Completely unrelated to granola…It’s been a hard week.
Thanks for all your kind words. And thanks for still checking in, even though things have been a bit unpredictable around here. Today, I’m thinking about my grandpa, but I’m writing about pecan granola. I guess the balance of remembering and moving on takes time. If you’ve done this before, maybe you can relate.
So. Granola.
My family is obsessed with granola, but I’m not much of a granola person.
What? Posting a recipe that I’m not crazy about?
Well, here’s the thing. When there’s a bag of this crunchy granola sitting around, it always finds its way into my mouth. And I can’t stop. Why is that? Granola is so sneaky.
And by the way, eating granola makes you feel like Nature Girl. Granola is totally for nature people, isn’t it? And I think nature people are healthy. Score.
PrintCrunchy Pecan Granola
- Total Time: 50 minutes
- Yield: 15 servings 1x
Description
This crunchy pecan granola is the recipe my family makes at the cabin every year. So crunchy, sweet, and delicious with lots of clusters!
Ingredients
- 6 cups rolled oats (not instant)
- 1 cup pecans, halved (almonds or walnuts work well for a substitution)
- 1 cup flour
- 1/3 cup sugar
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 cup oil
- 1/2 cup honey
Instructions
- Preheat oven to 320 degrees.
- Mix first 6 ingredients together. Whisk the oil and the honey together and add to oats mixture.
- Spread on a baking sheet (it’s helpful if it has raised edges) and bake for 35 minutes, stirring all the way down to the bottom of the pan a few times during baking. Bake longer for more crunch, but don’t let it burn! Allow granola to cool completely after baking (this is when it clumps together). Serve with milk, yogurt, fruit, ice cream, or just plain snacking!

Found your blog a few weeks ago while I was looking for a new granola recipe and have been following ever since 🙂 So glad I found this recipe because this is my go to granola now. It’s so delicious! I do decrease the oil by half (for the sake of my waistline since I eat it everyday). Thanks!

should you ever feel the need to make granola less oily, you can use egg whites instead to make the granola stick and crunch. in that case, just lose the flour and the oil and the oats:egg whites ratio should be about 2 cups per 2 whites.

This granola is AMAZING!!!! However… probably not the best for you. It’s more of a dessert type than breakfast. I made a full batch and I think I’ll have to package it up and hand it out to the neighbors because I will devour every single bite of it.
Agreed! You realize how unhealthy it is as you pour the oil all over everything. 🙂 But it’s our favorite for vacation week at the cabin in the summer!

Yummmm, I just found this recipe via Pinterest. Delicious! I used 1/4 C coconut oil and the rest canola oil, which tastes divine. Next time I may throw in some raisins too. Thanks for the recipe!

Great taste; however, did not stick together for breaking into pieces……..I just ended up with roasted oatmeal 😯!
Hi I just found your granola recipe and it’s in the oven now! Can’t wait to try it it smells delicious… I had coconut oil so I used that instead of vegetable oil…thank you for the recipe I know I will enjoy it. My husband loves granola over his ice cream darn he can’t eat anything he wants and not gain weight. I have it over yogurt as I’m always afraid of gaining those few pounds 😊

We store in an air tight container and leave on the counter!
