{Light} Orange Beef and Broccoli

Beef reminds me of my Grandpa.

And Grandpa reminds me of the tour-de-Grandpa’s-old-farms that we did last summer after he passed away, which reminds me of cornfields, sunsets, and hanging off the back of trucks while driving down dirt roads. And by hanging off the back of trucks, I mean hanging off the back of a minivan. But still. Grandpa would have been proud of all of us farm peeps.

Grandpa also would have been so proud to meet his newest great granddaughter last week.

Just a few days ago, my cousin and his wife delivered their sweet pea at only 26 weeks. She only weighed 2 lbs. Two. Like, one, two. She is precious and sweet and miraculous.

I wish I could feed her some of this beef and broccoli because it makes me nervous that she only weighs 2 lbs, but I think we’ll have to wait on that one. She’s a fighter so I think she’ll do fine with or without the beef.

Me, on the other hand? I do need that beef.

I can’t fight through my week without it. I just, I just… it’s just too much.

I could use a little inspiration from my new, um, cousin’s baby. What do you call that? Second cousin? First cousin once removed? Cutie pie baby relative through marriage? Wait, though, I don’t think it’s through marriage.

Lalalalalala. Beef is making me crazy.

This orange beef and broccoli is going to knock your socks off for three reasons, and here they are:

  1. Can you say easyeasyeasy? It’s easy.
  2. According to Grandpa, it’s healthy. (But really, it kinda is.)
  3. It’s deliciously, saucily orangey in a salty-sweet way.

Description

This recipe for light orange beef and broccoli is so simple and has just 250 calories per serving! SO flavorful, light, and yummy!

Ingredients

Units Scale
  • juice of 1 orange
  • 1 tablespoon fresh orange zest
  • 2 tablespoons low sodium soy sauce
  • 1/4 cup beef broth
  • 1/3 cup orange marmalade
  • 2 tablespoons cornstarch
  • 1 teaspoon oil
  • 1 lb. flank steak, very thinly sliced
  • 2 cloves garlic, minced
  • 1 head broccoli, washed and cut into bite-sized pieces

Instructions

  1. Mix the first 6 ingredients, whisking until the cornstarch is dissolved. Boil the broccoli for just a few minutes, until tender crisp. The broccoli will cook a little more once you add it in with the sauce, so make sure not to boil it for too long.
  2. Heat the oil in a skillet over high heat. Add the steak and garlic, draining off extra fat after a few minutes. Flip the pieces until each piece is cooked through and the meat is browned.
  3. Add the sauce to the pan and stir for 1 minute until the sauce starts to thicken. Remove from heat and stir in broccoli. Serve over rice and garnish with orange zest and/or scallions.

This is really good. Fast and easy too – what’s not to love? I didn’t have beef broth so subbed chicken broth. Also added crushed red pepper flakes. This is a keeper – thank you!

This recipe brings my son home for dinner, even loved by non-broccoli lovers. Thank you! I do sub orange marmalade with ginger marmalade, lots of orange zest and add a pinch chili flakes.

I made it with sugar and extra orange juice and zest instead of orange marmalade (because I didn’t have it), and my husband said the sauce seemed like it should be thicker. We both liked it. I want to try making it again with marmalade 🙂

This was fantastic. But I cooked it differently. I mixed up the 1st 6 ingredients as instructed. But I first marinated the steak in oil, balsamic vinegar soy sauce and wurstshire sauce for only an hour. Then cooked the 2 nice steaks on the grill. I cooked them to medium rare. Then added onions, the sauce mixture and onions in a big pan. The steak was cooked to medium rare and I wanted it to remain that way. Served it over rice with some onions and sesame seeds and the orange zest.

Made this tonight and it was so easy, and yummy – thank you for the inspiration and recipe!! I added a little pepper for spice:)

yummmm! I made this last night, and it was so amazing! Super quick to make, and a total hit! I doubled the recipe and am freezing most of it. I prefer roasted broccoli, so I roasted it before mixing with the beef/sauce. And I used flap steak because it was 30% less than flank steak…still amazing! Thanks Lindsay!

I made this for dinner tonight and it was great! I added a second head of broccoli and some ginger, and used Seville marmalade to cut the sweetness. I served it on top of vermicelli noodles and they soaked up the sauce so well!

Have made this multiple times and it is a huge hit! My son wants it every week. Made a mistake the first time and used gi ger marmalade…so good we have repeated it every time with just a pinch of hot pepper flakes. YUMMY!

First of all I would love to say thank you for your lovely inspiring recipes !

I tried this the other night for dinner and unfortunately I did not love it 🙁 BUT I didn’t mind it – I just found that the orange was a bit over-powering ! So I will try this again and perhaps use just a teaspoon of marmalade and a little less orange juice.

For anyone that hasn’t prepared this dish yet, I have made it several times and it is delicious! Thanks, Lindsay; it’s now one of my go-to recipes. I’m going to try your skinny turkey meatballs next.

Do you think I could use apricot marmalade? Would the flavors mingle alright? I just don’t have orange marmalade on hand… Thanks!

Thanks for sharing. The orange flavor seems to complement the tender beef plus the broccoli.

I was wondering if the nutrition information for this recipe also included the additon of the rice or not. My assumption was that it did not, but I thought I’d double check with you.
