Chicken cacciatore is braised Italian chicken in saucy pasta-friendly form, and the best thing about it for me right now is that it is bright, acidic and punchy (major caper action). Hello, YES.

But it’s also rich and savory (thanks, mushrooms), luscious and silky (olive oil and butter combo at work), and all-around just really satisfying over a pile of silky lemon-buttered capellini noodles.

Chicken Cacciatore in an Instant Pot.

This is kinda a “gourmet” Instant Pot recipe, where you sauté the chicken and veggies first, and it is very delicious. But if it’s just been one of those days and you need to throw it all in and sit down for three seconds, this recipe is SO here for you. Just omit the flour and sautéing and pull up your Netflix queue.

Boil up some pasta and throw it all together. Voila! Chicken cacciatore is yours for the taking.

Instant Pot Chicken Cacciatore

Description

Instant Pot Chicken Cacciatore! Braised Italian chicken in saucy pasta-friendly form that is bright, acidic, rich, and savory. Just put everything in the Instant Pot and let it go!


Ingredients

Instant Pot Chicken Cacciatore:

  • 2 tablespoons Simply Nature Organic Extra Virgin Olive Oil
  • Flour and salt (for chicken)
  • 11.5 pounds Simply Nature Organic Chicken Breasts or chicken thighs
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 16 ounces mushrooms, sliced
  • 1 bell pepper, diced
  • 1/2 cup dry white wine or Simply Nature Organic Chicken Broth
  • 1 28 ounce can Simply Nature Organic Diced Tomatoes
  • 2 teaspoons salt

Finish with:

  • 4 ounces capers, rinsed and drained (okay I like capers a lot so sometimes I add two jars – whoops)
  • 4 tablespoons butter
  • parsley, lemon and Parmesan for serving (optional)
  • capellini for serving 

Instructions

  1. Dredge the chicken in flour and a pinch of salt. Turn on the sauté function on the Instant Pot. Add oil, and sauté the chicken for a few minutes on each side. Remove and set aside (it’s okay if they’re not cooked all the way).
  2. Add onion, mushrooms and garlic. Sauté until softened. Add wine and let it sizzle out. 
  3. Add chicken and all other ingredients to Instant Pot. Cook on high pressure for 15 minutes. Release the pressure. 
  4. Shred the chicken. Stir in the capers, butter, parsley and lemon.
  5. Serve with angel hair pasta (for a little extra zazz, toss it with lemon juice and butter). Top the whole thing with more parsley and Parmesan. You did it!

Notes

Chicken: I prefer chicken thighs, but chicken breasts also work really well. 

Freezing: You can freeze this before or after cooking. If cooking from frozen (raw), you’ll need to cook it for an additional 10-or-so minutes depending on the size of your chicken pieces.

Capellini: If you are doing Sugar Free January and trying to avoid refined grains, you could serve this with whole wheat spaghetti or zucchini noodles instead.

    This looks delicious! Do you think the easy Instapot version would work in the crockpot if I cook it for a few hours?

      Hi, Hilary! We haven’t tested this out in the slow cooker yet, but we think it’d turn out great cooking it on low for maybe 6-8 hours or until the chicken is shreddable! Let us know if you give it a try! 🙂

      Hey, I tried this in the crock pot yesterday, and it worked beautifully. I even used frozen chicken breasts, and cooked it on high for 2 hours, and low for 2 1/2 or so, and it was delicious! I sauteed my veggies first, which I think added to the flavor. Served it over angel hair pasta. The only thing that would have made it better would have been some crusty french bread!

      Skin On Bone-in chicken thighs provide better flavor and the skin is not very high in caloric content. I do remove any fat on the chicken, however.

        Loved this!ade it this evening, flavour was great, however it was little watery, is there anyway of making it thicker? Also my instant pot kept saying burn 😭 I followed the recipe

          If it’s a bit watery after you pressure cook it, you can leave it in the instant pot, turn the pot to saute, and let the liquid reduce for five or ten minutes. I do that with chili. Just stir every couple of minutes so the mixture doesn’t risk burning on the bottom.

    This recipe was delicious! I wasn’t sure what to expect. We got a pressure cooker as a wedding gift and I’ve been apprehensive to use it. This was my first recipe that I used it for and something tells me I’ll be using it a lot more often.

      Hi, Stephanie! We haven’t tested this out using other cooking methods yet, but we’re guessing that a slow cooker would work well here. We’d try cooking this for 6-8 hours or until the chicken is shreddable. Enjoy!

    I’m in the minority here, I followed the gourmet recipe exactly and it was terrible. Bland, soupy consistency even after I mixed some corn starch into some of the sauce separately and added back in. My suspicion is that the giant can of diced tomatoes over powers the entire dish. Yuck

    I’m going to try this with my version of cacciatore – more mushrooms and bell peppers – and few to no capers. I like capers but 65% of the daily sodium allowance in one dish is too much. Also, I don’t tend to eat much salt.

    Made this for the first time tonight! Mine came out pretty soupy like. Is it supposed to be like that? I ended up just straining it. And when you say lemon, is it a lemon cut into wedges, lemon juice? Thanks!

      Hi there, Erin! Sorry to hear it turned out soupy for you. It shouldn’t be too liquidy. We’d suggest trying the gourmet method next round to see if that helps with having that flour in there. Good question on the lemons, too! It could be either, but we think a small squeeze of lemon on top would be delicious!

        This is my second time. I squeezed a half lemon into the whole thing and my son loved it and said I prefer this to your meat spaghetti sauce lol. Husband said it’s better then my mum’s. 😆
