Food is such a strangely universal / personal thing. I love to make and eat fun and exciting recipes, but I equally love the real life, unpolished, what-do-you-eat-in-a-day stuff, which is why I include one of these posts every once in a while! Just trying to pull back the fridge door and give this food space a little extra dose of real life.
Here’s a What I Ate Wednesday for the month of July!

Breakfast
Here’s a picture of my chicken chorizo breakfast sandwich.
And here’s story for you: I had a crazy morning. No time to eat before I left the house. I went through the drive through at to Caribou Coffee and entered “my perks number” which is actually Bjork’s perks number. The cashier said, “Okay, great, thank you Bjork!”
But the real Bjork was, in fact, sitting inside the coffee shop right by the drive-up window! 😂So he heard his name, knew that it was me, walked outside to find me, and proceeded to harass me as I waited in the drive-through lane. True love.
Leave it to the men in your life to introduce you to weird but kind of actually delicious foods, right? This 100% falls in that category. I used to give him such a hard time for ordering a “chicken chorizo” breakfast sandwich that came wrapped in a paper bag and now… you guys, what can I say. He’s brought me to the dark side.
Chicken chorizo sausage patty, muenster cheese slice, a fried egg, and some kind of gluten free English muffin that has the weirdest, most delicious texture.

Lunch
Okay, so it’s not much to look at. But this goddess chicken salad with Greek yogurt and cilantro and pistachios and curry powder and honey and raisins is my ALL TIME FAVORITE in the summer for ready-to-go meal prep.
Please note that after the initial photo was taken, I decided to roll this up in one of those fresh flour tortillas from Costco – the ones you have to cook first – and it was like a very speedy chicken salad wrap situation. Divine.
Sunny Day Snack
Part cracker, part chip, part retro snack bomb. I am so here for this.
These are – wait for it – Ritz Crisp and Thins! Sour cream and onion flavor, duh, and honestly, they’re just my favorite thing right now. Not healthy, not cool, but just very, very thin and crispy and delicious.
The picture doesn’t do them justice. They are seriously so thin – like little bites of air. And they taste like every zealously flavored chip I loved as a teenager, because no, my tastebuds have not matured beyond 2004. Thank you for your time.
Blackened BBQ Salmon
This recipe came out of my friend Jessica’s Pretty Dish* cookbook and it was so zippy, fresh, summery.

Bedtime with the queen has been a Choose Your Own Adventure ride lately, so naturally a post-bedtime reward has been in order.
Enter: my favorite wine of the summer which is, in fact, so fancy that it is just called Butter.

What Solvi Ate
This month Solvi has started eating cheese! HEY GIRL!
Suddenly she can pick up food and feed herself, which is just very adorable and fun and also a little hard to keep up with? So shredded cheese has been one of those here’s-a-little-pile-to-get-you-started foods while she waits for the rest of her meal to be ready. And everyone wins.
Pictured here we have an appetizer of some freshly shredded mild cheddar, and like any good food blogger’s daughter, she is loving it.

I love shredded cheese as an apetizer! Solvi has it all figured out 🙂 I did a little bit of food prep this week (hurrah!) so this week my hubby and I have a choice of either couscous salad with lovely ripe tomatoes and cucumber, or brown rice with olive oil and lemon juice with sauteed courgettes and roasted peppers. Except he didn’t like the couscous dish… So that’s what I’ll be having for eternity (aka the next 3 lunches). I’m not complaining… yet

