Peanut Butter Cookie Dough Bites

2 reviews / 5 average

I had to do it.

Posting three sweet recipes in a row might not be an advisable blogging strategy, but I had to do it. I’m hoping y’all are as addicted to sweets as I am? Because then maybe I can get away with it. (Yeah, y’all, I’m southern today.)

And if you’re the 1 percent that’s not addicted to sugar but still read my blog full of sugary recipes, guess what? This treat was made for you, too! Yes, a sweet that appeals to both the sugar addicts and the healthy peeps! Say wha?

Peanut butter cookie dough bites.

This sweet treat tastes like peanut butter cookie dough (repeat: peanut butter cookie dough) and has no sugar. None. Zippo. Nada.

I’m not vegan and I’m not becoming a vegan, but I pretended I was a vegan for a day when I made these. Because they’re vegan. Buzzword! Vegan!

And these cookie dough bites can be made in a flash with essentially four ingredients: nuts, dried fruit, peanut butter, and vanilla. Oh, and did I mention they’re no-bake? So that battle thing between me and the oven? Over it. Any dessert that can come together in less than 15 minutes, be mostly healthy, and taste delicious is my kind of thang!

Peanut Butter Cookie Dough Bites

  • Author: Pinch of Yum
  • Total Time: 15 minutes
  • Yield: 18 servings 1x

Description

These peanut butter cookie dough bites are made with 5 all-natural ingredients. A delicious and naturally sweet cookie dough treat!

Ingredients

Units Scale
  • 1/2 cup peanuts
  • 1/2 cup golden raisins
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla
  • 14 teaspoons water (opt)
  • 24 tablespoons flour (opt)

Instructions

  1. In a food processor, process the nuts until very fine.
  2. Add raisins through vanilla and process again, pulsing until smooth. I found that I needed to add a little water because my food processor couldn’t handle the stickiness. If you need to, add a teaspoon of water at a time until the whole mixture becomes well blended and sticks into a large dough ball.
  3. Remove dough from food processor. If you need to add some flour to degrease the dough a little bit, just incorporate it in with your hands. Form into small balls and press each ball twice with a fork to make a criss-cross pattern!

My inspiration came from Whole Family Fare, a similar recipe that uses almonds and medjool dates.

Most people have no idea what healthy food is because they’re constantly bombarded by advertisers, food zealots, diet crazes and “buzzwords”.
While I realize you’re talking about “no sugar” in relation to adding “processed” sugar, saying this is no sugar or alluding this is healthier than processed sugar is false. The body knows no difference between processed sugars, or natural fruit sugars, evaporated cane juice, or honey.
Writing, “vegan”, “health”, “mostly healthy”, “no sugar”, you’ve painted these as health food. Calorically and nutritionally there’s little to no difference between these cookies and a standard chocolate chip cookie, and nobody is calling them health food.
That being said, I’ll definitely try them, but they’ll be a “treat” after a workout when my body needs glucose replaced, not as a “healthy”snack.

Sounded a little harsh…she didn’t “add” any extra sugar, just what’s already naturally in the fruit or in the peanut butter itself…geez!! So I’d say they are a “no added sugar” delight!! 🙂

Raw flour? I thought that was considered potentially very toxic. I know you said, optional, but it still seems a bit irresponsible to suggest it 🙂

Would omitting the raisins change the recipe too much? I am not a fan of raisins but would love to make these!

Hi, Ashlie! Unfortunately, the raisins act as the “glue” to hold these cookies together. My guess is that you’ll be surprised how little you notice their presence! You could substitute dates if you like those better.

YAY! A recipe to satisfy my sweet tooth that doesn’t have added sugar or loads of oil… Much appreciated! I loved this recipe and the results. Also, in the summer I’m always looking for no-bake dessert recipes. THANK YOU! (:
