I threw the freezer meal ingredients together last week when I was trying to figure out what to do with a cauliflower I had picked up. Freezer Meal Golden Soup
- Total Time: 25 minutes

Description
Cozy, bright, and healing Freezer Meal Golden Soup with power-foods like turmeric, cauliflower, and cashews. Super creamy and SO GOOD.
Ingredients
Freeze together:
- 2 tablespoons olive oil
- half an onion, chopped
- 2 cloves garlic, chopped
- 1 head of cauliflower, chopped into about 5 cups of chunks or florets
- 1 cup cashews
- 1 tablespoon turmeric – see notes
- 2 teaspoons salt
- a squeeze of lemon juice
Instructions
INSTANT POT: Add three cups of water before cooking. From frozen, 10 minutes on high pressure + 7 minutes natural release.
SLOW COOKER: Add three cups of water before cooking. From frozen, 3-4 hours on high.
FINAL STEP: Blend soup and add water to thin as needed.

Riced cauliflower takes up less space and is pretty easy to find these days – about how much would you say if you used frozen riced cauliflower?

Golden soup looks great, healthy and cheap to make. I’m surprised you add water not veggie or chicken broth for flavor. Assuming it’s flavorful enough without it?
Yep, we think this works well with just water. Veggie or chicken broth would work too though!
I know this recipe is a year old but I want to try it and I am wondering if the cashews are raw (which I would expect in this situation) or are they roasted and salted? Thank you!

LOVE these freezer meals. Such a time saver on nights when you don’t feel like going to a lot of trouble.
Not sure what I did wrong with this one….it was watery and not very tasty. I think I’ll throw in some red lentils for the next batch..I’ve frozen a few batches, so will try a few different approaches – definitely doesn’t need as much water as is called for.

I made this today and wish I would have put less turmeric because it is allll I taste in the soup. I didn’t see any ‘notes’ about it above even though it says ‘see notes’ behind it on ingredient list but maybe there was meant to be something about the amount? I ended up adding more salt, lemon juice, and water + almond milk to thin it out in the blender. Overall I don’t think I would make this as written again but I do like the idea of being able to easily freeze all ingredients together and then just dump and cook. If I make it again I’ll cut the turmeric in half and add some additional spices/herbs (maybe thyme? any suggestions are welcome!)

Is there a substitute for cashews that you would recommend? I am allergic.
You could try subbing in a bit more cauliflower. 🙂
The second time I made it I added carrots, celery and frozen butternut squash and preferred the flavor that way. So easy. My toddlers like this soup too and it’s a great way to up their veggie intake.
I made this exactly as it is written, but left off the toppings. It is phenomenal! I’m so glad that I made a freezer version for later. Thank you for the outstanding recipe!
10 Stars!! I am shocked this isn’t a 5-Star rating because in my family (of picky eaters) this is off the charts! My 4 year old routinely asks for this and she is a sausage and potato/won’t try anything new kind of kid. But Golden Soup – she loves. I love that it is warming and vegan and G/F and I frequently eyeball that over ambitious extra head of cauliflower I purchased and just make a freezer bag to have on hand. The whole series of freezer meals is AMAZING but this one is our favorite!
