Sheet Pan Salmon with Dill Potatoes
The One Where All 4 Family Members Went Back For Seconds.

Let me start by saying this salmon has no business being this good. It’s just plopped on that sheet pan – no cutting, prepping, etc. Then it gets topped with mayo and Dijon and baked for, like, all of 7 minutes. Shake of red pepper flake, sprinkle of dill, squeeze of lemon. So simple, and yet. Holy smokes.
May I, though, also direct your attention to those dill potatoes!! Double exclamation!!
They get steam-roasted to perfection and then tossed in garlic butter with borderline too much dill (which is always the right amount of dill).
I made them and immediately texted multiple friends: “you have to make these!!”
You can bring the whole sheet pan out to the table (as we often do), or transfer to a big platter to serve:

Sheet Pan Salmon with Dill Potatoes

Description
Simple and delicious salmon and potatoes roasted on a sheet pan, and covered in a garlic dill butter sauce! One of my family’s favorite dinners.
Ingredients
Dill Potatoes:
- 24 ounces yukon baby gold potatoes
- 1 1/2 tablespoons olive oil
- 1 1/2 teaspoon kosher salt
- 1/2 cup water
- 3 tablespoons butter, melted
- 1 clove garlic, grated
- 1 tablespoon freeze dried dill, or 3 tablespoons fresh dill
Sheet Pan Salmon:
- 1.5 pounds salmon filet (I use skin-on)
- 3 tablespoons Dijon
- 2 tablespoons mayo
- red pepper flakes, more dill, lemon wedge for serving
Instructions
- Prep the Potatoes: Preheat the oven to 450 degrees. Toss potatoes, oil, and salt on a sheet pan. Add water directly to the pan.
- Roast the Potatoes: Roast potatoes for 30 minutes. I recommend stirring every 10-15 minutes to prevent sticking. During this time the water will evaporate / steam the potatoes, and they will get beautifully golden at the same time. (Some sticking is normal and okay – just use a good spatula to firmly get under the potatoes and lift them to keep them all moving around and roasty toasty.)
- Prep the Salmon: Move potatoes to the side. Add the salmon filet in one piece to the center of the sheet pan, skin side down. Season with 1/2 teaspoon salt. Mix the mayo and Dijon in a small dish; spread over the top to cover. Bake for 6 minutes. Then broil close to the top of the oven for 2-3 more minutes to get browning on the salmon. You want to bake it until it flakes apart easily – see notes.
- Garlic Butter: Mix the melted butter, grated garlic, and dill; spoon over the hot potatoes. Sprinkle the salmon with dill and red pepper flakes.
- You’re Done! Squeeze lemon over the whole thing. Flake big chunks of salmon off to serve with the potatoes. Unreal.
Notes
Salmon Doneness: Internal temp for salmon can range from about 125 to 145 degrees Fahrenheit (personal preference). I don’t usually temp my salmon. I buy salmon from reputable places that I know have handled it safely, and then just bake it until it flakes apart easily and still looks juicy (see photos and video). If you want to cook it according to USDA recommendations, you can cook it until 145 degrees – but many chefs prefer salmon at a slightly lower temp (like 130 degrees) to retain that buttery juicines.

This was delicious especially compared to how easy it was to throw together (mostly hands off time while the potatoes cook). The potatoes came out so good, we’ll definitely make them this way from now on and the dill butter was great. We threw asparagus on the sheet pan with the salmon, easy one pan meal.

Hello! We get our salmon from any local grocery store, from Trader Joe’s to Cub Foods!
This was delicious and super easy. I added broccoli to the potatoes after 15 minutes to round out the meal and it worked great. Minimal cleanup with only one pan and one small bowl, which is always a plus. My wife wants this added to the rotation and I whole heartedly agree!

This recipe is so good and so easy to make! There are many great ways to make salmon, but this is the ONLY WAY to make roasted potatoes. Just perfection.

These potatoes were heavenly. My boyfriend said they were the best potatoes I have ever made. The water on the pan really changed the texture for the better. I did make salmon too, but used some of the dill butter on it instead of the mayo and dijon. This is definitely in the regular rotation going forward.

Holy WOW! This was so so good and so SO easy. SOS indeed. I literally had the WORST day at work, feeling overwhelmed and full of anxiety but had this is on the calendar for a Monday night. This was so good. Best potatoes I’ve ever made. Added asparagus to the pan about halfway through.
I doubled this recipe tonight and added roasted broccoli. All my in-laws joined us and everyone raved about the salmon AND the potatoes! The salmon was so perfectly cooked and flavorful while the potatoes were perfectly soft and so yummy with that garlic butter all over. I will definitely be making this recipe again!
