I almost never rate recipes on websites but this was so delicious I felt I had to!! I grew up eating Italian beef in Chicago and this is so absolutely delicious it reminded me of those sandwiches growing up. I put a little extra beef broth in the recipe (1/2 cup or so?) and froze it with the liquid so the meat didn’t get freezer burn. And it was SO DELICIOUS my husband asked for it three nights in a row. I’m such a fan of most of the freezer meals (every one I’ve tried) and he requested this be added to our rotation. Thank you for sharing your creativity!!!

There is so much to love about food that takes 7 minutes to prep, and involves tender shredded beef with a lot of garlic and onion, crusty buttered bread, melted Provolone, salty and tangy giardiniera, and a superluscious and flavorful broth to dunk it all in.
How Make Freezer Meal Italian Beef Happen
- Add some beef to a freezer bag with lots of yummy Italian spices.
- Throw it in your freezer.
- Remove from freezer, add liquid, cook totally hands-off, and devour.
That’s it. Low maintenance and flexibility is the name of the game here.
Once your beef is done, broil some hearty (I mean like SUPER hearty) crunchy bread with slices of Provolone cheese, add your beef and giardiniera, and send it swimming in that brothy goodness.

Freezer Meal Italian Beef! Just a few minutes to prep and hands-off to make. Tender shredded beef, crusty buttered bread, melted provolone, and giardiniera.
Ingredients
Freeze together:
- 3 pounds beef chuck roast, trimmed and cut into chunks
- 3 cloves garlic, minced
- half an onion, diced
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
INSTANT POT: Add 2 ½ cups broth and ¼ cup giardiniera brine before cooking. From frozen, 1 hour 15 minutes on high pressure + 15 minutes natural release.
SLOW COOKER: Add 2 ½ cups broth and ¼ cup giardiniera brine before cooking. From thawed, 5-6 hours on high.
FINAL STEP: Serve on toasted rolls with melted cheese and chopped giardiniera!

Just the broth from making the meat!
I’ve loved almost every Pinch of Yum recipe I’ve tried but this was not a winner 🙁 The meat was very stringy and chewy and honestly didn’t have much flavor which I was shocked by! Maybe it was the frozen beef and the OG recipe using fresh beef is better. I was very sad 🙁

I was a little nervous to make this after seeing that there was a bad review, but since Pinch of Yum is usually great, I decided to try it anyway.
Followed the instructions and it turned out delicious. My fiance loved it too.
We served it with Ace Bakery’s “Bake Your Own” baguette; in the last two minutes of baking the bread, we added the meat, topped with pickled vegetables and mozzarella and switched the oven to broil.
Highly recommend serving it that way. My fiance thinks it’s the best freezer meal we’ve ever made.

How long do you pressure cook this for if you do not freeze it? I like to try the recipes before freezing for future use? I am new to pressure cooking -obviously 🙂

I made this the other night the only difference was we used venison. It was amazing my boyfriend just texted what was that recipe for the Italian beef I was talking about it and now they want to make it too. Thank you for sharing!!
