Hold on, hold on. I’m envisioning a perfect fall snack.

It has pumpkin, oats, maple, chia seeds, almond butter, pumpkin seeds, sea salt, and cinnamon all packed together in a densely-textured nutritional powerhouse bomb. It’s just sweet enough, and it slightly resembles cookie dough, but with more of a fall cookie flavor and more of a feel-good healthy body buzz.

It requires no baking and no chopping. It’s made in 15 minutes and easily stored in the fridge or freezer for easy grab-a-ball-and-go level snackage.

It can be a breakfast, snack, or two-bite dessert.

And also, as much as we love them, it’s made with zero dates.

How To Make Pumpkin Energy Bites

Ready? Put everything in your food processor.

Description

The Best Pumpkin Energy Bites! Made with oats, pumpkin, almond butter, maple syrup, and pumpkin seeds. Naturally sweet, super healthy!


Ingredients

Scale
  • 2 cups oats
  • 1/2 cup canned pumpkin puree
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup chia seeds
  • 1/4 cup pumpkin seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional, see notes)
  • 1/2 cup maple syrup or honey
  • generous pinch of salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Pulse all ingredients (except chocolate chips) in a food processor until well-mixed.
  2. Add chocolate chips and pulse a few more times until they are in small pieces.
  3. Scoop mixture and roll into balls. Freeze until solid and store in the freezer or refrigerator. 

Notes

Cinnamon vs. Pumpkin Pie Spice: I actually prefer this with straight cinnamon because I’m not a huge fan of the nutmeg that is often found in pumpkin pie spice. Just do whatever your heart feels!

Almond Butter vs. Peanut Butter: Really I think any type of nut or seed butter would work here! It’s just about the flavor you want. I liked peanut butter the best and I didn’t feel like it was overly peanut buttery. 

Honey vs. Maple Syrup: Both work really well. Maple syrup is great if you want to keep it vegan. My favorite was 1/4 cup honey and 1/4 cup maple syrup – best of both worlds. 🙂

    This look delicious! Would it work if I just left out the chia seeds, or should I replace them with something? (I’ve found they really upset my stomach!)

      This is so good! I totally forgot to pick up pumpkin seeds but I had raw walnuts in the house and used those instead and it seemed to work out fine. I ate a lot of the batter before freezing.

    Can’t wait to try these tonight! Any tips on defrosting? I plan on likely keeping them in the freezer the whole time. If I take them out of the freezer around 8am on my way to work do they need to pop back in the fridge when I get to the office? Just wondering how to best defrost for easy snacking. Thanks!

    Just made these! They’re SO good. The texture is almost like cookie dough. I used peanut butter but it is not overpowering at all. I opted for pumpkin pie spice and cinnamon because I’m all in on fall flavors. I did not add chocolate chips to the mix so that my vegan friends could eat them (also used maple syrup, not honey, for this reason). I did, however, melt chocolate and drizzle it on top of half of them. I left the other half naked. Chocolate is everything to me but these babies are delicious with or without it

    I made these into bars instead of bites and they are incredible! Really easy to make and I love the taste and texture. I went with peanut butter and would agree that the flavor is not overpowering. A snack time win!

    I made these as instructed and they are amazing! I’ve been searching for a lactation “cookie” recipe that was still healthy, and given that the base of this is oats, I think I may adjust it second time around and use flax instead of chia and toss in some brewers yeast. So excited to try this way! Thank you for the awesome recipes!!

        For anyone who doesn’t own a food processor – I made these by grinding up the dry ingredients in a blender (first oats by themselves, then the seeds together, then the chocolate chips for a few pulses), then I mixed all the dry ingredients with the wet ingredients in a bowl with a spatula. It worked great! I actually liked the texture better than when I made these at my mom’s house using here food processor.
