Ummm what is even happening? This is seriously the best day.

This is the day I get to eat General Tso’s chicken for breakfast, lunch, dinner, and midnight snack. This is also the day that I get to share with you the recipe for this sweet and saucy and sorta spicy takeout classic from America’s Test Kitchen’s new cookbook, Comfort Food Makeovers.

Before I go on, can I just talk about how this is my dream cookbook? Comfort food recipes are my favorites. Hands down. Surprise, right? But these ones are lightened up by the cooking experts at ATK who seriously never produce a bad recipe. That’s why they’re the test kitchen, duh. Nothing sketchy about these recipes: just better ingredients, better preparation, and bestest results.

I know this is going to throw us way off track, but I’m willing to go there because I need to tell you that there are recipes for things like chicken parmesan, Chinese chicken salad, French onion soup, pork lo mein, cinnamon rolls, peanut butter pie. Lightened. Up. Angels = singing.

Healthier General Tso's Chicken + Giveaway
  • Vegetable oil spray
  • 1⁄4 cup all-purpose flour
  • 3 large egg whites
  • 5 cups (5 ounces) Kellogg’s Corn Flakes cereal, finely crushed
  • 1 1⁄2 pounds boneless, skinless chicken breasts, trimmed of all visible fat, cut into 1-inch pieces
  • 1 2⁄3 cups water
  • 1⁄3 cup low-sodium soy sauce
  • 1⁄4 cup apricot jam
  • 3 tablespoons hoisin sauce
  • 2 tablespoons cornstarch
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons canola oil
  • 4 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1⁄4 teaspoon red pepper flakes
  1. Adjust oven rack to upper-middle position and heat oven to 475 degrees. Line rimmed baking sheet with aluminum foil, top with wire rack, and spray rack with oil spray. Spread flour into shallow dish. Whisk egg whites until foamy in second shallow dish. Spread Corn Flakes crumbs into third shallow dish. Pat chicken dry with paper towels. Working in batches, dredge chicken in flour, dip in egg whites, then coat with Corn Flakes, pressing gently to adhere; lay on prepared wire rack.
  2. Spray chicken with oil spray. Bake until chicken registers 160 degrees and coating is brown and crisp, 12 to 15 minutes.
  3. Meanwhile, whisk water, soy sauce, apricot jam, hoisin, corn- starch, and vinegar together in bowl. Heat oil in 12-inch skillet over medium heat until shimmering. Add garlic, ginger, and pepper flakes and cook until fragrant, about 1 minute. Whisk in soy sauce mixture, bring to simmer, and cook until thickened, about 2 minutes. Remove from heat, cover, and keep warm.
  4. When chicken is cooked, return sauce to simmer over medium-low heat. Add cooked chicken and toss to coat. Serve.
I baked my chicken directly on the baking sheet because I didn't have a wire rack. It worked fine. I'd also recommend using a blender or food processor to crush the corn flakes into very fine crumbs.

  48. General’s Chicken has been one of my favorite foods since I was little! We used to go out to our favorite Chinese restaurant (that my parents have gone to for over 25 years!), and my mom would wipe the sauce off the chicken so I would eat it.

    • Funny you should say that! I actually didn’t have soy sauce the first time I made this so I just omitted it (added a little more water and a little extra hoisin to make up for it.) It worked just fine! I hope you can figure something out to make it work for you! :)

I guess I have to ‘get over’ the fact that, despite being in the Philippines no doubt experiencing a fantastic period in your life, being altruistic in helping orphans or gods sake…I still find myself…mildly dismayed that the tenor of your cooking experience is almost entirely centric on American cuisine.

    I applaud your altruism, your sense of adventure…too many ‘muricans’ stay all locked up in their Midwestern ‘murican’ views of the world and never get to see the world from the point of travel or living abroad. So kudos to you. You are a step above many folks living in the US who ar clueless about this amazing world we live in.

    Still–while you obviously have an improved and living worldview, your cooking worldview…at least as shown here in this blog…continues to be fairly ethnocentric and American (Genl Tso notwithstanding but that’s almost like American pie). Let me reiterate–this isn’t a bad thing, but…but you’re in Cebu, Philippines.

    I’d like I see you embrace the cuisine more, you don’t HAVE to…it’s your blog…but while I’m sure you will bring home great memories and new friends, I only hope that you bring some of the cuisine home with you as well.

You really think that her priorities are out of line when she invests more time into teaching and caring for orphans than in posting certain recipes that might appeal to your preference? If you want authentic Filipino food, go to a restaurant or, better yet, follow Lindsay’s example: sell most of your belongings, give up your job security, move halfway across the world, teach full time, care for orphans in your off hours, maintain a successful blog, author two e-books.. and then, make sure that every post you write appeals to every one of your blog readers. Good luck.

    I love everything from America’s Test Kitchen and everything Pinch of Yum – especially your chicken tamale pie. I make two at a time and freeze the second one in slices. It’s my husband’s favorite and he can just take one (or two) slices out of the freezer when I have evening meetings. It’s perfect.

    Did you ever try Target’s Archer Farms brand General Tso’s potato chips? I don’t even know if they are still making them, but we tried a bag. They actually tasted more like dumplings to me. But I’d eat them again.

    • That is so funny – one thing that always pops into my mind when I hear General Tso’s is the time I was shopping at Target and a sample lady asked me if I wanted to try some new Archer Farms “General T-S-O” chips. Like she said every letter name. It was really funny and it’s forever associated in my mind with General Tso’s chicken now. So all that to say, YES, tried them, and I think I probably liked them. :)

  673. I made this for the kids at the school I’m a chef at and they loved it! To simplify it further I used mayonnaise as the flour/egg wash mixture. Just enough to coat the chicken and then breaded using the corn flakes. Next time I will try to find a healthier alternative to corn flakes since it contains BHT.

    I made this tonight and it was good, but the sauce tasted too vinegar-y. Did you use a special kind of hosin sauce or balsamic vinegar? I can’t think of anything else that would make it like that… :(

  681. Made this today and my husband couldn’t believe it wasn’t takeout. I used normal breadcrumbs but baked it as directed. I then added noodles and julienned vegetables to make it a meal.
