Wednesday again?!
Wednesday always kind of sneaks up on me – but especially this week! We’ve been transitioning Solvi into a crib this week, and that combined with teething and a few other classic rollercoaster events of parenting have made this week feel like it’s a) flying by, and b) dragging on for 100 years.
What is life though.
The good thing is that food knows how to always be there for us. What I Ate Wednesday highlights this week:
- a savory almost-make-ahead breakfast that doesn’t involve reheated eggs
- a new creamy dreamy snack
- a roasted vegetable bowl with a sauce that’s giving me life
Bring it on, Crazy Week. Bring it on.
Breakfast
Guys, it’s so rare for me to have a hot breakfast these days – like, eggs and potatoes and that kind of thing – especially on a weekday.
But HELLO here we are.
I made a big pan of roasted potatoes and kielbasa on Sunday and tucked it away into the fridge for the week. So easy. Like, a little butter, a little olive oil, diced potatoes, salt, kielbasa.
Not gonna lie – this was a very good idea! It delivered a fast hot breakfast that did not involve reheated eggs. (I know some of you share my very justified dislike for reheated eggs.)
In the morning, I just popped the already-roasted potatoes and kielbasa into a little skillet, toasted them up (apparently with a lot of passion?! geez – mega browned), and then fried an egg to put on top to finish. + lots of sriracha. How else?
In my mug: chestnut tea latte. It will never die.
Morning Snack
Okay THIS.
This is “yogurt,” but it’s homemade and vegan and super high protein and naturally sweet, and I stocked my fridge with it this weekend which was A TRUE GIFT. Is it wrong that it’s kind of like thick ice cream?

Lunch
Oh man. The day was crazy and lunch was just completely inhaled amidst some work projects.
It’s not much to look at but you really can’t go wrong with leftover Instant Pot Chicken Wild Rice Soup. Featuring the light-colored wild rice that I found at the way back of the pantry.
Snack Again

Pre Dinner
Granola! Because I think I was waiting for Bjork to finish putting Solvi to bed? and maybe got a little hungry? like, SOS level emergency?
Coconut oil granola (remix) to the rescue.
Real Dinner
You guys are going to love this – it’s an upcoming recipe for 15 Minute Meal Prep.
Roasted broccoli, carrots, cauliflower, yukon potatoes, and a big dollop of GREEN TAHINI sauce involving garlic, cilantro, tahini, olive oil, lemon, etc. etc. etc. Simple and so yummy.
Normally I eat this with an egg and some avocado, but on this particular night it was already 9pm and I wasn’t super hungry (see also: granola). The veg / sauce combo was just right.
End Of Night
Just keeping it classy with tea for me, grapes for us, and a little side of white chocolate chips for Bjork. 🤪

After I woke up this morning and prayed for a little while and gave thanks for the good LORD Jesus for this day, I decided I’m going to try and not eat anything today, but just drink water with vitamins, go to bed on an empty stomach with only fluids in me, and see if I can hopefully last the entire day without putting any food in my mouth.
Losing weight feels great. I’ve recommitted myself to eating better this year, increasing my cardio, doing the transformation work of inspiration or desperation, and looking forward to getting back into lean body again.
I do like the fact that you had yogurt in your blog because that’s on my agenda and see more of this year along with tapioca pudding. And now, I have to get myself together at a little past 6 AM because I’m about to drink my water, take my vitamins and hit the gym in doing “morning fasted cardio.”

You’ve probably posted this before, but what brand of chestnut tea do you use? Every time I see a picture of your lattes, I think “I need to try this!”

On the EDGE OF MY SEAT for the yogurt. Dairy just doesn’t agree with me and even the alternatives on the market now have gobs of sugar . It’s like you read my mind, so excited!

I had a similar win with breakfast this morning, reheated some roasted potatoes, sweet potatoes and bacon that we had for brunch this weekend. I almost never have savory breakfast but it’s growing on me this month. Delish and kept me pretty full until lunch.
Last night I made these banana oat bars: https://www.godairyfree.org/recipes/super-snack-banana-oat-bars (forgot to add the coconut so I sprinkled it on top before I baked it, add a fun texture!) only sweetened with honey and natural sweetness of ripe bananas (my frozen stash is now gone). It totally hit the spot and I have some for snack at work today!
Yesterday there were two big boxes of donuts at work right in front of my desk, it was hard to resist but I did it! (huge win). I’m looking forward to having a proper dessert/sugary snack but now I know I can absolutely do without, for a period of time. One more week!
Uhhh, can we talk about the yogurt?

Okay. I am HERE for that yogurt recipe! I want a vegan yogurt SO bad, and I really want homemade OAT milk yogurt, but I have had very little success with it in the IP. By “very little” I really mean “zero”. Can’t wait to see what’s happening with your yogurt! Looks delicious!
I was not expecting it, but sugar free January has really helped me get in better touch with my hunger cues! I’m such a snacker that when I took sweets out of the equation, I really had to figure out if I was hungry, or just scrounging for something (anything) in my kitchen. A much welcome and unexpected win! I’ve even lost a couple pounds (which was not my goal either).
Oh, I know I’ll need this green tahini sauce in my life! I’ll be watching for the recipe 🙂

I’m also loving these posts! I’ve been doing sugar free this month inspired by you, and honestly (I sort of hate saying this because I love sugar and baking which I feel like kind of go together) noticed the last couple of weeks I’ve been feeling great!!!
I made a ‘muesli’ recipe from howsweeteats and topped with almond butter + coconut for breakfast – good alternative to all the eggs!
I was just recently visiting family to help out my sister who just had her second baby (gah, the adorbs .. can’t handle it.) and the saying “the days are long but the years are short” was definitely on everybody’s minds as we looked at her other daughter, 4 years old now. “How did we get from this tiny infant stage to this??” was asked often lol.
So I’m actually thinking of extending my sugar-free January into a full 8-week detox. Cravings are just starting to kick in now as I get a bit more into withdrawal of all the sugar in my diet, and if I start back eating stuff again in February, I’ll just lose all my progress. I’ll never kick all sugar from my diet (I bake extensively so that’s definitely a no-go) but I love the idea of doing the full detox, hitting reset on my palate, getting to know more of the natural sweetness of things. And man, the best thing to come from this whole process is the awareness! Knowing where sugar is hidden and the sneaky ways it’s in everything … it’s really helped me in a lot of ways. My end goal is basically to have better balance than before – not completely eliminate sugar, as I don’t have the time/patience/budget/palate for that, but to be more aware of reasonable/excessive amounts of sugar in things and judge my sugar intake accordingly. I’m so glad I really followed through with this challenge this year! 🙂