Giuliana (my four year old fiesty princess) has recently fallen in love with veggie straws (a little late to the game) which I am thrilled about because at least it gives off a semblance of healthy?
I’ve been eating these wannabe Cheeze-its that I bought at Lucky’s market (healthy supermarket chain) made out of cauliflower! Will wonders never cease? Is cauliflower ice cream next? I love it!
Lots of 7-minute eggs, cucumbers, tomatoes and SUPER garlicky white bean hummus for me this week. I also made a Turkey Pizza SPD (from Fed&Fit) for dinner last night because the husband really loves it and it makes leftovers for him.
Those Ritz chips are the worlds best secret. I LOVE them. If I have a bag of the salt & vinegar variety in my house, it’s all over.
2 things that you must also get from costco: the boudin sourdough crackers. they’re so good that my 8 year old calls them chips.
the simple mills almond flour crackers. i pack them for lunch daily and then consume them for breakfast.
I just found out, after 11 years of being together, that my husband HATES sour cream and onion things, which simultaneously broke my heart and made me wonder why we’re even together AND made me glad that when I buy those Ritz thins, I’ll never have to worry about him stealing them. Otherwise, we’ve been eating your Instant Pot spicy chicken lentil dish (thank goodness for the IP when it’s too hot to turn on the oven or stovetop!!) and my all-time favorite, your lemon zucchini poppyseed muffins 🙂
Solvi is over the top adorable! Love to see her feeding herself. My 3 year old is still too lazy to put food in his own mouth. He’d seriously rather not eat. How is he my kid?!
I’m a recovering Ben and Jerry’s addict, and did anyone else’s Whole Foods have a 2 for $6 sale on B&J’s this week? Irresistable obviously. How could this be WRONG? It had been quite some months sober, so it went down RE-E-AALY EEAZZY…So that was a central feature of my diet today…rotisserie chicken also from Whole Foods…various unmemorable nibbles. The high point of the day culinarily was some toast of an amazing local whole wheat sourdough seed bread, topped with mashed fresh organic raspberries and drizzled with local raw honey and tahini. Mmm!
Love the Solvi update. I remember 25 years ago when my in-constant-motion then-2 year old would eat his meals walking around. Cheese chunks were the BEST, especially monteray jack…one in each hand then back for new fistfulls when they were gone. Bliss! Enjoy it all!
I’m not a whole foods shopper, but Lunds has BOGO on very ice cream last week…. I took complete advantage of that…. my freezer is all ice cream now!
A spinach/banana/strawberry/greek yogurt smoothie with a KIND bar to follow up for breakfast, a slice of leftover pizza for lunch, and hopefully a big ole’ burrito bowl for dinner (any meal that can be bowl-ed is my favorite meal).
I’ve been doing lots of caprese salads with burrata cheese. Everything is in season so I’ve just been trying to take advantage of all the fresh produce!
What I Ate Wednesday: scrambled eggs with zucchini and leftover avocado crema on top; a big ol’ lunch bowl with grilled chicken, broccoli, some sauerkraut, and as much spicy creamy dijon mustard sauce my partner in crime made as I could fit; dinner is asian meatballs a la nomnompaleo with mashed sweet potatoes and leftover steamed broccoli!
Oh! I discovered Butter Chardonnay a little while ago too and loved it! I love chardonnay’s that are more on the rich (buttery?) side….obviously I’m not well versed in wine lingo lol but anyways, what have I eaten today….I had a chocolate peanut butter banana smoothie for breakfast then a mid-morning snack of Stacey’s Toasted Cheddar Pita Chips (which have been my personal obsession for exactly the past year). Then I skipped over lunch and went right to my one sweet allotment today which was a peanut butter brownie with chocolate ganache from a local Eddie’s Bakery which I have also been obsessed with recently, kind of unfortunately…. I will probably have my regular lunch as my mid afternoon snack which is Stonyfield’s Organic Whole Milk Yogurt with granola and fresh blueberries 🙂
Always enjoy your posts and love how you keep it real in terms of what you/your family eats. My latest food obsessions have been sea salt “veggie” chips – highly addictive and Nature’s Bakery fig bars – LOVE the raspberry flavor . Just reserved a copy of Pretty Dish at the library- I look forward to trying the salmon recipe….thanks for sharing!

I was out of rotation this weekend with a sore knee so I convinced my husband to make me cheesy polenta in the instant pot on Saturday morning, and then had him make me his amazing, fluffy, delicious scrambled eggs and topped the whole concoction off with a few spoonfuls of plain old grocery store salsa. My husband can NOT cook, but he is amazing with a pan of scrambled eggs! Even though the combo was my suggestion, he was feeling like a rockstar chef.
And now that the leftover polenta has solidified, I’ve been slicing it up and grilling it “grilled cheese” style in my skillet for lunch and eating it as the bread in an open face sandwich for lunch!
And those Ritz chips are delicious. No shame here!
Whaaat? I must find out how to make cheesy polenta in the IP, for that w/ scrambled eggs w/ leftover ‘grill cheese’ sounds like a lot of things I can get behind. ♥

