Oh my December. This calls for a muffin or three!
Muffins are so lovable that if I make them on Saturday, which I obviously do, always, I will end up eating at least three. It’s guaranteed. I am sucker for those little muffies. Especially if they aren’t actually little.
And besides loving muffins, I so so so love baking with apples.
Apples plus muffins? Yes, friends. I’m gettin’ wild.
The obsession continues today because I’m giving you a recipe for apple cinnamon muffins that is perfectly sized for just you. And your special someone.
This is a cute little recipe for just 3-4 muffins! Yay for easy, small batch baking!

- Total Time: 35 minutes

Description
These apple cinnamon muffins are easy to make and topped with a warm vanilla glaze. Perfect for a quick breakfast or snack.
Ingredients
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- pinch of nutmeg
- 1/4 cup milk
- 1 egg, beaten
- 1 tablespoon butter, melted
- 1/2 apple, finely chopped or grated
- 1 tablespoon sugar
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon milk or cream
Instructions
- Mix dry ingredients together. Combine milk and egg – add to dry ingredients.
- Add melted butter and mix well. Combine 1 tablespoon sugar with chopped apples. Stir apples into batter.
- Fill 3-4 greased muffin tins and bake at 350 for about 20 minutes or until tops and golden brown and spring back when pressed.
- For glaze – combine powdered sugar with vanilla and milk, adding a teaspoon of milk at a time until glaze reaches desired consistency.

There is something so familiar yet special about apples in baked goods. I guess it goes back to that apple pie thing. I love that this is a small recipe! I tend to get sick of a batch after I snarf down 5 of them between two days 🙂

I LOVE the idea of just a little batch – because usually I am the one that ends up eating all the ones that hang around. And, YUM! Awesome recipe!

Oh, I can’t make muffins without wanting to eat 3-4! It takes so much willpower! You just eat a muffin, walk by and oh! there’s a muffin, a little later, another muffin. It’s a cycle. I don’t usually make much with apples but I’m branching out and I think I’m developing an attraction to them. I’ll have to try these out because they may just push me over the edge into apple love.

These look delish! Love the glaze! I had a little apple obsession going this fall too. I think the move to December has now changed my obsession to chocolate. I have also been dwelling on peppermint quite a bit….hmmm…I might be in trouble:-)
I’ve seen some yummy peppermint stuff around, too… it’s a slippery slope once you start with these things!

Oh wow, these sound really yummy. I just made a batch of apple muffins this past weekend that I really enjoyed, but this recipe seems to take them to a whole different level. I love the addition of the vanilla glaze. I’m sure it makes them taste more like a dessert, but what the heck. You gotta go all out sometimes, right? What kind of apples did you use for this recipe? I’m always trying to experiment with different ones for different uses, but always seem to go back to Granny Smiths when it comes to baked goods.
I almost always use honeycrisp apples!
