Vanilla Glazed Apple Cinnamon Muffins

Vanilla Glazed Apple Cinnamon Muffins

Oh my December. This calls for a muffin or three!

Muffins are so lovable that if I make them on Saturday, which I obviously do, always, I will end up eating at least three. It’s guaranteed. I am sucker for those little muffies. Especially if they aren’t actually little.

And besides loving muffins, I so so so love baking with apples.

Apples plus muffins? Yes, friends. I’m gettin’ wild.

Vanilla Glazed Apple Cinnamon Muffins

The obsession continues today because I’m giving you a recipe for apple muffins that is perfectly sized for just you. And your special someone.

This is a cute little recipe for just 3-4 muffins! Yay for easy, small batch baking!

Yay for eating the whole small batch while Bjork is working out!

Um, I mean, you know…

Maybe double it. Just in case.

Besides loving all things apple and muffin, I am also loving this band!

They’re called Boyce Avenue and they allow me to love pop music in a new way. And I love pop music in all ways.

Are you going to buy their CD as a Christmas gift to yourself? Good idea.

  1. It’s sort of unfair to post these in the morning, as I sit in front of my computer with my tummy grumbling 😉 These muffins are cute and look absolutely delicious!

    • True confessions: I didn’t mean to post them yet! I usually post on M, W, and F. It’s Thursday. I messed up my queue. But I guess then these would have just tempted you tomorrow instead of today. :)

  2. There is something so familiar yet special about apples in baked goods. I guess it goes back to that apple pie thing. I love that this is a small recipe! I tend to get sick of a batch after I snarf down 5 of them between two days :)

  3. Blog is the New Black says:

    Oh yum! Looks wonderful.

  4. Thank goodness you added the glaze to these. If you hadn’t, they might trend a little *too* much towards the healthy…small portions *and* fruit? Don’t scare me like that. 😉

  5. Need. These. Now. I’m such a sucker for anything with a glaze :-)

  6. Love this idea of a smaller batch recipe!

  7. Do I know the Muffin Man? No…

Do I know the Vanilla Glazed Apple Cinnamon Muffin lady?
    Luckily, yes I do!!

  8. I LOVE the idea of just a little batch – because usually I am the one that ends up eating all the ones that hang around. And, YUM! Awesome recipe!

    • Little batch is my new thing. Or at least I’m trying to make it my new thing. With just the two of us eating at our house, we need portion control.

  9. I love the idea of making just a few. I mean, my heart truthfully does not, but my (sadly non-stretchy) pants are really into it! Stupid pants.

    • lol. My heart truthfully does not either, except for the fact that it saves more flour and sugar for, say, cookies?

  10. Oh, I can’t make muffins without wanting to eat 3-4! It takes so much willpower! You just eat a muffin, walk by and oh! there’s a muffin, a little later, another muffin. It’s a cycle. I don’t usually make much with apples but I’m branching out and I think I’m developing an attraction to them. I’ll have to try these out because they may just push me over the edge into apple love.

  11. These look too good to be true…perfect for fall, I’ll be making these soon :)

  12. These muffins look perfect. I can almost smell the wonderful goodness just looking at the picture. Be sure to stop by on Friday 12/2 and register to win our wonderful giveaway from The Shabby Apple.

  13. Love this small batch apple-cinnamon muffin recipe! gorgeous photos and you can’t go wrong with muffins and a vanilla glaze…love it!
And I am also loving this band, thanks for sharing :)

  14. I’m all in for smaller batch recipes and this one looks so good! Vanilla, apple, cinnamon…what more does one need?!

  15. These look delish! Love the glaze! I had a little apple obsession going this fall too. I think the move to December has now changed my obsession to chocolate. I have also been dwelling on peppermint quite a bit….hmmm…I might be in trouble:-)

  16. Though the muffins look FAB, the real reason I’m here is I just checked out your “about me” section and realized that we might be the same person. Teacher..check. Food blogger…check. Lover of dogs with smushed faces and trying to get our significant others to buy us said dogs…check.

Sorry if this is too much too soon. #letsbefriends ?

  17. These look amazing! I love baking with apples too and could eat muffins every morning. The glaze is the perfect finishing touch :)

  18. belle (tinkeringinthekitchen) says:

What a delicious idea :) Ive just bookmarked to try out tomorrow. Thanks! Belle

  19. You put just enough glaze on them :)

  20. these look so incredible. can’t wait to try them!

  21. Oh wow, these sound really yummy. I just made a batch of apple muffins this past weekend that I really enjoyed, but this recipe seems to take them to a whole different level. I love the addition of the vanilla glaze. I’m sure it makes them taste more like a dessert, but what the heck. You gotta go all out sometimes, right? What kind of apples did you use for this recipe? I’m always trying to experiment with different ones for different uses, but always seem to go back to Granny Smiths when it comes to baked goods.

  22. I came across your blog one day and i instantly fell in love with your recepies(?) not only do they look amazing they taste the same way!!..i tried this today and it was a hit!! you have gained a fan:)

  23. I tried this recipe! Complete fail! I followed every single direction perfectly and the muffins r in there still 45 min now n they r still not baking! N ur glaze! A hole tsp of vanilla?! Disgusting. I waisted my time with this disgusting food waiting recipe! U shouldn’t be allowed to post recipes that r not factual good recipes. Fail. Fail fail fail.

  24. I made these today and they were delicious. I followed the recipe exactly. It was perfect. The glaze was just right….I think Lindsey might have meant to say start with 1 tsp. vanilla, 1 tsp. milk and then add milk by the drop if it is not thin enough to swirl on top of the muffins. How many of us learned those powdered sugar glaze lessons with our Easy Bake ovens?!!

  25. oh my god i love this recipe its great for my kids and my husband we all have a sweet tooth

  26. I just finished making these. They were not bad, but not as awesome as I was expecting. That being said, my kids each inhaled 2 of them. Good thing I doubled the recipe. :)

  27. Can you replace the milk products with unsweetened almond milk? And the beaten whole egg with an egg white?