I had Veal parmesan with spaghetti yesterday and lots of cheese. I now feel some kind of way as I’m slowly shifting my diet and still making mistakes along the way.
I do that handful-of-cheese-while-i-get-your-actual-food thing with my highchair babies all the time!! For some reason it IS hard to have the right foods for them on hand and ready to go. I guess because when they get hungry, waiting 5 minutes while you cook them some broccoli is not an option, haha. A lifesaver is frozen peas. You can thaw them with hot water in seconds, they’re healthy, perfectly baby-bite-sized, and both my boys have LOVED them.
I had scrambled eggs mixed with some sausage for breakfast, a big pile of sauteed yellow squash and bratwurst for lunch, and am foolishly planning to do homemade tortillas for dinner burritos. (Not because tortillas are hard, they’re so fun, but because I have no time and my house is a wreck and we’re going to church tonight! That’s me.)
I use frozen corn because my twins won’t eat frozen peas. They get shredded cheese almost nightly. My secret shame is cans of spaghetti hoops. They only cost 35p, the boys love eating them by putting the hoop on their finger, and it means we can get our dinner eaten before they decide they are done, thank you very much, and try to climb out of the high chair. I always have a full dinner ready for everyone when it comes to time to sit down. The boys always play with the washing machine, which is key locked so they can’t change anything, and so it goes beep beep beep every time they hit a button, and over time, dinner time became known as beep beep beep time.
I just purchased my first box of those this morning, then saw your post. They are ‘kinda’ healthy, at least compared to regular Ritz crackers. Anyway, I thought they would be good with a soft cheese at our picnic before the summer music festival here in Mendocino, CA. Wish for no fog. PS Solvi is adorable and any Montessori teacher would be pleased with the grated cheese.
Wednesday was awesome—homemade buckwheat granola with pepitas and coconut chips. And for both lunch and dinner: ministrone. I made a version of Alice Waters’ minestrone, and I can’t resist it… healthy, flavorful, and so summery!
Hi! Wondering if you’d ever do a post on the feeding process with Solvi! I remember reading one time that you were not choosing to do BLW because you know you’re more of the anxious type (hi, me too!) and I’m just curious how you or she transitioned form purees to more real food and textures! Thought I’d ask in case you’d wanted to share/others might be interested. These posts are always so fun! Thanks!
If you’re nervous about baby led weaning check out “feeding Littles”. It’s so differnt than other BLW resources and they are serious about no choking. I think you will feel totally comfortable with it and it sets the baby up so nicely to eat what you eat, and avoid falling into the toddler food traps when they get older.

TUESDAY
on tuesdays i go horse-riding, so usually breakfast is some sort of energy bar/oat bar of sorts. the one i had this week was a deliciously ella apple cinnamon and raisin oat bar. it was quite yummy tbh
training was uh, bad, bc it was hot, and my horse decided she didn’t want to do work, so she was super behind the leg and it ended up in tears (bad idea because it was hot. and i get dehydrated very easily. like. stupid easy)
ANYWAYYYY
after that, i went to japan centre to pick up dinner (you might be thinking: but aran! what about lunch!. look. im recovering from an eating disorder and im also super doped on antidepressants. IM TRYING MY BEST) and got a vegetable and pumpkin korokke bento set (two korokkes, some white rice, some broccoli and carrots, a tablespoon or so of potato salad and a tiny piece of fried tofu) and a melon pan.
and then i wnt to get doughnuts (from doughnuttime, which i dont think has any us locations, unfortunately)
so. dinner was the bento and a doughnut, and then i went to bed because i was tired.
wednesday (which feels like its still wednesday lol)
erm.
i had a chicken wrap for dinner. and the melon pan. and thats it.
HOWEVER my current obsession is mccoys steak grilled crisps. they are SO SAVOURY and my favourite part is when you come across a slightly thicker than usual crisp thats soaked in so much seasoning its almost bright red. i, personally, love msg
I agree with you that those GF English muffins at Caribou have a weirdly addictive texture , but I do not care for that sandwich. The chorizo had a strange flavor… but have you tried the mushroom spinach soufflé?? I can’t stop!
I’ve been all about the veg and fruit this summer. I’ve easily doubled the servings I usually eat. Right now it’s cucumber salad (diced English cucumbers, salt, pepper, and ranch…what???), broccoli salad (you know which one), apples and peanut butter, roasted beet chips, and kale and eggs (scrambled eggs with slice of cheese, sliced onions, garlic, and sautéed kale over toasted sourdough). Although I did just pick up some fresh corn…
I Love sliced cukes with ranch. 🙂 I eat it as a salad with a little bit of minced onion, and I add a TON of dill into the ranch. My 6 year old devours it.

I have NEVER been an ice-cream girl but Ben&Jerry’s (and a recent hormonal flip-flop, lets be real) has recently changed that with their Dairy Free line specifically the P.B.&Cookies flavor and now I cannot stop.
I have honestly consumed more ice-almond-based-frozen-desert in the past month than my entire 32 past years.
