00.

  14. Pinch of Yum Logo

I went a different route, instead of butter and syrup or fruit, I added Nutritional yeast, YUM!!!

    Thank you for the recipe.
